Why did you close your lunch service?
A:
We were averaging $225 in sales a day. It was costing me $25 per hour in labor plus the utilities just to be open. We were loosing money every time we opened for lunch. Not enough business to be open for lunch.

Mingo's Louisiana Kitchen is a food Truck that offers Po Boys, and Plates. Sometimes they offer seafood baskets, jambalaya, red beans and rice, and catfish. The food I've tried from them is always delicious and perfect. Tonight this food truck was at Food Truck Friday West in Glendale. It was hard to decide on what to order because it all sounded so great! But that chicken was so amazing from their other food truck Screaming Hot Chicken so I had to try the Buffalo Chicken plate. GOSH! IT WAS FORKING DELICIOUS! Not only delicious but that chicken just melted in the mouth like butter. Portion was also generously large (maybe by accident?) and prices were low.

You come here for New Orleans Cajun Type Foods like Po Boys, Seafood Plates, Red Beans and Rice and Jambalaya. Although it's a small restaurant where you can eat in or do take out there is definitely a New Orleans Feel. You are welcomed with New Orleans Music and it feels like you are on Bourbon Street. I found myself looking around for the musicians.
Short Story - Everything was technically perfect. Everything was delicious. Service was amazing for counter service. Everything was very good. Some things we tried showed how brilliant the chef really is.
Long Story-
We ordered at the counter, paid, got our beverages and sat ourselves. Our name was called and my husband picked up our order at the window. I'm on a Hot Chicken kick (just had Hattie B's this week) so I had to go with the hot chicken sandwich. Wow it was a great BIG plate of food for what I spent. The chicken was moist and flavorful. What impressed me most about the sandwich was how good the cornmeal coating was. Usually I don't like cornmeal coating because it's usually flat and too crunchy but this one was delicious and flavorful with a pleasing texture. It was HOT from a combination of seasoning and the hot tangy sauce with bite that also was applied. My sandwich was also topped with fresh lettuce, tomato and maybe the most amazing remoulade sauce I've ever tried. The sauce might have gotten buried with all the flavors and heat going on but I was able to fully appreciate it since my husband got his on the side so I tried it. I also received a very generously sized pile of perfect Old Bay Fries on the side. The fries seemed grease free and were light and fluffy inside with a delicious seasoning on them.
My husband tried a Shrimp Po Boy and he HAD TO HAVE the Red Beans and RICE. He said the Shrimp Po Boy was really good and the Shrimps were prepared perfect. But what he really went crazy for was The Red Beans and Rice because it was so flavorful. The Andouille Sausage was delicious and seared yummy. He said it tasted porky in a good way. It's a possibility that this is the Best Red Beans and Rice in Phoenix.
It didn't go with my meal but I had to sample the house made hot sauce. It was AWESOME. That stuff should be bottled and sold in stores.
At least three different people checked on us during our visit and asked us how things were. I thought we had to clear our own plates but someone came over to collect them and offered to refill a soda.
This review is only based on one visit and only trying a few things. I think if you came in and got the Red Beans and Rice you'd give a Five Stars. This is a casual restaurant that serves very much above average New Orleans Food in Phoenix..........if not excellent food.

I have been checking Mingo's Louisiana Kitchen Facebook page continuously to see what the menu item of the day is and where Corey (the owner) will be. I see that he is going to have biscuits and gravy on the menu for lunch. WHOA! I love biscuits and gravy -- as long as it's made with the right kind of sausage and the gravy isn't too floury. Since I haven't had Corey's, I thought I'd give it a shot.
Now, mind you, where he pulls up his food truck during this time of covid is not right around the corner from me. It's almost 20 miles one way. And if he's doing dinner, I want to make sure I'm not just sitting in traffic during rush hour.
Anyway, I decide to head down for b&g for lunch on a Saturday. Not only does he have the special of the day, he has a menu board set up for other items as well.
Well, since I was down there, I also picked up for a friend who loves his food. And we both decided to try almost everything on the menu.
I got the biscuits and gravy with scrambled eggs, the catfish plate, eggs and grits and andouille, the shrimp plate, the hot chicken plate, and the short ribs and fries. WHEW! Enough to last me for at least a week!
I was hesitant on trying the catfish. My experience with catfish prior was not a good one, but I thought I'd give it a shot. It was fried and flavored to perfection. Light and fluffy.
I loved the meat he used to flavor the gravy for the biscuits and gravy, and the gravy wasn't too starchy. It has to have the correct meat type -- I'm thinking sausage -- and not too floury to be good.
I loved the andouille! I wish I had gotten more than the one. I had never eaten grits prior so didn't know what to expect. I think I'll save it for something I can add to -- like a soup.
I loved the shrimp and the hot chicken plates and the short ribs. The short ribs were a bit too fatty for my taste, but I'm thinking they're supposed to be that way. I was flaky and tender and well seasoned though.
My friend and I can't wait till we head down to his food truck again. I will need to wait a little bit since I have a lot leftover.
I did post photos of each dish as well as Corey and his son as part of the general photo posts. Quickly put on my brakes and did a u-turn. I was thinking: I LOVE cajun food!
Cory had his food truck set up at an office building. I took a quick look at the menu for the day and decided upon the BBQ short ribs and the fries. As I waited, I fell into conversation with a few of those waiting for their food. Got it home. YUMMM! Best BBQ I've had yet, and the sauce for the fries, it was so good I could almost lick the plate.
I had posted it on Facebook, and a friend of mine, who lives nearby, said she LOVES cajun food as well. She was self-isolating herself during the pandemic, so I told her I'd go back to see if he was still there. And if he was, I could get something for her.
I went back, shot her a photo of the menu, and she decided upon the po boy and the jambalaya. I decided to try the jambalaya as well. She also LOVED it! She said the spicy hotness of the jambalaya was perfect. We both agreed the flavoring was spot on.
I wanted to get some of the BBQ sauce and the sauce for the fries, and I asked Cory if he could make me a batch, but I haven't heard from him. Oh, well. Probably has more important things to do with the pandemic. Hopefully, he hasn't gotten the virus.
Another person wanted to know if he was going to be there tomorrow. I looked on the schedule, and, no, he wasn't, but he does post his locations on his website.

Their food truck came to my work and they served some of the best fried catfish I've ever had. The dipping sauce was delish. So I started following them on IG. Saw they had a dinner special of seafood stew. Being in (AZ) it's hard to find places with good seafood so why not try it out. Service was ok. Wasn't anything special.
My husband got another one of their specials, the prime rib po boy. It was delicious the first two bites. The third bite he got a mouth full of blue cheese. My husband can't do the bleu cheese thing so he said he was done and couldn't eat anymore of it. I wish they mentioned it was in there so he could have asked no bleu cheese.

Hands down, my favorite food truck that comes to my work. Last time around, they were sold out of the braised short ribs and fries and I got the catfish basket. It was amazing - the cornmeal dredging is perfection and the 2 piece portion with fries is very generous for the price.
Today, they finally came back and I got out there right away for those short rib fries. The meat is so tender it almost melts in your mouth and the old bay seasoned fries and remoulade are delicious as well. Plus, the guys are so nice and the food comes out hot and pretty quick too.
The guys in my office are giving rave reviews to the jambalaya as I write this.

For years the hubs and I have traveled outside of our community looking for descent seafood. To our surprise, a restaurant named Mingo's was located down the street from our home. The food is DYNAMITE!
Stop reading this and go have a great meal and awesome customer service from Mr. Mingo and his team. Okay, I gotta go because my grub is getting cold!

I split a catfish & shrimp poboy and a red beans & rice with a friend.
The poboy was delicious. The catfish was perfect; exactly the way I hoped it would taste. The bread was a better quality than I expected. I can't really give an opinion on the shrimp. I'll have to try a shrimp plate next time to really get a good taste of it. It was definitely good in the sandwich, I just couldn't judge it on its own.
The red beans and rice was very tasty. Very generous portion size and a decent helping of sausage. Another reviewer commented that it was bland, but mine was very flavorful. That didn't stop me from hitting it with hot sauce though. I like it spicy.
We both topped it off with a Tiger's Blood daiquiri which I enjoyed. I really wish they'd add a margarita machine. ..

I've been trying to make it here for brunch but unforeseen circumstances prevented me. I finally made it today for brunch with the hubs.
As soon as you walk in the Bloody Mary Bar welcomes you with a "Hello $10 gets you unlimited trips to the bar". I had to partake. Bring on the Gram worthy pics. Did I mention they use Tito's Vodka.
Now time for food. I ordered the sweet corn cakes with a side of Andouille sausage. My hubs got the shrimp and grits. Let's just say I like a pancake but usually I'm one and done. I loved these corn cakes and I finished every single one of them. So light and delicious. The sausage had the perfect of amount of kick. I had to steal a bite of grits and they were so creamy with a true grit flavor. No need for all the extra stuff.

Hidden gem that's well worth the drive. I didn't think I'd ever find any good fried fish in Arizona and then we found this place. Hubs and I had the fried fish with fries. OMG, delicious! Even the hush puppies were good. My only con is the gnats, they were bad. I think they could help themselves out by purchasing a different trash can, ensuring the dishes are cleared and not sitting with discarded food. Lastly, purchase ketchup with a closing top, the gnats were drawn to them.

I decided to try this location a few times before reviewing and I am happy that we kept coming back. We love that they have different specials/entrees/choices all the time! We appreciate the creativity of the specials they promote and it's always delicious, the seasoning is perfect every time
We've devoured the seafood stew, Po'Boys, a shrimp linguine special, kids baskets and that Adult Octane beverage!
