It is with great sadness that we announce the closure of The Assembly. Our last day of service will be Saturday, August 20th. We hope you'll return to enjoy a few more fresh, seasonal and globally-inspired meals. This decision was not an easy one. Our priority from the moment the door opened was to care: For ourselves, for our staff, and for our community. And now the time is right to pause and breathe. We love you, The Assembly Team The Assembly is a community-focused restaurant that brings people together over fresh, seasonal, globally-inspired food and thoughtfully produced wine that is designed to share. Our mission is to create memorable experiences and care for our community through inspired and innovative flavors, exciting wines made by thoughtful producers, and exceptional service in a welcoming, inclusive environment.

Very, very slow service took this down to 3 stars from four. Bright, open space. Unfortunately the service was horrific. The server seemed to be by us all the time but never bringing anything we needed or asking if we needed anything - it was very strange.
The food was all pretty good but nothing was spectacular. The charcuterie board had way too much bread and not enough meat or cheese. The calamari appetizer tasted good but it was quite small. The salmon with lentils was quite tasty. The Maitake mushroom entree was quite delicious and highly recommended.
The brown butter rice crispy dessert was tasty but not as good as everyone else had made it out to be.

Thanks for your review, Betty! I'm sorry we didn't live up to your expectations. I'm not quite sure when you dined with us, as the entrées you mention haven't been on our menu since the summer, however you absolutely hit the nail on the head that COVID has caused staffing shortages across the country that present a number of challenges. We hope you'll give us another chance when you're in the area, as we're incredibly proud of everything our staff has accomplished in these uncertain times!

One of the best places to eat in the Valley! Amazing staff and chefs, they have seasonal dishes that are always making me excited to see what they have in store for their next seasonal menu. Give this place a try for a nice dinner out with the fam or a date night - you'll leave with a full tummy and good memories!

This place is the best in the valley! The love and attention to detail is par to none. Our server Jericka was extremely knowledgeable and Friendly! 5 out of 5.

I've passed this restaurant many times on my drives through Eagle. Last night my husband and I finally dined there and it was fabulous. We have been disappointed in many of the offerings in the valley and were just looking for some "acceptable " alternatives. Well, the meal was far beyond what we were expecting. The appetizers (I had the cold pea soup and my husband had the salad) were delicious and beautifully presented. Our entrees ( me the fish, husband the pasta) were far beyond anything that we've had, in the valley, in recent years.

I am so sorry I didn't take any photos! Maybe the owner is working on getting photos posted. Guys - the plated dishes are GORGEOUS and so tasty. Unique flavors that burst in your mouth. Seasonal menu tappas style. We each ordered two dishes to share and but ended up eating our own main dish. We tasted everything...Amazing flavors and beautiful presentation. We left satisfied but not full which made for a perfect dinner.
Fritters were our favorite starter. The beet salad with goat cheese was colorful and tasty. Brussel spouts are different that the typical fried Brussel sprouts across America. Sweetened with raisins and a nice light sauce. A much healthy version then the trendy Brussel sprouts.
Entrees
Salmon grilled to perfection with crusty outside and a rare center served with a vibrant salad. Halibut tasty with a delicious colorful sauce and cous cous. Steak au Poivre looked great. I absolutely love it here. The food.... The little details with how they decorate the plates .... The drinks.... The staff. They are all so friendly. This business is obviously doing something right, with food AND employees! Highly recommend.

I am in a glorious food coma. Came here with two girlfriends for a low-key ladies night and had 8 different dishes, all recommended by the owner, Jaimie. We licked every plate clean and absolutely loved the organic wine. The chicken was one of the best I have ever had in my life (literally).

I left a Google review... The owner answered all the 5 star reviews and never replied to mine.
The bottom line is you'll need to eat before you go here and I'd recommend a few drinks as well. The food is okay not exciting, not wow!!! The wine list is limited, the pours are weak. The beer menu is "we serve local beer" um okay so not a very deep beer selection.
We spent 400.00 for five people and I was still hungry and needed a drink.
It's a hipster California style hangout. Not really a good fit in Eagle.
The owners bought the entire building so we're probably stuck with this place for a while. Otherwise I'd of given this dog 6 months tops.

We really appreciate your feedback. I did attempt to respond to your message on Google, I'm so sorry that you thought we hadn't answered it.
We do make an effort to feature Colorado beer and spirits, as supporting local producers is a big part of our mission at The Assembly. Our focus, however, is on an innovative wine list with wine made by thoughtful producers from around the world, which is why our beer list is so small.
Regarding the ownership, we do not own the entire building. We only own the space where the restaurant is located, and other businesses within the building either own or lease their own spaces.

I made a reservation and was excited to try this new restaurant in town. Finally a place that wasn't just beer and bar food.
However, we ended up leaving 20 minutes after we were seated. 10 minutes after we were seated a waitress finally acknowledged us and brought us water then disappeared again.
She passed us at least another 10 times without so much as an "I'll be right back".
After seeing her take an order for a table of 8 I knew our order would be behind that and given the lack of attention we were given I wasn't willing to stick around to be blown off anymore. I figured at 6:30 on a Wednesday it wouldn't be too crowded, and it wasn't. The restaurant could also use some noise dampening products on walls or ceilings. Despite not being too busy it was very loud.

I want to apologize for your experience with us at The Assembly. I did call you and leave you a message the day after your visit, and I would be more than happy to speak to you further if there are any other issues I might be able to address.
We value hospitality and customer care quite highly, and I am so sorry that you did not receive that during your visit. I can assure you that we did speak to the server who waited on you that night about the issues you presented.
We agree that the dining room is louder than we intended, and we have ordered acoustic panels that will be installed as soon as they arrive.
I again want to sincerely apologize, and hope you will give us another chance to have you in the restaurant.
