I second Ten Ren: http://www.yelp.com/bi... (some of the reviews under this listing are for the bubble tea place a few doors up, "Ten Ren Tea Time", but most are for the actual tea shop).

Definitely Ten Ren is the best.  They're on Mott Street in China Town, and I think there's another on Lafayette just above Canal.

Subtle Tea is my all time favorite tea shop. It has a huge selection with tons of variety, and they're known to improvise and discover their own yummy blends. http://www.subtleteast.../

The only one I've seen is on the corner of 30th and Madison, and you should be sure to stop by there if you're ever in the neighborhood. My favorite drink is their chi latte with coffee instead of milk (try it), but I also like their Carnival blend.
