    Inspired by both Chef and Sommelier sensibilities,Wildwood Spirits Co. blends 'farm to table' and 'vineyard to bottle' to create distillates in a unique & distinctive 'farm to distillery' fashion. In the spirit of farmers from colonial times, where making distillates maximized local crops by preserving excess fruit and grain, Wildwood Spirits Co. sources nearly all of its ingredients from local farms. Ninety percent of the produce used for distilling Wildwood Spirits Co. spirits, from winter wheat to Braeburn apples to Douglas fir, is grown in Washington state.

      I wandered in while on a walk today, and found this spot to be wonderful. The man who greeted me was friendly, I had a taste of the excellent vodka and gin, and we had a great conversation. I learned a bit about distilling, and really enjoyed myself. Great unexpected treat.

      The gin they produce is as good as any I have tasted. Very smooth and full of flavor! A well done small batch Gin. They are getting into bourbon and do a decent vodka! They are a small batch producer putting out an excellent product!

      Wildwood Spirits is an awesome distillery. The owner owns many restaurants in the Seattle area and has started this distillery more for a passion to deliver high quality liquors at a affordable price.
      Everything we tried we loved and purchased. All liquors are bottled by hand.

      Their bourbon whiskey "The Dark Door" is a rare commodity. It's bottled once a year and always sells out at pre-sale. It's that good!

      They have a vodka "Stark Vatten" which translates to strong water. The keys to a great vodka are odorless, tasteless and colorless. Stark Vatten has all of those qualities to make a great vodka.

      Last but certainly not least, their gin "Kur" pronounced cure, is in a league of its own and has won many awards. It won awards in 2015,16 and 17 at San Francisco's World Spirits Competition.

      I recommend anyone to check out Wildwood Spirits, I'm certainly going back for more Dark Door, Stark Vatten and Kur.

      I thought it was unique and interesting that the owners were able to intelligently describe the differences between Tito's still vodka and 7 times distilled 7 windows vodka and 7 times distilled vodka.

      They explained how eauropean alcohol carries the notes of the food it was brewed from more than American alcohol but his enthusiasm for his tools was infectious.

      The ambiance here is very nice, with a retro apothecary style vibe. It is clean, open, and inviting (albeit hard to find). It is clear that the distiller is very passionate about his craft. That being said, I don't think he's quite found his "voice" in spirits yet. Overall, I found the gins to be ok, not amazing. The vodka was, well, vodka.
      I really enjoyed the tour with lot of useful information about how he makes the drinks and he testes the products. As the distiller is very very passionate about his craft, I am sure things will get better over time. I look forward to him finding his own unique style.

      Absolutely wonderful place to visit. I was here as part of a Yelp event, so the person giving us the Distillery tour was chef and co-owner John Howie, which I imagine doesn't happen as often, but the rest of it seemed to be what you would experience any other time here at Wildwood, which is excellence.

      We started off in the Tasting Room, where Chef Howie discussed the process of distillation and what goes into it. He described how many awards their products have learned recently, which was very impressive. We then went through the Distillery, where he told us all sorts of things about the process and showed us how it is done. I'm not much of a drinker and I'm not much of a liquor snob, but I found this really fascinating and I found his passion for distillation to be infectious.

      The tour itself took about 30 minutes, then it was on to the sampling part of the tour, the happiest part of all! We were given, in my opinion, rather generous pours of each gin and the vodka they produce, as well as the whiskey. In this case, they were sold out of the Dark Door whisky but Chef Howie was kind enough to bring his own personal bottle to the tasting so we could try it. I imagine that's not very common, but if you ever have the opportunity to try this whiskey, you should because it was smooth as butter and had plenty of amazing flavor and caramel notes. (Point of confession: This is coming from someone who can't stand Jack Daniels.)

      Their Kur gin, the most popular and best for cocktails, made the strongest impression on me, especially after we were invited to try it in a Negroni. Smooth as butter! I bought a bottle on site. Most of the bottles are around $30 a piece before tax. I expected them to be even more expensive considering how many awards they have won and how good they were but thankfully they kept it in a more reasonable price range. (The Dark Door whiskey is $50, when available.) While you can buy their gin and vodka in Whole Foods or Total Wine, it's fun to buy it at Wildwood Spirits because you can sample it first. Where else can you do that?

      I will be back and I'll be bringing my friends.

      We got a new motorcycle and we were driving around. We stopped in at Wildwood for a small tasting. The Whiskey was great, the Gin was outstanding and they make a no alcohol Gin that is really tasty. After drinking so much during Covid Quarantine it is nice to have a no alcohol option. Also, the guy working the tasting room was great and very knowledgeable!

      Wildwood Spirits Co. is located below Beardslee Public House. It was through a coupon from Beardslee that we'd come to hear of their distillery.
      Enter this small quaint tasting room for their Washington sourced vodka and gin:
      Stark Vatten (Swedish for "strong water) vodka $48.61
      Kur (pronounced "cure") Gin $48.61. This is a London Dry Gin Style with classic juniper aromas and subtle citrus flavors.
      Both very crisp and clean-tasting. However, we were ravenous and eager to get upstairs, but wanted to stop in before they'd closed. So I can't say we were in the right mindset to fully appreciate. We will be back!!

      Here's some interesting titbits about the distiller though:
      Erik Liedholm has an advanced level accreditation with the Court of Mastser Sommeliers and has studied with world renowned Master Distiller and Michigan State University Professor Dr. Kris Berglund. With a Sommelier's palate and a scientist's mind, it makes for a very special creation.

      There are so many options to ensure you never run out:
      Drop in at Total Wine & More, Metropolitan Markets. Or better yet, grab some at one of my favorite restaurants John Howie! So happens Erik is the Company Wine Director for Seastar Restaurant, Raw Bar and John Howie Steak. It will all make sense to you now as to where to find these highly acclaimed spirits. Erik is also an accomplished chef who has cooked alongside such culinary luminaries as Gordon Ramsay, Eric Ripert, Takashi Yagahashi and the late Jean-Louis Paladin!

      This understated establishment is a must visit!

      I was visiting the Seattle area and really wanted to stop by this place after hearing such good things. Well, I was able to do that late Thursday afternoon and I was the only one there. I completely enjoyed a one-on-one tasting and talk with the distiller himself. He was so charming and knowledgeable and the spirts were all wonderful - especially the Kur Gin and the Orange Liqueur! So glad I went and I can't wait to order something online once I get home! The artwork on the Kur Gin label was so pretty too.
