Slim's Last Chance has two things going for it that make this one of my favorite places in Georgetown.
Thing #1: This is, as far as I know, the only country-western bar in Seattle that is not full of hipsters busy being ironic. Most of the people I see at Slims are actual people who I think probably genuinely appreciate this bar for what it is. It reminds me of one of my favorite bars back in Chicago, Carol's (which I hear has since become overrun with hipsters being Ironic, sadly).
Thing #2: The chili is DA BOMB! You may balk at paying almost $10 for a bowl of chili, but trust me, it's worth it. I've tried all four of their chilis, and I can't decide which is best. Get it with grits and you'll have a very happy stomach. Perfect for a cold winter's evening in Seattle. -

The winner here is the Brisket & beans on top of jalapeño mac n cheese! It is money! The creaminess of the mac n cheese mellows out the bite from the chili, in a good way! I'm sure, each, by themselves is yummy, but together, it just brings the meal to a whole new level!
The kobe beef chili dog was ok, nothing too special, IMO.
The service was fast and friendly. Nice dive in Georgetown! -

This place is probably one of the last place that I would go to in Seattle. Your typical dive bar but with great food!!
You probably would not catch me coming here regularly since I don't really drink. Another place that my brother found in Seattle that is supposedly known for their chili. We had the chili verde and the texas red chili. The texas red (is really red) and really good!! I thought it was going to be a spicy chili but it wasn't at all. This is one of those places where if you have heartburn, make sure you take tums or some sort of antacid before you go. Its a very hearty chili that I couldn't even finish myself. Even though this place isn't one of those places I would go to hangout, I def would want to come back for chili!!! They have a couple other types of chili that I am looking forward to try.
The waitress there during the afternoon was really nice which is a plus. Probably because it wasn't busy in the afternoon.

Dear Yelp readers: get the Big Red Texas chili over the jalapeno mac and cheese/grits with the works. It's delicious. Trust me. I came in last night- it was pretty slow when we came in, there was a handful of patrons at the bar and a couple other tables occupied. Our waitress was very sweet and took good care of us. I almost ordered a second bowl of chili, but decided against making a gluttonous ass out of myself.

OMG.....All I can say about this place, again, I wait so damn long to go there. I had the verde and what a bowl of yum!! A bowl was not enough I want more and more, what do they put crack in it? BF had a cup of the red chili naked (not him) heh heh but the chili, he wanted to have it pure to rate it just as is and he said hands down this was the best chili he had ever eaten, he like the perfect seasoning/flavor balance. The bartender was very nice, very cute place.....yadda yadda. To the owner of Slim's, if your reading this please, please, please consider opening a sister Slim's in Fremont area, Fremont needs you, I need you.

Or course this was on DD&D so we had to check it out. I have a natural affinity for chili.
1 - get the chili over the mac and cheese. Two of us ate there, and one got the mac and I got the cheesy grits. Grits not as good. If you go, get it on the mac.
2 - Also, we tried the texas red and the brisket and bean. The brisket was good, but not nearly as good as the texas red. So if you weren't sure which chili to order, I'd recommend the texas red.
Overall the food was really good, especially if you like chili. It didn't wow me over completely but it was pretty good and worth trying. -

Looking for delicious Chili and amazing Jalapeno Mac and Cheese? You gotta stop here. This little Dive (Featured on Triple D!) knows that it does well and makes sure that is all it does. Whether you like beef, pork or turkey, there is an option for you. I stopped by twice in a 3 day trip to Seattle (First and Last meal of the trip) for some heaven in a bowl. The ambiance is that of biker bar meets local punk rock venue. If you can get over the fact that you might not be wearing enough denim to fit in, the food is to die for.
This place does chili justice, it comes to you piping hot, and has the perfect balance between flavor and heat. The only thing keeping me from rating it 5 stars is the slow service. Of the 2 times we stopped by, we sat roughly 10 minutes before the wait staff come over to ask what we would like to drink. Once we did order our food, it came out quickly. After that we were given what seemed like another 15 minutes to come to terms with the fact that a check was coming.
Overall a place that is a must visit! -

This place is located right next to the Pig Iron BBQ. i have been interested in going to this place, but quite honestly, never got up enough nerve to venture in..... something about seeing quite a few Harley's parked out front just doesn't do it for me (that's just me).
Well, we decided to go last Saturday night. it was alittle after 7pm. not too crowded~ and only a few bikers were sitting at the bar.
I wasn't too hungry so i ordered the wings. my bf ordered some sort of chili with a ton of toppings. cornbread (with butter and honey on the side).
There were 2 people waiting on us, which i think added to the confusion of our service. It took awhile for them to take our order (i think one thought the other was taking care of us).
The wings were just ok ........i've had better and worse. nothing to write home about. i tried his chili .... he really liked it. i think the turkey chili that i make at home tastes better... i don't care for greasey hamburger in chili.
so, atleast i can say 'been there. done that' ...... would be fun with a group of friends to hang out., i suppose. i'll have to wait until 'summer time' to go back there again so i can try out their 'yard'. -

*Best Commercial Backyard In Seattle*
The one thing that keeps me coming back is Slim's backyard area. It's got full southern exposure, which, dear Seattle-ites, means you've got many many hours to soak in the sun (when it's out) in the summertime. There's about 10 picnic tables back there (but why? why? why? the umbrellas!? We need our Vitamin D people!!!), grass on the ground, and a large broken down truck that serves as a stage.
Imma vegetarian, so meat and chili and crawfish are out, but I do enjoy the Jalapeño Mac 'n Cheese (a bit buttery), grits (hells yes), and cornbread (not the best, but not the worst).
Imma drinker, and although the Mason jars the beer is served in may be clever, I feel more than slightly slighted that it's less than 16 oz. It also tends to dribble down my chin due to the screw top part - now that's a *real* drinking problem.
The staff has always been considerate and conscientious when I've been there and that's between 11 and 3 partner. I can't vouch for other times.
FYI: Their bbq is from Pig Iron BBQ right next door. Just think you should know that. -

Saw Guy Fieri pimp this place on Diner & Dives, and since I visit family regularly in Washington, decided to stop in on a recent trip. Landed at SeaTac and immediately proceeded to Slim's for lunch. Just south of downtown, Slim's is in the industrial section of the city, several blocks south of the stadiums.
Came in specifically to try the Chili Verde served over Jalapeno Mac & Cheese. Off the Hinges!! The dish was actually better than i thought it would be, and i was salivating watching the dish prepared on TV. The Chili Verde, by itself, was pretty light given the masive amount of flavor. The pork was tender and properly spiced. The Jalapeno Mac & Cheese was the perfect base for this dish; rice just simply wouldn't have done it. Other than the Jalapeno Mac & Cheese, purists can order Chili with no base, or, if it tickles your fancy, over White Cheddar Grits.
The menu at Slim's is heavily weighted by various Chili and those items you can throw Chili on: Burgers, Dogs, Fries, Wings, etc. Place has a full bar, but Beer appears to be the drink of choice. On the late morning that I arrived, I was the only one in the restaurant (actually calling it a restaurant may be a bit misleading; it's more Roadhouse). Even with no other customers in the place on a Friday morning at 11:20 a.m., it still gave the vibe of a serious biker bar. And for good reason; the very next time I drove by Slims, there were a half dozen hogs parked directly in front, in that style that suggests the bikers are more Hells Angels than Weekend Warrior. Either way, they'll agree that this place is a serious Chili house, with lots of character and possibly the best Chili Verde this side of Sante Fe or anyplace with tacos on the menu (Slim's doesn't). -

This is another of those places that I'd like to like a lot more than I do. On the positive side, the space has a fun honky-tonk ambiance, and the service is competent and friendly. It's probably a great place to tip back a pint or two and take in the bands in the evenings.
Where SLCCS&WH falls down is the food. The chili really isn't anything you haven't seen before, and have seen done better. The crawfish po' boy was a bit of a disappointment. I've caught and eaten a lot of crawfish, and I'll be darned if I can figure out where they're sourcing theirs. These are the smallest crawdad tails I have ever seen! At maybe 1/2" long, it's as if they took a can of Snow's cocktail shrimp, tossed them in flour, and fried them. I really have a hard time believing these are crawfish. Shrimp maybe, but not crawfish. The rest of the sandwich is a mess of shredded greens and abundantly slathered with a pleasantly spicy sauce. Being extremely overstuffed, this sandwich is very difficult to eat with your hands. More isn't always better, folks. The accompanying fries were greasy and uninspired.
With so many pubs that serve really good food, I don't see a lot to persuade me to come back. Hope you have better luck. -

WTF, Man I don't know. Some friends(2) and I went there after a cold,hard Saturday of working(collecting cans,wire,food,etc.). There was parking out front for our carts. We parked along side the motorcycles at the curb. My cart looked better than the Yuppie Harleys there.
To me,the place trys to look like something it's not. Anyways,we walked on in,sat at the bar,and waited to get served. Waited to get served,waited to get served,waited to get served,waited to get served. You get the picture.
The place was maybe 1/3 full. And no one was at the bar except us three. Tried to flag down waitresses. Who all had tattoos and were dressed like Daisy Duke. For reals! Finally one says "Yea?" We order drinks,they pour, then split like we're the plague or homeless or something? We tried to pay. No Dice. It was hard to get the girls attention to pay for the drinks they gave us.
We weren't leering at them either. Trust me on this. I ordered a round of Jameson shots. Maybe it was because of how we were dressed. Or the fact the we rolled up with carts instead of "Harleys" but man, I think there was maybe a cap full of whiskey in the glass. $20 for nothing. Thanks girls.
It took us 90 min to get 3 drinks from them. I kid you not. We were gonna eat,but decided to to leave and to eat what we had found earlier in the day from the Jack in the Box dumpster on 1st. ave.
Before I forget. Whenever we did get served. We left a tip after every drink. And after 3 drinks,the tip was still there. They didn't even want that from us. Add it up. 3 guys. 3 drinks each. 3 guys leaving a tip after every drink. So,3 x 3 = 9 tips of $2-$3 each. WTF?
Before we left, we pointed out the fact that the money was for them. The "Older" one just looked at it and walked away.
So we scooped it up. walked out the door to the Chevron on 1st & E. Marginal Way and bought booze and headed for the nearest bridge
We weren't loud,obnoxious,leering,none of that. They just don't like someone that's not as fortunate as them. Or not a Harley rider.

I was really impressed that I liked this place as much as I did. After seeing it on Diners, Drive-Ins and Dives we have been wanting to go here for years, but whenever we think to go is on a Sunday, when its closed. But we were going to a Sounders game, and decided to stop in here for some dinner before hand. My Boyfriend and I both had the Copper Red ale, which is from those Manny's guys, and it was pretty good. More like a Pale Ale, but not bad. We also both had the Texas Red Chili over the jalapeno mac and cheese. I got cheese though, while he got sour cream. I know, I know..... crazy, right? I like to be adventurous sometimes.
It was really good chili, and I would definitely come here again. Next time though, I would probably just get the chili on its own with the mac n cheese on the side, so I can taste more of the mac n cheese. I also want to try the chili verde, and the grits. All sound fantastic!
Our Server/Bartender was also super nice too.
The only bad thing I have to say though was the cornbread was very blah, it wasn't very good and had no flavor. And for $3, is definitely not worth it. Oh well, next time I just won't order it.
Since its just now the beginning of Sounders Season, I am sure we will have plenty of chances to visits Slim's again for some more delicious chili. -

pretty cool joint. all in all(they even have a hams bears)
but i came here for food more than drinks. the chili could have been a little fresher it had that dark i have been cooking all day in the pot look. portions were a little small. prices were not to bad. the bartender gal seemed nice. they have a cool outdoor area. which is a big plus.. -

I can't get enough of this place and we will drive over 15 miles each way to cure our craving.
Generally, I am not a fan of wings, but their wing sauce is made in-house and it is amazing (so is the house made blue cheese dip that comes on the side). Maybe people who are not a fan of the wings might be looking for the more traditional Frank's RedHot Buffalo style sauce? The chili is also outstanding. I have tried all of them and the pork verde is easily my favorite. All are delish and the dollop of white cheddar grits on the bottom is the icing on the cake.
The gals behind the bar are great, one of them remembers what beer I like and I don't have to order anymore. Love that!
The only reason that I dock a star? For toting themselves as a blue-collar establishment, the prices definitely do NOT reflect this claim. The beers are served in a mason jar, not a pint, so they are smaller than normal beers (the prices are not smaller). The portions are not huge, but I would rather pay more money for less food of a higher quality.
But I must be clear: I DO NOT mind paying slightly higher prices due to the high quality of the food.

Saw this place on DD&D. Came in shortly before the lunch rush. Very nice, friendly waitresses. I ordered the Texas Red over Mac&Cheese, it was good. Seemed a bit thick though. They have all these topping, which can really add up. .85 for a tablespoon of grated cheese? chopped onions were another.60 or so. All in all I spent $13.00 (with tip) for a rather small bowl of chili and had heartburn the rest of the day. I would go back, but maybe only for take out. Bring the TUMS!!

The Chili is rad. Frito Pie during happy hour. Great live music. Possibly the best burger in Georgetown. These are the reasons to love Slim's. They also have one of the best outdoor spaces for summer nights.
Service is friendly and its a funny melting pot of daytime business types/factory workers/bikers/honkey tonkers. Totally different crowd from the Airport way side of Georgetown. -

I was sooooooooooo excited to try this place. The beef brisket chili was pretty tasty although a little bit greasy. I had it over the jalapeno mac and cheese, and the jalapeno had a nice bite. I wished i could taste the mac and cheese more though. My hubby had the regular chili on top of the cheese grits. Wasn't a fan.
Okay, now for the ambiance. I "get" why it's 21 and over. While the waitresses were nice enough... if they felt like acknowledging you, the fact that their chest was LITERALLY hanging out of their clothes was a bit distracting. They got our order wrong and barely came by to ask how we were doing. However, they were all for hugging and flirting with some of the other men. Meh, whatever. What a bummer. -

I absolutely love this place and will bring my friends here for sure! I would love to have a party here too. It's more of a biker bar type, with a pool table and painted skulls, think of a tattoo parlor. They also have a stage in which they have weekly live bands playing, and a large outdoor area, perfect for a summer party. The only weird thing is the women's bathroom sink. Two faucets - really HOT or COLD. You kinda have to splash the two water streams to get lukewarm and I think I scalded my hand a bit.
On to the important part... the FOOD....
Must try:
-texas red with beef is very flavorful with some spice to it.
-chili verde with pork is full of flavor.. it is the featured chili on the Food Network show... forgot the name of the show but there's a clip of it on the Slim's website.
-jalapeno mac and cheese goes well with both of the chilis above.
-sour cream and shredded cheese is a must, don't know why it tastes so good mixed in with the chili
-slims last chance burger was cooked to perfection.... i want more right NOW!
-creamsicle drink... some vanilla stoli with orange cream soda i think.. came out looking like a float. it was a different kind of cocktail than I am used to but it was so delicious! Made me smile real big! :D
All are to die for. I haven't had food this good in a Looooong time!
The second time I returned I also tried the brisket chili. YUM!

Been anticipating eating here for a few months after seeing it on Diners, Drive-Ins and Dives. Atmosphere was decent, but the chili was not as good as I had hoped.
I had the Texas Red over the white cheddar grits and the Chili Verde over the jalapeno mac n cheese. The Texas Red, while I appreciate adhering to the roots of no-bean traditional Texas chili unfortunately had the consistency of granular, luke warm hamburger.
IMO the verde was a little better, w/ actul decent substance to the meat. But the mac n cheesebwas bland and diluted.
Not terrible, but underwhelming. -

Great place for a $10 lunch -- it's a bar that serves good pub grub (burgers, wings, chilli). Nothing fancy, utensils wrapped in paper napkins, water in a shaker glass, one page menu and all the food is made very well. Eat at the bar for best service. They have local bands there all week, looks like a fun place after dark.
Beef brisket and ground beef chilli is great -- not spicy -- but very tender meats. Add toppings for extra -- I got the sweet peppers. Served over mac and cheese, about $8.00 a bowl. Not too little not too much. Buddies got their cheeseburgers for $9 with fresh cut fries. 1/2lb patty cooked on a griddle. Usual toppings, buddy's say it well seasoned, juicy and tasted great. -

Love the place, hate the outlaw biker crowd. The food is great, all pf the chilis are fantastic. The verde has smokey chucks of pork, the brisket is full of meaty goodness in a deep, rich sauce. You can't go wrong with the Texas red. The buyers are super good too, but I have no idea why. Maybe theres some secret msg tucked inside, but I don't mind cause theyre awesome. The wings are a bit weak. I'm not sure what they put in the sauce but it needs to be reworked.
The dive theme works well, but draws an outlaw biker crowd. I've never had any issues while there, but where there is smoke there is fire. I'm sure it's just a matter of time until there is a real problem at this place. -

I work in the area so after about 10 visits to Slim's, consider the 3-star rating a reasonable working average. Food's pretty good, service & ambiance? Not so much.
(also? Had no idea they were on Diners, Drive-Ins, and Dives, but this is one of the least "dive-y" dives I've been in. It's clean & well-lit.. What - no sawdust?)
How to do it -- pick your chili.
I recommend the Texas Red if you don't want to mess around with fillers - like beans- in your chili. Just once I've had the Texas Red fail to impress - but one time out of 10 isn't so bad when they make it from scratch every day, right? It's not as spicy as I like chili - but there's Cholula on the table for a reason, right?
The chili verde is also awfully tasty - slow-simmered pork is pretty much always a good choice.
After you pick your chili, decide if you want it served over grits (why?!) and (wait for it!) Jalapeno Mac n' Cheese! ALWAYS choose the mac (as if anyone has to actually give you this instruction...)
Now the downside?
Waitstaff isn't the friendliest in town; be prepared to wait if you're not one of the regulars (apparently, regulars can do whatever the hell they want- including sit barefoot at the bar. With their bare feet propped up on the stool next to them. Gross). Even on a 'quick' lunch, be prepared to track down your check and you'll probably have to run up to the counter to get a refill on your water, diet Coke, etc.
Is the food good enough to overcome the crummy service? Not really. But if you're in the neighborhood, the choices for a decent sit-down lunch are limited. You could do worse than Slim's. -

If you are going there because you saw this place on Diners, Drive-Ins and Dives (like we did) then you know what to expect. The food was fantastic! Don't go there expecting some yuppie type, hip atmosphere. If you want outstanding chili and cold beer this place cannot be beat.
Why 4 stars instead of 5? I reserve 5 star ratings for a place that blows me away in all aspects of the dining experience. I would definitely return though. -

I hit this place for lunch today. I wouldn't call it a dive bar, its far too clean and lit for that....but Rustic kinda covers it.
What I had was the mildest chili (turns out) combination of brisket and beans was yummy... I must have missed how to make it spicier, will definately look into that on my next visit....but oh my, very good. Flavourful, nice consistency, and the presentation of serving it over a jalapeno mac and cheese.... definately thumbs up. The beers served in mason jars at the next table looked very inviting/refreshing...but alas...had to go back to work.

I have to say, the beer selection is great (they got what I want), the chili selection (again, they got what I want), and the staff make this place for me.
I think my faves are the Turkey and whit bean chili and the Georgetown brewing's Chopper's Red. Purrrfect combo for me. Happy our frito pie and sloppy joses are tasty for the $3. Happy hour here is my friend. Espsecially in the summer when I can drink my red on the patio out of my FROSTY JAR!

I LOVE their Texas (no bean) red chili and their pork chile verde -- both "with the works" (onions, cheese, tomatoes, sour cream, and a fire roasted chile which you should try even if you're scared (take small bites to start out) because it adds just the right amount of heat to the overall bowl). All chiles are made daily with fresh ingredients.
My husband loves the Kobe (!) beef hot dog with Texas red chili, cheese and onions. The jalepeno mac and cheese is really creamy and has just enough heat. The cornbread with killer honey-butter is also not to be missed.
They have a good beer selection. Haven't been there for pool or music but they have both. Service is no nonsense (and possibly could be considered brash if you're sensitive) -- we have found the service to hospitable and attentive each of the 4 times we've been there.
It's a 21 and over place -- so no kids allowed.
They cater too -- I had them bring in a whole spread for a blues themed party at my office. It was a hit! -

Speaking to you today as a native Texan I can say with certainty that this place is a delightfully cheap alternative to flying back to the motherland to get your fill of meaty (no bean) chili and Shiner Bock served in an ice cold mason jar, which this Texan will attest makes it taste even better. If you too are a Texan, I recommend ordering the chili served over jalapeno mac 'n cheese with the "works" which includes a grilled whole jalapeno that will bite you in the ass. If you are not a Texan, well, try it anyway but keep a glass of milk and some Tums handy because you probably can't handle it.

Any place that makes Valentina V's Dad this happy, deserves 5 stars. This man has eaten in most major capitals around the world (he's an avid traveler like his child), and lives and dines in Caracas, known as one of the top gastronomic cities of South America. So when it comes to my Dad's "Oh, this is incredible!"...it IS good!
This is also a gentlemen who previously dined at Canlis, El Gaucho and Le Gourmand.
He and his son-in-law (a.k.a The Dude) enjoyed the Brisket n' Bean Chili (Pig Iron slow smoked brisket, ground angus beef, fire roasted tomatoes & red beans) to a point where they almost licked their plates (hey, not on my watch though!). I had my usual cuppa of their wonderful Turkey & White Bean Chili (ground turkey, white beans, and serrano chilies simmered in a hearty broth), with a side of warm corn bread and honey butter (delightful!).
Mac n' cheese at Slims is pretty perfect. After living in Atlanta for 5 years and smothering my face with Mac n' cheese on a regular basis, I'm always in the quest for, at least, a good imitation. This one, my lovelies, is the real deal (take that, Beecher's!).
Their music selection ain't my cup of tea but...you know what? There's a place and space for all music lovers. They also function as a music venue and have free pool on Mondays.
Oh man, and if I could bring them bottles to get some of their "Mother's Milk" Cocktail (Horchata & Vodka) to go, they would have a couple of rotating cases with my name on them around. It is glorious libation!
Very funny, my Dad (who is 72) was digging the bartender/waiters gals tattoos. He's not used to see them, so he asked the lady taking care of us to show him her awesome skin art. She showed him, big smile on her face. So, what could be kind of weird, was actually cute!
¡Salud, Slim's! No wonder why your chili has been praised on national level. Thanks for making my Dad a happy camper during his visit to Seattle. -

I heard about the mac and cheese here at Slim's and my only regret after finally making it there a week ago was that I didn't get an entire bowl of JUST the mac and cheese.
Anyway, we stopped in after an afternoon of beers nearby at the Two Beers Brewery. We were definitely hungry. As we looked over the menu, the bartender came over quickly and ordered our drinks. It was clear from the menu that you should definitely get a chili bowl layered on top of their Jalapeno Mac and Cheese. Most of us ordered the Brisket n' Bean which included pig Iron slow smoked brisket, ground Angus beef,
fire roasted tomatoes & red beans. We also got the "works" on top which included necessary toppings to enjoy the chili bowl.

I love Slims with a grain of salt. The chili is pretty good, the fries are pretty epic, the drinks can be pretty weak. The service is fantastic from one of the servers, the other gals can be pretty preoccupied with the fellas or pals at the bar. As a bartender that knows how to tip I usually expect quicker recognition and service than given here but hey, we can't have it all and this is Georgetown, we run on our own schedule.
Overall defiantly check it out and I'll be back just as soon as I'm over my last experience here. I miss that patio! -
