As I started to cut my first slice of Babette's olive oil, Maldon salt & herbs de provence encrusted boule, I was reminded of 1976 when I was a boy, waiting in line at the new Space Mountain ride. The head-exploding excitement was so thick I could cut it with... well, the bread knife I had in my hand yesterday. As I slice into the perfectly thick crust, the herbaceous toppings (including subtle pops of salt) stick to your fingers enriched with the wonderful fragrance of luscious olive oil. The anticipation and excitement pays off instantly as you continue to slice through, revealing the soft inner dough textured with a myriad of various-sized air pockets. I'm transported back to my childhood again where neighborhood German, Jewish, Italian & French bakeries were everywhere bringing their centuries-old baking techniques & traditions to New York.
After slathering on a thin layer of soft butter, my first bite illuminates the true magic of this artisan bread. The soft inner body has perfect elasticity-- it is somehow light & airy, yet has a depth & gravity to the dough. Each bite is a textural masterclass for lesser bakers. The foundational sour dough mix of white, wheat, rye, spelt and other grains is nothing short of amazing.
This is not just truly great bread for Colorado, this is a work of art that belongs in the world bakery hall of fame (if there was one ;-) And honestly, all their bread is like this, from the long baguettes to their square Pullman loaves. The bread and pastries are delicious and unique. I know this is a controversial statement but I've never experienced poor service here and i like the flavor others call burned. Worth showing up early before they sell out of the cardamom pastries!

My friend has been suggesting we meet at Babette's for a while now. But it's too far for lunch on a workday. We were in Longmont today and we made it happen. We got two pizza slices, acorn squash with fennel and a sausage pizza. I regretted asking for a middle slice instead of a corner slice. The bread is so so so so SO GOOD! The airy huge croissant was perfectly laminated. And the hazelnut ho-ho was not too sweet and superbly chocolate-y. Mmm.
Once we got back home, I remembered that my friend had espoused their mortadella sandwiches as the best she's ever had. I don't think I have a choice. I need to go back. And, when I'm there pick up some pizza dough, too!Helpful 0Thanks 0Love this 0Oh no 1 - 2293052146Jan 20, 2024
You get what you get when they have it ready. And everything is very delicious! The bakery has a small store front situated next door to a coffee hang out. There is some street parking, not a lot but this is not a very busy neighborhood so I have never had trouble getting a parking spot.

This place has potential but for the price it's really needing to address some things:
1) the staff is consistently rude and short
2) the pastries/quiche are consistently burnt. How are you going to charge $6-8 for a burnt quiche?
3) the coffee is so disappointing. Please please please teach your baristas how to pull espresso properly and make a proper latte. The coffee is consistently weak, cold and lacking foam.
4) you have a beautiful pizza oven yet you serve rectangle "pizza" (cold, not fresh thick pieces of bread with some toppings) and sell it for $6 a piece? Fire up that pizza Oven with some Napoli style pizzas already. We would love it!

Omg pastries here are SO good! Came on a Sunday morning around 8am and they appeared to have everything available. Their croissant dough type products were incredibly light and flaky. We had a chocolate croissant, cherry danish, morning bun, and cruffin with lemon curd and toasted meringue. Least favorite was the chocolate croissant only bc the chocolate was a bit more bitter than I prefer, and the outermost layer was a tad overdone. The cherry danish was to die for, as was the cruffin. And morning bun was also excellent. If ever back in the area I will definitely return! It would be worth the drive from Boulder and or Denver!

3.5 stars. Innovative and impressive variety of pastries and breads. But there is a slightly bitter and burned taste. The pastry with hazelnut, chocolate & escargot was alright but the bitter/burnt taste of the pastry bread dominated the taste. We also had a pastry with blueberries that was better and the filling part in the middle tasted good. Regarding coffee & tea, they only serve in 8 ounce cups. No larger sizes. They told us that if we wanted bigger cups of beverages to go to another place a block away. And an 8 ounce cup of Americano is $3. When I asked the barista for cream, she ignored me. I asked her again and she then took the cream out and told me as if I should know, that the cream is always kept in the fridge. When I said thank you for the cream, she ignored me as if I didn't matter. Maybe she was having a bad morning.

If you do a search for the word burnt, you will see multiple reviewers going back five years complaining about burnt pastries and bread at this place. You can't sell a slice of burnt quiche for eight dollars. It's ridiculous.

We don't go here anymore. The owner has a pattern of reacting in extremely inappropriate ways towards any sort of criticism. I understand that Covid has been hard, but his repeated behavior is inexcusable. All businesses have had a hard time, and this is the only place that has treated people so poorly over and over again. While the pastries etc. are tasty, they are incredibly expensive and sometimes the bread really is burnt.
I am sorry for the staff that is affected by the owner. I get that it has been especially difficult during Covid, but some things just do not need to be said or posted.
Some of the prices are a bit obnoxious, but everything we have tried from here over the years has been delicious. Croissants, baguette, the pastry snails, the conatos (don't know how to spell it), the chocolate cake, morning buns, pizzas, some pastry with sous vide rhubarb that was annoyingly expensive but so good. Great place for breakfast or when you feel like treating yourself.
