Had a friend staying with us and he mentioned he liked ground turkey.  I bought some, but never cooked it and now it's the only meat in the house...
Anyone have good recipes that call for ground Turkey???

Do I need to add any liquid or anything to avoid it drying out, or is it simply a matter of not cooking it too long.  I do have 1/4 lb. of ground Buffalo meat in the house, which tends to be extra juicy.  Would it be good to mix them?

You can put about a quarter cup of water in the meat but only after you brown it for a minute or 2.
It's not as fatty as hamburger meat but it still has some of it's own juices that are released when cooked. Once you see the juices start to reduce you can add water or white wine or a splash of worschtershire sauce, tomato sauce w/ a little water.

I've never cooked with buffalo but I'm assuming you can mix it and make a meatloaf.
When I make meatloaf I use, ground turkey, beef & pork.
So the turkey & buffalo would work.
try to mix in some oatmeal or bread crumbs to hearty it up.
don't forget the ketchup :)

I pretty much use ground turkey as a substitute for ground beef.

I eat three egg whites and ground turkey and wrap it in two corn tortillas for breakfast.  Pretty damn good and around 350 calories.

You can make some delicious Turkey Chili as well. SUPER easy. You can serve this with a side of cornbread.

Ground Turkey (lightly browned)
Tomato Paste
3-4 cans of Rotel Tomatoes
Garlic
Green Onions
Cilantro
Can of corn
Can of kidney beans
Can of chili beans
Can of White Beans
Cumin
Chipotle Chile Powder
Veggie Broth or Chicken Broth to "soup" it up a bit.

Throw it all in a crock-pot or stock pot.

Gremolata Meatballs
serves 5-6 people

2 cloves garlic, crushed
1/4 c parsley, packed
1 T lemon rind, about 1/2 of a lemon
1/2 c dry bread crumbs

1 1/4 lb pkg ground turkey
1/4 c grated parmesan cheese
1 egg
1/2 t salt
fresh ground pepper to taste

Place first four ingredients in food processor and whirl until finely chopped. Mix with remaining ingredients in a bowl with your hands. Form into meatballs, about 16-18 total. Saute in a non-stick pan with in a tablespoon of olive oil. When browned on all sides, simmer in spaghetti sauce for 20 minutes. Serve over pasta.

My husband boycotted the groudn turkey so we had small buffalo burgers instead.  I'm gonna try to sneak it to him tomorrow. (He's cooking tonight)  Now that the turkey has thawed Ihave to cook it tomorrow no matter what...maybe he'll just decide to eat it if it's the only thing...

Last but not least - Cottage Pie.

Brown ground turkey with chopped onion.   Add vegetables of your choice...a package of frozen mixed veggies work great... I've also used leftover sauteed peppers or mushrooms or whatever.... it's a forgiving clean out the fridge type recipe, heh.   Add a can of tomato sauce, several shakes of Worchestershire sauce, some thyme, salt, pepper... simmer, transfer to a small casserole dish, top with a crust of cooked mashed potatoes and bake in the oven for about a half hour at 350 til hot and bubbly.

Very comforting and tasty.

On the subject of ground turkey - at my Mollie Stones, you can get ground turkey DARK MEAT. That stuff is fantastic.

Here is my turkey analysis:

Ground turkey breast: needs a ton of spicing to be good - meaning chili, tacos, stuff like that
Ground turkey (white and dark): decent flavor. Good for spaghetti, or meat balls, possibly burgers
Ground turkey dark meat: great flavor (more fat, dunno how much - i should look this up. I don't really pay attention to fat)  - where the meat is the main star - meatloaf and burgers.

you can buy some Italian sausage (take it out of the casing) and brown it together with the turkey.
After about 5 mins add chopped onions & tomato. after a few more minutes add chopped garlic and mushrooms (and zucchini if you like it)
salt
pepper
Italian seasoning
Add tomato sauce and a little water.
Let everything come to a boil and simmer for 10 mins.

You can throw this over spaghetti or add any kind of pasta you like.
Top w/ parm!!!!!!!!!!!!

The turkey is still there but it takes a back seat to the sausage and all the other flavors.
Not sure what your mans beef is w/ ground turkey but.......... ahhahahaha

   1/4           Cup  Cider Vinegar
4               Cups  Cooked Turkey Breast Meat -- Or Chicken Breast
2        Tablespoons  Brown Sugar Substitute, Sugar Twin
1              Ounce  Unsweetened Chocolate -- Grated
12            Ounces  Chili Sauce
10 1/2        Ounces  Chicken Broth
11 1/2        Ounces  refrigerated breadstick dough -- Cornbread

Preheat oven to 375. Melt margarine in a large nonstick skilled coated with cooking spray over
medium-high heat. Add onion, peppers and garlic and saute 5 minutes. Stir
in cumin and coriander, and cook 2 minutes. Stir in vinegar, scraping skillet
to loosen browned bits. Add the chicken and the next 4 ingredients
(chicken through broth) and cook 15 minutes or until thick, stirring occasionally.
Spoon chicken mixture into 11 x 7 inch baking dish coated with cooking
spray

Unroll corn bread dough, separating into strips. Place strips in a lattice
fashion over chicken mixture. Bake at 375 for 25 minutes or until golden
brown; let stand 15 minutes before serving.

I made turkey burgers with ground turkey a while back and even though I spiced it up, it was kind of bland (and no one liked them).  When I use ground turkey to make tacos instead of beef, it comes out pretty good!
