Call it 3.5 stars. I've eaten here numerous times and nearly always had great food and good service. The decor and atmosphere are colorful and fun. This remains one of my favorite Mexican places and I was surprised to see it get a couple low reviews.
One of the things I really like about Rincon is the Frijoles y Queso dip they bring. I could pretty much fill up on the dip and chips and box up my meal for later.
Very good Carne Asada & Pollo Con Mole.

These folks were quite accommodating and they left the cheese and sour cream out of my burrito (I had asked for that). The fish burrito was kind of expensive for what it was. And the side of guac for $3.50, please!
The waiter was very nice and efficient. He also called the women at the table, "Senorita."
The sauces were good though, and the fish burrito did taste good once I added the guacamole. That's my rule of thumb. If it needs something, ask for a side of guacamole. I feel more complete with avocados in my life.
It was also funny to me that there were "vegan" options listed on the menu that had cheese and or sour cream in the description.

Three stars - vegan options (asking for the "vegan" options minus cheese and sour cream)

I have no idea why this place has gotten a couple negative reviews. Guillermo and his family do a wonderful job with Rincon Del Sol. They have the best salsa in Boulder and signature dishes that can't be beat. (The arroz con pollo is big enough to split). I went to college in Boulder and have been a long time costumer. I stop in whenever I'm back in town. You can't beat their selection of Mexican draft beers and margaritas. Their bar is stocked with premium tequilas. The mariscos and carne asada are also delicious. It's a great place for large groups. This place never disappoints.
I've noticed that I've been giving some hefty 4 and 5 stars recently, and you know it just isn't a balanced diet, you know what I am saying?
So here we go, a place that really does deserve a one.
Rincon del Sol - or Corner of the Sun for us gringos - is on a corner, a busy one at that (Folsom and Arapahoe) which is perhaps the reason it still is in business.
What is good about this place?
Uh little...I remember the food being bad, the vegetarian selection being nothing, the service being slow, the prices being high, and even the company being annoying.
So...it has its own parking lot?
Which if I were you, I would use to walk somewhere else.
