There are no good restaurants in Bergen County.  Except for Varka.  Somehow or another, they are defying the odds here - service is good, fish is as fresh as can be, menu is tasty, and preparation is spot-on.  Varka chips are freaking addictive, and I seem to be unable to keep going back to my grilled jumbo shrimp standby, though all of the simple griled fish preparations are delicious.  And hey -…
