I recently took my first trip out to Montauk. After seeing the lighthouse and deciding to try to spend the night, I said I wanted to eat somewhere "on" the water and have some seafood. Done and done.   Lenny's  is very charming and just what I was looking for ambiance-wise. I mean, they serve drinks in plastic cups and soup in styrofoam bowls and it's adorable, oddly.
