I love the following and would order all of them again:
madai (japanese bream, shiso, meyer lemon zest, olive oil)
loup crudo )mediterranean sea bass, texas grapefruit, avocado, fennel vinegar)
brussels sprouts (crispy brussels sprouts, lemon chili)
pork jowl (brussels sprout kimchee, preserved lemon crème fraiche, romaine) -- this was my second favorite. So succulent and crispy and dreamy.
Wagyu sous vide short ribs (cooked for 3 days!) -- this was my very favorite. It was meat that had more of the consistency of rich butter. It was the most tender meat I have ever eaten.
The wakatake onikoroshi "demon slayer" junmai daiginjo ($110) was the most deluxe and delicious bottle of sake I have ever had.
My knees go week when I think of Uchiko.
