    More expensive than your local grocery store but you get old school service and the quality is exponentially better. I got the ground chuck and the coho salmon. Those were the best meals I've made in a while.

    The only reason to steer clear of this place is you'll feel disappointed in your local grocery store, once you've shopped at Schaub's.

    Okay, so they got rid of the rude, scrawny, blonde idiot. And, now I get served by all the lovely ladies in the sandwich/etc. section. They are always extremely nice and remember what I like to order. Even when we are outside our respective stores, we say hi & how are you.

    Sometimes, all it takes is throwing out the bad apples.

    "If you want to cook great meat, then buy great meat." said my wife's cousin, who is as efficient in the kitchen as he is with his words.  And indeed it's true.  Another cousin once told me, "You can't polish a turd.", and this applies to beef, pork, poultry and fish...no amount of seasoning can turn a piece of shoe leather into a Ruth Chris entree.

    If it's great meat you want, then it's great meat you'll get at Schaub's.  Everyone will rave about the Fred steak, and I have served that to my lucky dinner guests several times, but you will also find that almost everything behind their counter is exceptional.  Whole Foods doesn't compare, and Safeway is a joke.  However, like all quality items, you have to pay for it.

    In addition, the staff behind the counter know their business.  Need a good rub?  What flavor are you looking for, try one of these.  Don't use water, just a bit of olive oil and marinate it.  How do I cook one of these monster Fred roasts?  Directions on the package, but they'll tell you how to cook to order.  That Sigona's is next door makes it that much more convenient, I always pick up the meat at Schaub's, then mosey next door to get the vegetables and cheese in one trip.

    Oh, I could wax poetic for hours, but trust me, Schaub's is the butcher that doctors aspire to be.

    Fred's sirlion is to DIE for.  It may look like you dragged that beef through the dirt, but it is probably the best sirlion around.  Place is pricey, but what do you expect at Stanford?  $14.99 a pound for the Fred's...or $19.99 cooked.  Hidden gem...the Fred's Sirlion sandwich...hot on sourdough roll with everything...the best sandwich around.  Worth $8?  Maybe not...but at the same time, it kind of is.  Great with swiss...but not liking the $0.50 extra for it.  Fresh fish...pre-marinaded chicken, sausage, and a full on variety of an old school butcher.  Great place.

    We have been looking for a small-town butcher like we are used to back in the midwest.  This isn't it.  While they have a big selection, we were unimpressed with the service.  Yes, we were handed the quantity and type of meat we wanted, but there was no discussion of how many people it was serving or if it was the right choice.  There wasn't even a follow up of "Is there anything else", and the butcher quickly turned his attention elsewhere, so we didn't end up getting everything we wanted.  The prices were the same as Draeger's, which we find to be fairly expensive.

    Bought a market steak at Schaub's last night  and I have to say for about 1/3 less, I get better steaks at my local Lunardi's.

    The meat was tough - even cooked medium rare. Won't be buying steaks there again.

    The sausages are great - but here again for 1/3 the cost and equivalent quality what's the point of stopping at Schaub's?

    Save your money and if you have a local Lunardi's shop there.

    FRED'S STEAK.

    I was running some errands at Stanford Mall when it dawned on me... I was to dine with a lovely gentleman for dinner in a few hours and rather than go out, we could dine IN for some FRED'S STEAK.  Schaub's was just around the corner to my last stop (Williams-Sonoma), and I could pop in and buy (for the first time) some delicious easy-to-cook steak that everyone on Yelp raves about!  I felt like a GENIUS.

    At $14.99/lb, this marinated beast is a steal.  You should definitely go for the ~2 lb cut of sirloin (cost me ~$33).  Not a big steak eater (but definitely get meat cravings) so I wasn't sure how many this 2.25lb piece would feed.  Asked the butcher and he said it could feed 2 people comfortably with a little leftover.  LIES.  The gentleman and I shared about half and were super full... but leftovers make delicious steak sandwiches the next day.  The 2 lb-er is definitely enough to feed 4 people for dinner with some sides.  (I accompanied my steak with caramelized onions with green beans and simple salad of greens with heirloom tomatoes.)  $33 delicious steak for 4 people?  I feel like that's robbery!  But don't raise the prices, please!

    After I puchased the beast, I called up my gentleman and asked him how he felt about having steak (not just any steak, but FRED'S famous steak) for dinner in.  "Hell yes" was the reply.  Hell yes.

    The meat is flavorful, but not in the way I would have imagined.  I travel to Japan quite a lot and meat is always super flavorful in Japan.  The fish, the pork, the beef, the chicken... there are natural meat flavors presented and prepared to accentuate each specific animal's natural taste.  I expected this slab to be super beefy... but instead it was actually a FLAVOR in addition to the natural beefyness.  I will note that I did cook it for 45 minutes at 375 like the instructions said, but I would actually recommend cooking for less (35-40 mins?).  The meat came out a bit too medium/medium-well at the ends and I would've preferred a pinker meat.  The center cut of it was delicious since it  was thicker, but the shorter and thinner ends were a bit salty (understandably) comparatively due to the nature of the marinate.  All in all, a delicious and simple success nevertheless.

    It truly is delicious and the flavor is something to be tried.  The dark outside is definitely beastly and intimidating, but the crust that comes about and succulent moist savory flavor that the meat retains is something that is indescribable.  I've never had a marinated steak quite like this and I doubt you will either.

    A couple hours after posting on my Facebook that I was eating Fred's steak, I get an email from a coworker with the subject "Me too!" with a photo of a full slab of Fred's on his grill.  FUN.  I guess we were both having the same Saturday meat craving.

    I don't eat meat; however, my son, who lives at Stanford,  does and he is the person who turned us onto the famous Fred's steak.  We live in Santa Barbara and I have clients here who have tried the steak and clamor for more.  Apparently the steak has a delicious crust and maintains moisture and flavor.  Schaub's also has Carol's potato salad which is fresh and tasty.

    I love small specialty markets, and Schaub's is the place to get FRED'S STEAK.  

    The steak may not be that pretty on the outside, but once grilled and crusted over, it is so flavorful yet tender, perfectly seasoned, sealing in all the juices.  That said, I have to give credit to my friend who grilled it, as how you cook it is a huge factor.  

    It's so reasonably priced for how good it is, and it's definitely cheaper than eating some random steak at a restaurant.  You must try Fred's Steak!

    What looks like a slab of crusty, tarred dinosaur meat straight from the Jurassic era, but tastes like a hunk of carnivore heaven when you take it off the grill?  That would be Fred Steak, which you can buy at Schaub's Meat Fish & Poultry in the Stanford Mall.

    I was introduced to Fred Steak entirely by chance.  A couple of years after the .com bubble burst, I found myself at a backyard barbecue being hosted by a loud-mouthed, self-satisfied, obnoxious guy in an impossibly loud Hawaiian shirt.  Every 45 seconds or so, our host would announce spontaneously to whoever would listen that he was the CFO at *** (one of the first-tier Venture Capital firms here in the Valley).  If a run-of-the-mill venture capitalist is The Devil (and they certainly were to me back then), then that would make this guy The Devil's Demon.

    TDD was standing in front a barbecue big enough to roast a failed Entrepreneur whole, and it actually looked like that's what he was doing!  He was sawing away at several large slabs of meat that looked like they were covered in tar, carving them into smaller pieces.  I asked TDD what he was doing.  He grimaced painfully (as close to a smile as he could come) and said he was carving up Fred so the meat would taste better after it was grilled.  

    I was stunned - was he really talking about grilling and eating a guy named Fred?  How had he managed to remove all the feathers from the corpse after it had been tarred and feathered?  I kept the last question to myself, and asked if Fred had had a good life.  TDD told me he didn't really care (which pretty much summed up the guy's personality), and went on to explain that Fred was the father of the man who opened Schaub's market, and that this meat he was sawing away at wasn't the remains of a failed Entrepreneur - it was Fred Steak.  I allowed myself to be convinced that eating this stuff actually didn't involve cannibalism, and then I smelled it cooking, and knew I had to try it.

    The rest is history - Before its cooked, Fred Steak may look like crusted over coal or tar, but it is this crust, formed by the secret marinade as the roast cooks, that is the magic of Fred's Steak. The crust seals in the juices, preventing the savory flavor from escaping. The crust itself lends the right amount of seasoning and a hint of sweetness that complements the hearty taste of the beef itself. The result is a heavenly, full-flavored piece of beef, both tender and succulent.

    I've never been back to TDD's place, but I trek to Schaub's regularly to stock up on Fred Steak.  Once you're tried it, you will too.

    I don't come here often - it's not like it's particularly close to where I live, or particularly inexpensive.  It's in the mall, for pete's sake.

    But ... in the search for sausage casing, they came through for me, and that counts for a lot.  They have it available, $39.99/lb, just the pork casing as far as I can tell, I assume it's the same stuff they use for their own sausages.  Which seems expensive until you realize that $5 worth or so is way more than you need.

    Despite my rather paltry purchase, they were friendly as always at the meat counter, and even spent some time making sure I knew how to store the excess.

    Unbelievable, got this two pound steak for Christmas, and upon opening it, being totally black got me nervous.  But my husband followed the heating instructions, and voila! It was the most delicious steak I have had in decades, even better than tavern on the Green in NYC.  expensive price tag, but my boys "unfortunately" loved it too, so we "happily" shared the wonderful steak with them.  It melts in your mouth, thank you Sophie, great gift and I will buy more in the future.

    Fred's Steak!  Damn good meat.. It's black and looks funky, but it is oh so tasty.

    Since I live an hour's drive away, I try to buy at least $300 of it for freezing. Friends and family are always impressed with how good it is.

    My boyfriend loves this place. It can get pricey, but as long as you do not mind that. You will enjoy there meat selection. The filet is the best cut you can find in the area.

    Short story - not impressed.

    Was at Schaub's for lunch two days ago. It was around 1 in the afternoon so the store was not very crowded. I ordered a sandwich and specified no tomatoes or onions. The gal taking my ordered replied "no tomatoes, no pickles?" I replied "no tomatoes and no onions." She correctly stated it back to me. Kudos to her for doing the right thing by repeating it. However, when I got my sandwich it was without tomatoes and without pickles... it had the onions. Not a big deal, I can pick them off. But I shouldn't have to. At the cashier's station, they have a big pot of soup. Since it was a cool day and I was pretty hungry I decided to get a half pint of this beef stew. The stew tasted ok, but it had a weird texture to it. In order to thicken it up, someone added a lot of corn starch to the stew. It made the stew have this strange too thick feel to it.

    The damage for one sandwich, a half pint of stew and a bottle of diet coke was $15. I can't see myself spending that kind of money for a simple lunch when everything wasn't great. Will I be back? Probably not, I'll check out other places to have lunch.

    If copious amounts of salt & MSG are in your diet, masking the flavor of a good steak, you might like Fred's steak. Every time my husband & I try it at a friend's BBQ our hands & feet swell. I am sensitive to MSG. I would swear it's an ingredient; hence, its' popularity. MSG increases the flavor.
    It's absurd the recipe is a secret, especially in this age of transparency in the food industry. However,  if MSG plus your daily allotment of salt served in a single portion is your special recipe, it's no wonder they don't share their secret recipe. Additionally, a tri tip is cheaper cut of meat; it's ridiculous to charge $15/pound.

    I've wanted to come to Schaub's for awhile to of course try their Fred's steak, but also their flavored sausages!  

    Schaub's is very clean and cut all of their fresh meats right behind the impressive cases of you guessed it, MEAT!!  They carry Kobe beef, game and seafood in addition to all the usual cuts.  There is a large variety of ready made food to take home and warm up, such as seasoned chicken, chicken kiev, chicken wellington, etc. In the middle of the store is a freezer with twice baked potatoes, mashed potatoes, mac n cheese and even meatloaf.  

    The extensive variety of flavored sausages is impressive and they're huge!  There are several varieties I'd like to try, so I'll make return trips to do so!  

    During my visit, I bought:

    Fred's sirloin steak
    Spicy Georgia peach w/bourbon sausage
    Chicken Thai sausage
    Spicy mango sausage
    Ground chuck

    All were very good!  Fred's steak was very flavorful, tender and had nice marbling throughout.  So good!  The sausages were excellent and most are $7.99/lb.  It's a treat to try different things and all were very lean, no fatty or mystery meat sausages here!  Some of the other interesting varieties including Duck & Plum (Seasonal),  Lake Lealanau Wild Cherry (Seasonal), Mongolian Chicken, Jamaican Chicken, Blue Corn Chicken, etc.  Classic sausages like Chicken apple, British Bangers, Polish, Bratwurst are carried here too.  

    The service was very friendly and helpful in terms of how to cook the steak and made good recommendations on items.  The staff is more than willing to cut anything you'd like. They carry all of your butcher paper-wrapped meats up to the register for you so your hands aren't full and you can look around.  

    Made to order sandwiches and soups are offered here as well.  

    I'll definitely be back for the excellent quality meats here!

    My guy has wanted to come here to get a Fred's Steak for a VERY long time, we finally stopped in on Monday.

    I was surprised that prices were as reasonable as they were. We purchased a pork tenderloin, a salmon fillet, Fred's Steak, and a dungeness crab. I didn't find prices any higher than at other markets I frequent.

    The dungeness was probably the best i have had in.....I don't know when! It was so sweet, so flavorful...Wow, I was blown away. I'd go back just for that.

    I was also happy that the salmon was so fresh, no odor at all. That's a big factor in determining freshness for me.

    I found the young guy working behind the counter to be surprisingly knowledgeable as well.

    I will definitely be back.

    This place is unreal and it's more than just meat products. They also carry high end food items that are excellent for taking to peoples parties and events. Everything from dry rubs to ketchups that are packaged in non-traditional ketchup bottles Schaub's is a bachelors wet dream. Come here and pick up something impressive and make yourself look like a rock star.

    One thing I don't like? A 5:00 am conference call that gets cancelled at 4:55.

    FRESH MEAT, FRESH MEAT. YOU WON'T FIND ANY SOYLENT GREEN HERE!

    If you love cooking your own meat and seafood, Schaub's has you covered. They've got an incredible selection of meat, including game like duck and lamb. My favorite steak from here is the Kobe Fred Steak. Fred is a blackened steak that is like no other steak I've had before, named after the original butcher at Schaub's if I recall. I've been eating it for years, and I come back every year to get a piece. It's incredibly expensive, but worth every penny.

    Schaub's also has diced pancetta, at $4.99 it's quite a steal and truly tasty. I think their meat has a visual appeal that even Whole Foods' meat counter can compare to (although they're close).

    And if you want to sample some of their meat, but aren't quite willing to plop down the cash, order a sandwich or two!

    So good. I keep dreaming about this place and wishing I could get back there to grab me some Fred's. I think tonight I'm going to go and treat myself.

    On the service, it was far beyond all that I could imagine. I was treated fairly and nicely and the butcher even asked us if we had questions or knew how to prepare our last purchase. When we (I) said no, the same butcher took the time to hand write instructions for both oven baking and grilling my new found love (Fred).

    I only wish it was closer to me so I could be there more often but then again they are doing me a service by getting me out of the house. Thanks Schaub's!

    Excellent place to buy meats and sandwiches. I love everything I have bought here. Since it's in the farmers market section of the Stanford Mall, it makes you feel like you're at a bazaar in Europe. I love it!

    The food is well prepared and fresh. They have seating outside if you want to get food to eat at the court. Great customer service!

    Can't wait for my next trip to Schaub's!

    This review is for their deli.  Their meat products are fine, but seriously, paying that much for meat that you can find at half the cost at Whole Foods or another certain butcher in Mountain View isn't worth it.

    Back to the deli.  I was actually excited to see they served sandwiches.  I figured with their quality of products - especially using Boar's Head - that it would be a phenominal sandwich.  They certainly charge for a phenominal sandwich.

    So I went with a Peninsula.  Turkey, bacon, avacado - can't go wrong, right?  I'm being honest when I say this (and I'm typing as I eat the sandwich) - Subway makes a better sandwich.

    Did I SERIOUSLY pay $9 for a sandwich that has "fake" bacon (the pre-cooked stuff Subway serves) and an "avacado" spread?  This is Schaub's, for crying out loud.  You have plenty of real bacon to serve.  You're next door to a produce stand.  Serve REAL bacon and REAL sliced avacados with your sandwiches!  What a disappointment.

    I can't even taste the turkey because the avacado spread is so overpowering.  It's got a sweet taste too it, which makes me think there's lemon juice in it to preserve it.  Just slice a damn avacado.

    Lesson learned.  You don't get what you pay for at lunch.

    Fred steak is pretty tasty.
    The snooty, poor customer service is what makes me avoid this place. I tell all my friends to stay away from here if they dont like being ignored. Kinda like my updated review of Prima deli. Either the staff here is shy/ and inexperienced or they are just plain lazy. I guess the person who does the hiring is ok with good looking employees more than great customer service oriented employees?

    What to say about Fred? More than a little imposing from the outside ... but heavenly on the inside. I was first introduced to Fred about 15 years ago, when I didn't eat very  much meat. Fred played not a small role in converting me.

    Since then, Fred has been in attendance at many of our gatherings - a guest who once others are introduced to him become life long friends. He is very flexible, he fits in well at a backyard bbq or a more formal gathering. He is just as good in an oven as on a grill ... but really, he is an outdoorsman at heart so grill him up!

    Yes, Schaubs has a lot of other great items ... but Fred is who will keep you coming back for more!

    This place seems to have "love it" or "hate it" reviews.  Put me in the "love it" group.

    I got a lb of Fred's prime rib.  The price was clearly labeled and the service was fine.  I got home, popped it in the oven for 30 minutes at 375 degrees and it was fantastic.  (5 minutes less would have been better for a medium)

    I will be going back for more.

    The Fred's steak is truly great.  Loved it so much, that I searched online to find a knock off recipe for the marinade, and came to a 2005 posting on this site.  

    The recipe called for 1-1/2 cups brewed coffee, 1 cup red wine, 1/2 cup olive oil, 1/2 cup molasses, and other ingredients.  Overall the ingredient base was very liquid-y, so I was skeptical that this would work.  I batched up the marinade as described, and let the tri tip marinade in a zip lock for 4 days in the fridge, and was ready to grill.  Not even close to the appearance.  The meat did not have the trademark, black coating on it that one would find.  Don't waste your time or your meat using that marinade.  

    I will continue to search, and even try to make my own, but for a real Fred's you need to go to Schaubs.

    I am a fan. A huge fan!  One of the best markets to purchase fresh cuts of meats, fish and get one of the most delicious deli sandwiches around! Highly recommended to those locals, or just passing through.  The marinated trip-tip is one of the best cuts of meat I have ever had. :)

    I've always loved Fred's steak when it was served at other people's BBQs.  Went in today to buy some for dinner and thought I read that it is $9.99 a pound.  Was a bit shocked to find out it is actually $14.99 a pound.  Did the price go up or did I misread something?

    Anyway, paid $60 for a few pounds of Fred's steak.  I'm sure it'll be good but wow, that's mighty expensive.

    I am very pissed off! Pissed off that I've been coming to Stanford Mall regularly since 1987 and I never even bothered to try Fred Steak. I finally stepped in and had a Fred Steak sandwich. Heaven. I'll be back to make up for lost time!

    Hands down, the best steak i've ever had is Fred's Steak! The secret ingredients are been unknown for 50 years. A must try! Warning: when you first see the steak it doesnt look appealing because of the dark marinade coating.(See pictures) Don't let it fool you because this taste really good ;-) Yummm om nom nom.....

    -They sell Kobe beef here also. Pretty expensive but these cows are pampered and live better than any other cows. They are literally massaged, hand fed and given beer to drink. lol! (I'm not making this up)

    Honestly the best piece of meat I've ever made at home.  I remember my dad buying Fred's blackened steaks since I was young and now I make a special trip to Palo Alto just for the meat.  

    Last time I was in here, a Japanese businessman was on his way out.  The guy behind the counter told me that he comes to the States on business 2 times a year and always comes to Schaub's and has a 6 month supply of Fred's Steaks packed in dry ice and shipped to Japan.  They're *that* good.  

    Consistent service, consistently amazing meat.

    Fred Steak rocks, but for those of us who consider Daly City to be "southern california", here is a knock-off of the Fred marinade:

    1-1/2     Cup Brewed Coffee
    1 Cup     Red Wine
    1/2 Cup   Olive oil
    1/2 Cup   Molasses
    1/3 Cup   Balsamic vinegar
    1/3 Cup   Tamari Sauce
    1/3 Cup   Worcestershire Sauce
    2 Tbsp    Chili Powder
    2 Tbsp    Onion Powder
    2 Tbsp    Garlic Powder
    1 Tbsp    Marmite (or Vegemite, in a pinch)

    Marinate for at least 3-4 days in a tightly sealed ziploc bag. Cook steak to 125. Let rest for 10 minutes. Devour....

    As far as meat markets go, this place ranks up there with some of the best in the bay area.

    Much better than venerable meat markets of Mission Ale House, Toons and even Blue Chalk.

    At least at this meat market I don't have to listen to another shitty pickup line said by individuals that skew the "bay area male bell curve" in my favor.

    What brought me to Shaub's on this day was an article in the paper about this place having the best steak sandwich around.

    I mean, it was good.  But not the best.

    So, the verdict is 4 stars.

    5 for the meat market.  3 for the sandwich.  

    10 for the dude that actually said to a woman, "my startup just got funded, let me buy that drink for you."

    Thank you kind sir.  Thank you very much.

    Fred's Steak.  That's all you need to know.  Order the sandwich or buy a slab for the grill.  

    You will not be disappointed.  If you are, I will buy you another sandwich because there is no way you will not like it!  That is, unless you are a vegetarian, then I feel sorry for you.  

    Why are you wasting time reading this review?!?  Go get Fred's steak now!
