This is actually the Fast Stop in Shallowater. They have a grill inside that serves pizza, corn dogs, etc. Busy in the morning with locals for a quick breakfast, packed at lunch with high school kids.
Small place, only 6 tables. The food was pretty good. It reminded me of Hawaii, which is what it's supposed to do. So, mission accomplished, I suppose. I had stir fried noodles w/spam. Don't knock it till you've tried it. A touch pricey for what it is, basically Asian food with a Pacific island touch. It was probably the $1.79 tea that brought the price to $10. Good for an occasional meal.
I was pleasantly surprised to find Cancun. I grew up on TexMex and will always love it. Recently, I spent three years in Corpus Christi and came to appreciate the Jalisco/Cancun style of cooking. I've not had this style of food since then and Cancun fills the bill nicely. White cheese, cilantro and fish. Good stuff.
I went several years hearing about Pei Wei and never experiencing it. Suffice it to say, I had high expectations when I went to my first Pei Wei in Lubbock. I was not disappointed.
The food is fabulous. Everything I've tried is very good. They even have a gluten-free menu for my wife.
Yes, the seating is a little cramped and the idea of personal space is challenging... but the food is worth it. My mouth is watering just thinking about it. Give me Pad Thai!

I would say that the cost is a touch high for the amount of food you get. The strips are good, but not for that price or portion. That's the only thing that keeps me from giving it 5 stars.
I also like the fact that they play Christian music in their dining room.
If you're looking for a cheap lunch with moderately good food in southeast Lubbock, this is an OK choice. It's a generic Chinese food joint, nothing special... but they give you a generous amount of food for low cost. It beats a whopper.
My family tried it for the first time last night. My son was not a fan, but my wife and I found it a refreshing change from the normal Mexican food fare in West Texas.
My wife is allergic to gluten, so we have to be careful where we eat. Tacos are usually a safe bet, since they're usually always corn tortillas. Fuzzy's famous taco is an open soft taco, which is usually a flour taco. Not here. Their corn tortilla is loaded with one of four different meats, tons of shredded lettuce, yellow and white cheese, tomatoes, and some kind of subtle white sauce. Very good.
As an option to rice, they offer "latin-fried potatoes" which is nothing more than cube-cut potatoes sauteed in oil and spices... the kind of thing I cook around the house anyway. Pour some of their salsa over it and its really pretty good.
Prices were great. $5.99 for a dinner plate that easily fills you up, although the chips and salsa are extra. My wife and I will return.
