I looked all over Alexandria for a po-boy shop, for some reason they are very hard to find in middle LA.   I stopped by Po-boy Express and picked up "Super Cajun" to go.  I was working a midnight to 10am shift so I picked the po-boy up at about 6:30 pm and didn't have a chance to eat until around 4 or 5 am.  The sandwich held up well and was still very tasty.  I think they have about 40 different…
