Came here for the first time today for lunch with a friend. We wanted to go since the Food Network came here.
I had the cup of chile verde with a cup of mac & cheese on the side. Friend got the chili cheese fries & a side of the grits. Everything was wonderful! Think I'll have the chili cheese fries next time. (yes there will most definitely be a next time)
Good selection of beers on tap & in bottles & cans. One chef & one waitress/bartender/cashier. The waitress was amazing! She single handedly served a full house with a smile.
I like Slims better than Mikes Famous Chili Parlor in Ballard.
I heard about the mac and cheese here at Slim's and my only regret after finally making it there a week ago was that I didn't get an entire bowl of JUST the mac and cheese.
Anyway, we stopped in after an afternoon of beers nearby at the Two Beers Brewery. We were definitely hungry. As we looked over the menu, the bartender came over quickly and ordered our drinks. It was clear from the menu that you should definitely get a chili bowl layered on top of their Jalapeno Mac and Cheese. Most of us ordered the Brisket n' Bean which included pig Iron slow smoked brisket, ground Angus beef,
fire roasted tomatoes & red beans. We also got the "works" on top which included necessary toppings to enjoy the chili bowl.
It was amazing. Period.
Through the grapevine because of a tv show or magazine article, we heard that Slim's Last Chance had great green chili's.
So one Saturday evening we decided to cruise down to Georgetown for a couple brews and green chilis. The bar/chili shack/watering hole is the cleanest bar I have probably even been in. I was absolutely surprised by the cleanliness of this establishment. 5 stars for cleanliness!
The Food: a couple different types of chili. Green, Red, White bean turkey, and maybe one more. We tired both the green and red. My green chili was cold, almost as if they warmed it in a microwave. I ordered it loaded which includes cheese, sour cream, jalapeno, onions, tomatoes, and corn chips. That was my fault, it is way too much and ruins the integrity of the green chili. I also ordered the mac and cheese on the bottom. Honestly I couldn't even tell there was mac and cheese there. Maybe two tablespoons worth on the bottom of the bowl. The red chili was okay, but nothing I would crave or want to come back for it alone. They also have fresh baked corn bread that was tasty but a little pricey at $3 for a mini loaf.
We went in with very high expectations because of the media, but left let down. You cant always trust what you hear or read, and that's why we Yelp in masses. Majority rules (for the most part), yet today Yelp and the media failed us.
There are great bars, great BBQ, great southern food buts slims is a combo of all of them. A surly wiskey tequila bar with the atmosphere to match. The food is fresh and slow cooked from scratch.
Girls let me tell ya leave your heels at home if you plan on going in the beer garden you will just end up getting stuck or becoming entertainment for everyone else.
My advice is chili verde over mac with toppings and sweet tea... Don't argue just trust me. :)
A Texas Road house Vibe that's a more Polished than my movie references bars of Itty ister and Porkys....but Slim's Last chace has a friendly staff and Really Good Chili!
I expected a guy outside Yelling about all the vairty's of Chili they have.
The one I tried was the Chili Verde ontop of Mac n Cheese..
It was really really...Really good...Spicy but the cheese kinda cut the spice but it's full of flavor and the Tillamook covered mac n cheese really gave it a nice flavor and texture.
After Eatting here I had the most impressive Gnarilest Burbs!
I knew Where I wanted to eat for lunch the next day...But uh.I found out ...probably should come here if you got the lower intestines of steel or have no planes in the next morning, But It's totally Worth it!
But I really do enjoy the chili here and would differently go back..
Guy who's done commercials for TGI Fridays came here for his show and I do think the Staff is friendly, the place is clean and even polished but don't expect it being TGI Fridays...Slims is authentic chili Bar in Georgetown. There is a more family friendly BBQ joint next store that serves Slim's chili as well.
Dropped by for dinner on one of those rare September evenings when the day's high was 77. It was perfect weather for grubbin' on some chili al fresco. Walking around Georgetown you'd never know that this little oasis was just behind the fence. It's part chili shack, outlaw bar, and live music venue.
Between the four of us we order: Chili Cheese Burger with Brisket n' Bean, Chili Cheese Kobe Dog with Texas Red, Wings, Crawfish Po-Boy, White Cheddar Grits, Jalapeno Mac n' Cheese, and some large fries.
My picks out of our order would be the Kobe Dog and the Mac n' Cheese. Everything else was awesome, but those two were my favorites. The Texas Red (their standard chili) is awesome. I really want to go back and order the chili poured over some Mac n' Cheese. Next time fo sho.
I really liked the burger as well. It was pretty big portion, but since we split it 4 ways I'm not sure how big it really was.
I definitely have to come back for a visit one night when there's a live band playing on the truck. Slim's seems like a fun place to hang out.

Went here with my dad today for lunch. Definitely a fun place. Man, they sure do work hard to sell you the ol' outlaw American biker/horse thief watering hole vibe. It's kinda cute, actually. When we got there, while my dad was putting his sunglasses away, I put my Teva up on the back bumper of my fuel-efficient mini-SUV, bonged a spittoon with a hunk of chaw, and said "never for the law to ride, ya hear?" No one was there, but it helped me get in character for the joint.
Seriously, they have chairs made out of whiskey barrels, they have racks of old pistols up above the bar (presumably with firing pins taken out), the toilet stalls are walled with corrugated steel...you get the idea. Mexican folk art pounded tin signs, modern Nashville and some good music bumping on the PA. OK, I already said you get the idea. Garage door rolls up onto the porch. It rolled down when the deluge started this afternoon, and stayed down.
They definitely honor the neighborhood; I think Georgetown Brewing had half their taps (about 4 out of about 8 IIRC). That's A-OK with me both for the beer's sake and for the neighborhood's sake.
Service was awesome. My dad was kinda flustered by all the tattoos on our waitresses, but, then, that's my dad. They were both really good--knew how to work the floor, how to check in, how to stay unobtrusive but keep an eye on us. OTOH, it wasn't really busy, but they were both super nice and obviously knew what they were doing.
The main thing, other than live music and the whole, uh, outlaw attitude, is the chili. It's really good. Good seasoning, not too hot, several varieties, and a whole matrix of toppings for you to pick among. Simple menu but good food. It's worth youtubing up the Food Network thing where they make the chili on tv--the guy fills a whole tilt skillet with ingredients and puts together a batch that just looks incredible. Comes out a little oily but not troublingly so at all. My dad had the Brisket & Bean, which was great, and I the Texas Red (on a dog), which was equally good.
Had the jalapeno mac & cheese aside. "Jalapeno" was too strong a word for this stuff; there was maybe one tiny little diced chunk in my little cup. The M&C itself was ok; definitely house-made but not enough to get me jumping up and down.
Overall, very fun in a theme restaurant kind of way, except it's a theme restaurant that doesn't get on your nerves.
Slim's is on pretty solid ground. It's got a great Texas roadhouse feel. The tiny, open kitchen puts out some decent grub.
I had a difficult time not choosing the crawfish po' boy and had to keep reminding myself that it was my 1st time there and I had to sample the chili, it is a chili shack, after all.
I ordered the chili verde and a side of corn bread. The flavor of the sauce was great, a little under-salted, but great. The tomatillo and chilies were well balanced, had a nice amount of heat and a hint of fresh cilantro. My only criticisms were take there should have been more pork and I would have preferred that they cooked fresh pork in the chili and let it simmer with the sauce rather than adding pulled pork from the Pig Iron and that I thought that it was a little expensive at $7.95 a bowl, especially when having to pay an additional $3 for cornbread.
But I will be back to try their other Chili and that Crawfish po' boy!
I didn't know David "Slim" McCarroll (former singer of local band the Vaccines + Los Hornets), but he would have been proud of this tavern with his namesake.
Slims greets you with a comfortable Road House feel; wooden floors, an expansive bar, pool table, kitschy overstuffed lounge chairs, punk rock memorabilia and custom made fluorescent lights, a spot for live music, and a huge fenced outdoor space.
Slims menu list is minimal, but each item delicious! My last meal there was the craw fish tail po' boy stuffed full of these tasty morsels and slathered with next door Pig Iron's sauce. Damn that's good! Add to that a side of jalapeno mac + cheese, a glass of local Mannys beer- and you have one full, happy belly!
We also watched the Dive and Diner featuring this Chili shack. I was really excited cause I love chili. Note to all parents: No kids are allow in the actually bar-- but you can go the barbecue restaurant next door and order from Slim's menu. I ordered the two chili (red's and chili verdi) and the mac-n-cheese. I was disappointed-- the red chili was overwhelming with spice that you can't really taste anything. The meat was dry--and had no flavor--except for the spice--no flavor. The chili verdi was good-- pork was tasty and the mac-n-cheese was good.
Not sure if I would recommend the Chili Shack. In fact, three people in our party who ate the red chili got major stomach issues that day. We might try the barbecue menu next time we are in town.
3 stars is not bad in my mind. They had a tantalizing drink menu, it made me consider changing my sobriety date.
But alas' I didn't so I just plowed through a plate of wings and a side of the mac and cheese.
It was only about 4:30 on a Tuesday afternoon so the service was great. I think this would be a lot more fun a little later in the evening with a bunch of friends.
I would consider this more of a hanging out place than, some where to savor flavors.
Great Texas Red! Rich and complex in flavor.
I like the Turkey #2, Chile Verde #3 (wish it were spicier), and Brisket and Bean #4.
Wish I tried the Texas Red as a Chili Dog.

Any place that makes Valentina V's Dad this happy, deserves 5 stars. This man has eaten in most major capitals around the world (he's an avid traveler like his child), and lives and dines in Caracas, known as one of the top gastronomic cities of South America. So when it comes to my Dad's "Oh, this is incredible!"...it IS good!
This is also a gentlemen who previously dined at Canlis, El Gaucho and Le Gourmand.
He and his son-in-law (a.k.a The Dude) enjoyed the Brisket n' Bean Chili (Pig Iron slow smoked brisket, ground angus beef, fire roasted tomatoes & red beans) to a point where they almost licked their plates (hey, not on my watch though!). I had my usual cuppa of their wonderful Turkey & White Bean Chili (ground turkey, white beans, and serrano chilies simmered in a hearty broth), with a side of warm corn bread and honey butter (delightful!).
Mac n' cheese at Slims is pretty perfect. After living in Atlanta for 5 years and smothering my face with Mac n' cheese on a regular basis, I'm always in the quest for, at least, a good imitation. This one, my lovelies, is the real deal (take that, Beecher's!).
Their music selection ain't my cup of tea but...you know what? There's a place and space for all music lovers. They also function as a music venue and have free pool on Mondays.
Oh man, and if I could bring them bottles to get some of their "Mother's Milk" Cocktail (Horchata & Vodka) to go, they would have a couple of rotating cases with my name on them around. It is glorious libation!
Very funny, my Dad (who is 72) was digging the bartender/waiters gals tattoos. He's not used to see them, so he asked the lady taking care of us to show him her awesome skin art. She showed him, big smile on her face. So, what could be kind of weird, was actually cute!

A nationally ranked chili stop, Slim's is not your typical dive bar. Well, actually it is: lots of bikers, beers, and tattoos. Not to mention the somewhat strange looks that a group of Asians receive upon entering the premise...But, no worries about race, culture, or height differences because everyone loves chili. And this place knows how to make some serious chili. Thick, savory, and will smear everything from your face to your fly; be ready to work to finish a bowl of chili because it's going to run you through a gauntlet of flavors and spices that you just don't get many places around town (any town). Drenched over a burger or paired with a basket of cheese and fries, this place is about one freshly baked cornbread away from triggering a culinary orgasm. Oh wait, they do have cornbread...

four different chili's to choose from. i tried three and liked them but loved the brisket chili. i noticed the kobe dog on the menu so i'll have to come back for that and more chili. the people were nice and unassuming the music was a tolerable mix of country, rock and blues. i can't wait for the beer garden to open.
Should be called Slim's Last Chance for all nite Rip-A$$!

The Belch-A-thon started before we got to the car and we proceeded
to gas each other for the rest of the night. We split a Mac and cheese
and I had a chili burger and my sweet heart had the chili dog. The atmosphere was kinda cool and the staff was nice
I thought $27 plus tip = $31 was kinda high for a hot dog hamburger and a small bowl of mac and cheese. Tip of the Day....Bring a gallon jug of Beano.
This is a great place! Good beer, excellent food and a laid back atmosphere. If youre looking for awesome chili, dont bother going anywhere else!
After being let down by the "other" Seattle Triple D Chili house, we were floored by Slims! We stopped in on our way out of town, but we should have been here every day! We were here for lunch and it was pretty empty, but I can see this place going crazy at night.
I'll be back next time Im in the area, you can bet on it!
My dear good Texas friends, being the chili experts they are, invited me to check this place out. They wanted to find out if Seattle chili could compare to Texas chili plus a Texas beer they were fans of was served there.
On a Tuesday night we met at Slim's. My dad soon joined us. Upon hearing there was a chili shack he absolutely had to go. There were about six other people there besides us. The interior reminds me of a truck stop in the middle of nowhere on Route 66. You've got a bar, a seating area, a small stage (they have concerts on the weekend), a pool table, and the tiny corner kitchen in the back. Despite the weather being so so, the roll up doors were opened which created a cool airy space. There was a kitchy factor but who can't appreciate the pistols and velvet paintings or the huge bear used for soda advertisments back in the day?
The waitress greeted us with a smile and took our drink order. While waiting we took a look at the menu. Beef or chicken chili. Chili on hotdogs or on burgers. Nothing for the non-meat eater besides a wedge salad which came with bacon bits. Scrolling further down I spotted sides which included cheese grits and jalapeno mac and cheese.
The waitress returned with our drinks and I asked if there was any vegetarian chili. No such luck. I ordered myself a side of corn bread and cheese grits. My friend ordered the chili and the other got a chili burger and both ordered the chili cheese fries for an appetizer. My dad got himself and my mom the Texas Red chili and then ordered a whopping six extra corn breads. What can I say? This is a southern man who likes his corn bread.
My dad bid us adieu and our food arrived within a reasonable amount of time. Steaming plates of chili were set in front of my friends while I was reduced to a tiny cup of grits and corn bread. The corn bread was a tiny loaf which I found so adorable. It came with honey butter. I dug into the grits and was a but underwhelmed. They were cheesy alright but just didn't hit the spot. The corn bread loaf was good and with the addition of the butter made it ever more tasty. Its not as good as the Jiffy corn bread my mom made but it'll do. My friend's said their food was not bad.
After finishing our meals we continued to drink and chat. I was not even close to feeling satisfied so I ordered a side of fries and asked if it was possible to get cheese on them. No problem at all. My fries were thick cut with the skins still attached, crunchy and even black on some parts. Yummy.
My friends and I enjoyed our time at Slim's. The food was satisfactory but not a great option for vegetarians that want to leave full, unless you want to order a dozen of the sides.
Looking for a romantic restaurant with a great choice of wine? This is the not the place for you, it is the complete opposite.
I characterize Slim's as neighborhood bar with above average food. Slim's has the atmosphere of drinking and eating in your own backyard. There is outside seating in the back that makes you feel like you were in a backyard (grass and wooden fence included).
I was in Seattle headed on a two and a half hour drive east when I saw Slim's. It was connected to a barbecue restaurant but I wanted to have a couple drinks and dinner before driving, don't try this at home(I'm an expert).
My coworker and I entered and noticed both bartenders were friendly one had more tattoos than the other. We asked the bartender what was good to eat and she said everything, we told her she was a good employee. We proceeded to ask her what she preferred. She told us the Cheddar grits, the original chili, and the fried crawfish po'boy.
I ordered the Cheddar grits, the fried crawfish po'boy with mama's red peppers. My coworker ordered the frito lay pie, the Sloppy Jose's, the original chili, and the cheddar grits.
The food arrived fifteen minutes later. We tried everything and were quite impressed. The chili was very hearty but just missing a little kick. The cheddar grits were the best item on the menu. The grits were very creamy and they were well seasoned. The frito lay pie (fritos with chili on top) was adequate but missing cheese. The Sloppy Jose's were sliders with chili instead of a mini burger, it turned out good but messy.
The fried crawfish po'boy was very good. I am not a crawfish lover but the sauce on the sandwich accentuated the crawfish. Next time I would ask for the sauce on the side because at the end of my po'boy there was a lot of sauce left and it was too much. The mama's peppers were the big disappointment. They were not spicy as I was informed, they were roasted red peppers. They were a little sour but It did not have the kick (none at all) I was looking for.
The service was exceptional. Both bartenders took care of us very well. It might of been the time, we were there at 7pm, and it had about a dozen people in Slim's.
Price wise for two people with one beer each and one shot of whiskey and the above food ordered it came out to $43. Not bad for all that food.
When I visit Seattle again this will be one of the first places I go to.
A friend suggested I try Slims Last Chance during my stay in Seattle. Knowing this place had been featured on Food Network's Diners, Dine Ins and Dives I decided to find out how much smoke Guy Fieri actually blows. I was not surprised that he is spot on.
I walked into the place located in an industrial/commercial area of
town thinking I should trade my t-shirt and jeans for leather jacket
and boots. The ruggedness of the place appears to be an appealing
venue for a biker riot but invites those some bikers to settle their
differences over a cold draft as the 6 foot Hamm's Beer Bear statue
gazes upon.
My chili selection was the Brisket'n'Bean Chili. Slim's unique selection of side items to be mixed with the chili made the experience much more appetizing. For those of you who are for the ethical treatment of your arteries, move on to another review. Your side item choices are grits or mac and cheese. I opted for the mac and cheese and threw on mama's lil peppers not before asking our patient server if a man of my stature could dominate the potential fire of the incoming (and eventually outgoing) peppers. Turns out they were quite mild.
The served chili was a delectable sight and irresistible taste. The explosion of flavor in my mouth was an experience never before sensed. My taste buds were partying to the flavors of perfectly tender and generous quantities of pork, creaminess of mac and cheese, tomatoes, and beans. The peppers gave the dish the perfect kick I longed for.
All in all and exhilarating adventure. The spectacular beer selection further added to the experience.
Cold brews and warm chili never hurt anyone. The meal at slims revives the soul.
I was pleasantly surprised the "morning after" experience was not a painful one. I wish I could say the same for my friend.
Heard about this place a few months ago and since we were in Georgetown decided to give it a try.
Chili cheese Kobe dog, Chili Verde with sweet onions, Last Chance Burger with Pepper Jack & Jalapeno Mac & Cheese. Everyone gave today's lunch a thumbs up. Haven't had a good bowl of chili in Seattle for quite some time...this really hit the spot.
The staff was friendly, drinks were good and food was quick. Definately be back for a bite to eat & to try the cornbread when we're in the neighborhood!
I'm a chili novice, but I'm always up for an adventure, and that's what we had at Slim's. This is a rustic, low key roadhouse bar with a come-as-you-are vibe. We came for the chili and will definitely return soon. Service was prompt and no-frills once a member of our group located a server at the bar.
There are 4 chili varieties, as well as the usual options for toppings (cheese, jalapenos, etc.). You can also get your chili over mac and cheese or jalapeno grits. Being a chili noob, I went with a cup of turkey & white bean chili, no toppings. The flavors blended together well, without any one ingredient overpowering the others. I do wish it had been a little spicier -- this was probably about a 2 out of 5, and could be pushed up to 3 or 4 to give it some real zing. There are some hot sauces on the tables, but as one of our companions pointed out, the problem with those sauces is the vinegar. Perhaps Slim could set out some pepper flakes or cayenne on the table?
I'm glad I ordered a cup, as it's actually the equivalent of a small bowl. Go for the bowl if you're really hungry or in need of a meat fix. And no chili is complete without a side of corn bread. Slim's corn bread is moist, even without the tasty, delicate honey butter. But do indulge - it's worth it!
Slim's has live music later in the evenings, and there is an outdoor patio that looks very promising for those long summer nights. One chili down, three more to go...
Just had my second trip in to Slim's last night... and I'll make this short and sweet...

Well Slim, you had your last and only chance. I did enjoy my dining experience if you can call it that and the food was OK. I love the whole idea of the place but the food just wasnt that great. I would rather have awesome mac n cheese and amazing chili rather then having 2 mediocre dishes put together. The drinks are TERRIBLE!!! Stick with beer. The service sucks too.
I would definitely call myself a chili aficionado and so I was slightly skeptical about this place at first. However, I was seriously impressed with the chili. I ordered a bowl of the Texas Red chili with cheese and it was fantastic. I wish that I had ordered it over the Jalapeno mac and cheese since the mac and cheese was so tasty by itself.
I would also recommend the sliced jalapenos on top of the chili. I didnt have it but a few people I went with did.
Washing the chili down with a few pitchers of shiner bock on a sunny friday? How can you complain about that! Highly recommended.
PS, they have an interesting outdoor area that would probably be great on a seattle summer day...
I ate here three weeks ago, and I still can't stop thinking about it. The cheese grits, the turkey chili, the cornbread... I'm practically drooling here just at the memory. This stuff is "last meal" worthy.
I LOVE Chili, Barbeque, and all those spicy exciting sloppy foods. I love to cook a big batch of home made chili (even grind my own meat) on a cold, rainy day. When I saw this place on Diners, Dives and Drive-ins I knew I had to go.
Once I got there, and realized it was next to a good Barbeque place I had my last birthday at, I was even happier to be there. It looks like a chili shack and bar that would fit right in anywhere in Austin. I thought I was in for a great meal.
I was wrong.
I had a cup of the green chili and a cup of the house red. The green chili was OK. I haven't had green chili before, and it was OK. Not much meat, but the spicing was interesting. The house red, I'm sorry to say, was a disaster. I kept tasting it, thinking the next bite would be better, but it was worse than any canned chili I've ever had. Chili heads have religious wars over whether to use tomatoes or not, and how to spice it. Some of them swear it's just plain wrong to use onion salt in place of the real thing. I kept trying to figure out the spicing and never could. It was a little hot, just a little greasy, but no overtones of chili powder or cumin or anything other than, I swear to Gebharts, cigarette butts. Yup, cigarette buts. That's what it tasted like. So let's assume the kitchen was having a bad day.
The bar was great, the staff was really nice, and if I were looking for a place to sit (outside even) and have a couple of beers with friends and cheer the band, this would be a winner. As a chili shack, maybe not. I'll go back and try the burgers though.
For chili, I think World Class Chili (Texas Style) at the Pike Place Market is lots better.

I've been here three times and it's been good times each and every time. The decor is a little odd (I term it "clean" dive bar kitch) but the service is always pleasant and the food is fantastic.
Four flavors of chilis, a serious list of fixiings, and traditional standbys like burgers and hot wings. All delicious and well prepared. I'm not much of a drinker but the drink menu has some pretty tasty sounding treats as well (horchata and vodka? That certainly SEEMS like a good idea..)
YES! I think thats all that needs to be said about such an awsome place.
Slim's seems like the kind of place that toby keith song "I love this bar" is refering to( and yes i did just refrence a toby keith song). they have a kind of down home on the farm feeling and best of all you can drink from a mason jar! prices were good, $1.50 for a pbr. on the big screen there was old burlesque, and four awsome regulars who where as kind as pie. they have a big back yard, with grass tables and an old farm truck that has been converted into a stage. i cant wait for any excuse to go back!

We like chili and this place was listed in Bon Appetit magazine as one of the top 10 chili places across the country. Having said that, we had to check it out!!
They have four types of chili. We were able to sample the chili before deciding what to get. I ended up with the red Texas chili with my choices of fixing on top (cheese, chives, and sour cream!) YUM! I am glad I ordered a cup instead of a bowl. The cup was enough for me!! I also tried the jalapeno macaroni and cheese! Wow! It is good!!
I would love to come back to this place for a music event and in warmer weather. They have an outdoor seating area which was cool! We will be back!!
The chili is very tasty. I recommend having yours over the jalapeno mac n cheese. It definitely adds to the experience. I just wish you got more for the money or it was slightly less expensive. $8.95 for what is essentially a heartier bowl of soup leaves a lot to be desired.
The girls that work here are all nice and sweet, I love the "feel" of this place. Very road house-y. I've only eaten here for lunch, but I imagine that on Friday nights it must be a fun spot to enjoy a cold one as well. Serving beers in mason jars is a nice rustic touch. It doesn't seem like you're in Seatlle when you're inside, it reminds me of Texas or Oklahoma. That isn't a bad thing, especially for a place like Slim's.
I've been going to this place since the day it opened, literally. It's since become my new favorite close to work bar. Like its sister restaurant next door (Pig Iron BBQ), Last Chance has the signature Texas rockabilly roadhouse feel to it and the jukebox to match. You'll find everything from The Cramps to Bad Religion to Merle Haggard. Live shows happen a few nights a week, as well as a weekly appearance by Georgetown local DJ Hubba Hubba.
Slim's has a pretty standard selection of beers on tap, along with specialties like Shiner. The mixed drink menu is rather unique, including drinks made with horchata and sweet tea. Drinks are stiff and shots come with a heavy pour. The chili and selection of toppings is money. You can even order your chili over a bed of mac & cheese or grits. Don't forget the cornbread with honey butter on the side. The Kobe beef chili dog is another winner.
Service is generally good. They had a shaky start, but there have been some recent staff changes and the current lineup is solid.
Good, not great. On the plus side, the chili was a 4/5, the beer selection was a 4/5 and the service was a 4/5.
The details: Chili was good, not great. For those complaining about it not being hot enough, cut up the damn jalapeno that comes with it, that's what it's there for.

Got dragged here with someone who's a big fan of KEXP's Shake the Shack, which broadcasts live from here about once a month. It's free and not a bad thing to do on a Friday night.
Beer's good and served in glass jars, which is a fun touch, I guess. And the food makes me want to go back -- not something that's common for a bar. We had the traditional meat chili and the green chili, and both were excellent. I'm not a big grits fan, but I loved the mac 'n cheese. Chili starts at $5, sides are around $3, so you can get quite a bit for your money. I also had my eye on the crawfish poboy... maybe next time.
Honestly, I don't fit in here, and that weird feeling probably contributes to the 1 star off. There were plenty of girls in flashy rockabilly dresses, guys with Rainier belt buckles and wallet chains. I'm not white, and I don't have multiple tattoos. But nevertheless, it was a fun experience watching other people having a blast listening to music, playing pool, and dancing the night away.
This place is so close to my home but I never ventured here before (though I have been to Pig Iron BBQ next door a few times). The decor/style is wannabe texas roadhouse, with Shiner on tap no less. I had a bowl of Chili Verde which wasn't too bad at all, wifey had a red meat/bean chili which was also decent. The PBR was cheap and cold, but I may have a hard time going back as the service was probably the WORST I've experienced in Seattle. Ugh. Wifey and I walked in, looked at the menu and asked the girl behind the bar if we should order at the bar or would she come outside to the patio to get our orders. We ordered a few PBRs through her at the bar and she started a tab, saying she would be outside in a few to take our order. She came outside to service every other table but never stopped by ours. After 20 minutes and being in disbelief, I went up to the bar to order food and she treated me like I had just walked in, even though I just had a conversation with her! As soon as the food arrived (quick), we were out of beer so we ordered 2 more PBRs. She never came back. I went back in to see about those cold beers to go with the hot chili. She asked me if I had a tab going and where I was sitting?!?!? What? There were MAYBE 10 people there total and she couldn't remember me, my order or that she already asked me twice if I had a tab going? She was the worst server I've ever ever had, not to mention she has a very light pour on the bourbon (compared to every other place in Georgetown). The owner of the place seemed nice, and the place is pretty cool, food is OK, beer when you get it at the bar is cold and cheap (PBR), but nothing will ruin a place like bad service. Sorry Slim's but there's little chance I'll be back.
Slims is a great place to go for lunch or go to a show. Good food,Great staff and the turkey white bean chili is deee-lish!
The inside was a little smaller than it seemed when I watched it on Triple D but the food was the real deal. The Chili Verde was delicious and the mac I got it one was killer. We got there a little later and a band was setting up and started to play by the time we left. It was a fun atmosphere and I would have enjoyed staying longer.
Went in for dinner here a few months back due to the fact that they got a writeup in Bon Appetit magazine. I really did enjoy the atmosphere, and it's right in my neighborhood, well technically I think it's in SODO and not G-Town, but let's not be picky. It was not very busy that evening, 1 or 2 other tables had diners when we were there. They had a pretty decent beer selection (would not have this at a Chili Shack down south, so that was a real plus). They had several interesting chilis on the menu, what truly disappointed me was the prices, this is chili after all, not chateaubriand. True it was excellent chili, but $8 for a small bowl of chili in this part of town seems really steep. Service was also pretty slow considering how empty the place was at the time, I never did get my second round of beer, it was on my bill, however, so I had to have it taken off. I might come back here for live rock-a-billy and beers some night, but I'll pass on the big-bucks chili. If I want chili I'll just go to Matt's and get it piled on top of a good hot dog for half the price.
Well I've seen all the yelpers going ape sh*t for this place, so I stopped by when heading home from Tacoma this Saturday. It was a ghost town around 4:45 on a Saturday. Seemed weird, but let's not forget this is a biker bar/night club/ chili shack. I downed a few PBR's and read a stranger while there. No TV's. Thats right, no TV's. I guess this isn't a sports bar and I don't know that many bikers who watch CNN to keep up on current events. PBR's in a mason jar...I'm in redneck wannabe heaven! AWSOME! I had a cup of red over mac and cheese. with cheese onions and jalapeno. Pretty good, although sparks didn't shoot out of my ass or anything. Seriously good but not over the top. I will say I have an "iron gut", but after that grub it sounded like a marching band was in my belly. I'll get back to you with the details later! Really check this place out if in the neighborhood, but don't go outta your way to go there.
I predict this will be Seattle's answer to SF's infamous Zietgiest Bar.
Cool new joint for bikers, rockabilly types, their friends and people that just appreciate motorcycles.
Awesome decor. Modern Chili shack with a mix of old and new.. One side has the ol' garage door that remains open on the summer days.. I love it! Outdoor patio is under construction.
Chile and Burgers if ya want em.. and a Full bar. I must not forget Jalapeno mac and cheese- Oh yeah!
Staff has been great to us so far.
Bring out your biker friends for a nite on the town at Slim's! yea-haw!
