Roadrunner is awesome and must be visited if you travel this way.  I'm not too familiar with their night life, but I've been there for breakfast lots and lots of times.  While their omelets are good, I'm more of a skier sandwich person myself: fried egg with bacon and avo all on toasted white bread.
