This is not really a food truck, yet no restaurant either. There is this corner lot with semi-permanent structures and outdoor seating arrangement. You walk up to the BBQ hut to order meat, turn left to a bar to order drinks, then find a place to sit and eat.
All the meats were really traditionally smoked BBQ'ed. There are several very serious drums and smoke generators around, all on wheels, guess they can really move around if they wish.
I got 1/4 pound of brisket and another same size lamb to go. The meats were "dry" and the box came with a serving of sauce. I tried the meat without sauce first. They were well smoked, tender, but not melting. Lamb is really better than brisket.
The sauce was a bit chunky, on the sweet side, and excellent pairing to the meats, unlikely other places that went for spicy and masked the smokey or more subtle flavors. This is a bit surprising.
Unless the weather is good, the best way is probably order things to go. They have pits to keep people warm after the sunset. Hence "campfire".Helpful 1Thanks 0Love this 0Oh no 0 - May 21, 2016
This is without a shadow of a doubt the best brisket I've ever eaten(including in Texas). I'n not kidding, I finished it in the car while driving back home 5 minutes ago; that's how good it was. It's so tender, juicy and is the definition of "melt in your mouth" meat. It has a brilliant smoke ring, it's beautifully seasoned and packed with flavor. All the fat has rendered out so there aren't any greasy chewy bits. Also, ask for a little sauce on the side, it's ridiculously good, a little spicy, peppery and tingly that cuts through the richness of the brisket. A few drops are all you need though since the meat is that good. The combination is the feeling you would get if God kissed you with a mouth full of fine scotch.

I am absolutely going to go back here very regularly and try all the other things on the menu too. It's only open Fri-Sun from 3-8pm so keep that in mind.

As a native Texan, I've been on the lookout for a good smoked meat hookup. Anyone can put a little smoke on at home (you can find me grilling with wood at least once a week), but good BBQ takes time and experience.
I've tried Jack's and Pecos Pit, and while both were decent, Campfire wins hands down... This little trailer would be right at home in Austin (and would do well).
They have a few menu items that are regional PNW or experimental (BBQ-and-cheese-stuffed bread loaves, elk ribs, smoked salmon), but the brisket is the real deal... Textbook smoke ring and bark, perfectly tender and juicy. There are some cool sauce concoctions on offer, but IMO it's better all by itself.

It took me a while Saturday morning before I had checked my Twitter feed and there it was, a notice from Campfire BBQ that they were going to be in my neighborhood. It was past noon and they set up in the Woodcraft parking lot at 11 AM. Time was of the essence, so I headed right down. As I approached the cart I was gratified that the line wasn't too long, but as I rounded the corner and got a chance to read the menu board, I could see that I was a little late. The brisket, baby back ribs and sausage were sold out. Drat! I always like to see how people handle brisket. That would have to wait for another time. I went, instead, with two pulled pork pretzel sliders.
One slider probably would have done the trick. They're rather substantial and piled high with pulled pork and cole slaw. The pork itself was tender, delicious and not overly smoked. It was a good mix of the moist interior meat with bits of the exterior bark. The slaw provided a nice crunchy and contrasting texture to the meat. The sauce that topped everything off was very tasty. It was a good balance of flavor; not overly sweet and had a nice peppery finish with just the right amount of heat. As I said above, one slider probably would have been a sensible amount of food, but I greedily devoured two of them!
Campfire BBQ is a very solid barbecue option in a town that doesn't have very many competent purveyors of meat and smoke. In point of fact, our old buddies Pinky's BBQ have just (temporarily, we hope) hung up their aprons. So, the field of truly good BBQ joints remains as narrow as ever. I'm crossing my fingers that I'll see Campfire BBQ more often in Georgetown. There's something gratifying about just strolling down the hill and getting something really tasty to eat. I had the brisket meal and that came with 1/2 lb of brisket, potato salad, Cole slaw, cornbread, and the best pickles ever!!
Brisket had a good fat to meat ratio on it. It was so moist and the smoke ring was great! The potato salad was good but just not my taste of herbs. The Cole slaw had a great tang to it. The pickles were salty but had a great bite to it.
The lady that served me was super nice and was really funny. She took the time to make the food and put it all nicely into a to go box.

Good God... Best brisket in Washington. Myself and a few other Texas transplants had the pleasure of sampling brisket sliders at a wine release at Charles Smith in Georgetown. I tried to play it cool and not hound Stefan every time he came around with more tasty treats of expertly smoked brisket but that sugar cookie kept calling my name.

The brisket and baby back ribs here are fantastic. The meats are SO tender and juicy as well as seasoned to perfection. I fell in love after my first bite.
I've had the coleslaw, cornbread, and smoked egg - unfortunately, I'm not a huge fan of any of these sides.
Prices are a little bit on the high end BUT I am totally willing to pay a little more for the amazing BBQ they have to offer.
I also really appreciate how they've built out the space - there's a little beer garden, corn hole, and Jenga. It's a great casual hangout spot especially during the summer.
The owner of Campfire BBQ is also a very nice guy. He's very personable and seems to enjoy getting to know his patrons. He is also known to give very generous samples of meat!

Awesome place for some epic BBQ quick take-out. Or stay if the weather is cooperative and have a beer in the garden.
I got ribs to go and a side piece of the bacon cornbread. The ribs were awesome. All smokey and tender and juicy. And I have to say accompanied by one of the better BBQ sauces I've had in a little while. Its an excellent balance of sweet/tang/spice.

I LOVE BBQ (it's in my Texan blood) but did not have super high expectations seeing how I was in Seattle and this was being served out of a truck.
I am so glad we stumbled upon this place. What a pleasant and delicious surprise! I ordered the brisket & baby back ribs and both meats were amazing, well seasoned and tender. BBQ ribs are Good!!! There's line right at 4pm, so if you want a good sitting spot then come early and have a beer at the bar. Even when it said open till late, chances are they're out of BBQ ... and when they're out, they're done! Came here at 6pm yesterday and they're already closed because they're out of BBQ.
