I didn't know Vietnam produced crepes.  But they do!  And you can get them here!  They come crispy,  decidedly unlike the French variety.  Instead of being stuffed with goodies they are somehow...infused with them.  Shrimp, chicken, bean sprouts, and other things that were tasty.  The dipping sauce was maybe my favorite part, because it made all the flavors pop.  Although the side of leafy green…
