- Terrible tasting buffalo meat
I was in here this past Saturday and although the hours are convenient, the buffalo meat was just terrible when I cooked it. I don't know what it is about their meats. They all seemed to be a very light pink color. I'm used to seeing dark red smoked meats but this place doesn't seem to smoke the meats that much. Oh, boy, so many good things to say about this company. Not only is their meat delicious it is far healthier than beef--at least the factory-farmed, Big Ag edition. And eating it you are supporting the restoration of our hugely degraded prairie; this results in brining back so much biodiversity to the landscape that has disappeared over the hundred plus years we have been mismanaging it. At the same time, this results in the sequestration of so much carbon and restores the water cycle. With drought covering so much of the land in the mid-and far west, this last point is vital if we are to have an adequate food supply in the years to come.

I love ordering from them. On my last order, I needed to juggle the delivery after I placed the order due to unexpected work trip. Melissa worked to accommodate my schedule.
The meat itself is top quality and I really like the humane process to gather the meat.

I have been ordering for 3 years since visiting Dan and Jill O'Brien on the ranch. Family is the key word!
Some cuts are a challenge, but they are wise and send great recipes to cook heart and kidneys or instance.
Everything I have ordered has been clean, low fat and frozen solid.
I love that the animals are harvested one at a time and dressed on the field without having been run. The whole operation is a continuum from the prairie to the table. The blog posts and photo essays are a great read if you sign up for them online.

Wild Idea Buffalo is a great resource if you're in the market for buffalo (a.k.a.bison). WIB is the primary provider of grass-fed, humanely and naturally raised and humanely harvested buffalo meat in the United States.
American Buffalo is what sustained the Plains tribes who once roamed freely as hunter-gatherers across the beautiful Great Plains of the United States. And certainly all the early western settlers would have been a-goner without this noble animal.
Sadly, buffalo were also hunted for sport by western settlers and back in those dark days of the early 19th century they were purposely killed off by ever-encroaching settlers for no other reason than hoping to decimate Native American populations for whom bison were food, clothing, and shelter and objects of religious worship.
This noble animal was once almost entirely wiped out.
But thanks to many people who love buffalo for the magnificent animals they are, they are back in good number and although they may not be roaming the Plains in the millions like they once used to, there are many now who are carefully tending and raising them.
The Wild Idea Buffalo company sells healthy and wholesome buffalo meat products. The meats they sell are on the pricier side but as I've mentioned in a previous review it's a matter of quality, health, ethics and voting with my pocket book.
If I believe in the practices companies like this espouse, then I feel committed to support them with the hope that other businesses will opt to practice in this manner. As unlikely as it might seem, it would be wonderful to put factory farming practices out of business, but even making a dent in lessening it, is something.
If grass-fed, prairie raised buffalo were good enough for the Plains tribes for generations, they are certainly good enough for me and my family.

Great product and service. I just started ordering from Wild Idea. The product is of good quality, and nicely packed. I like the ground beef and liver blend. And I like the idea of supporting humanely raised buffalo meat and family farms.

We have their buffalo meats shipped to us in Washington State. It comes frozen solid - even in August. Their petite steaks are the best I have EVER eaten. I'm talking melt in your mouth delicious steak. I totally recommend this buffalo meat.

This New Yorker has been ordering from Wild Idea for years. This is my favorite and go to Bison butcher. Order arrives in pristine condition every time. After reading the founders book "Wild Idea: Buffalo and Family in a Difficult Land," I decided to try their buffalo meat. My family and I were not disappointed. We grew up on knowing where your food came from and the sustainability of what you eat. Animal based protein consists of 20% our diet. So, when we eat meat we go for the BEST and Wild Idea is the BEST. The taste is truly amazing. I especially love the organs like kidney, liver etc. Read the book, watch their videos, and give them a try. You won't regret it.

I have difficulties digesting a lot of beef, but still crave red meat so I've turned to Buffalo. Aside from commercial ground bison and an occasional steak, there isn't a lot of selection of buffalo meat in the supermarkets. After google searching buffalo meat I landed on Wild Idea.
I'm really happy to have found this operation. The variety and selection of buffalo is fantastic, I love making burritos with the steak strips, the buffalo Italian sausage is far better than any store bought options. I can substitute a lot of pork with their meat selection and I can digest their buffalo meat well, grass fed Dakota buffalo meat is unparalleled in quality. Most dishes prepared with their meat can be very hearty and satisfying, without the heaviness and groggy feeling sitting in your belly after dinner.
Their meat tender and flavorful. All the steps they take from the way they raise the buffalo to harvesting comes through in the flavor and quality of the meat. I've thought about road tripping to South Dakota sometime, just to take in the environment and their habitat on the wide open prairie. I have been ordering from Wild Idea for many years now, The First several orders were for their pet food ground bison. I have dogs and cats that the canned food, upon inspection, was not all that good. Even some of the best I could find was still not great, with a good price tag attached. The Wild Idea pet food is full of food (plenty of minerals) and not chemicals, my pets are very healthy and love the food. I decided that I was going to order meat for us people too.
After several orders of pet and people food, I need to say that their meat is more than worth the price. If you are eating cow meat, bison meat is less fat, but still moist. It cooks quicker and their meat is tasty, not like cow flavor. Jill has done great research, learning and has some great seasoning to make the sausages, hotdogs, salami, bratwurst, and more. The steaks are so good too.
On top of a great flavor is two other main factors. The first is that these bison are living clean and their bodies are not full of man made chemicals. None from injection or in the food they eat. True nature and earth friendly. Second is the support of the Wild Idea farm. If it was up to me there would be more family farms and ranches with the same attitude towards the land and the product they are making for sale.
