I don't hand out five stars just willy nilly. But Oliver Kita deserves them. Especially since he just opened up a new (adorable!) little chocolate shop in the middle of Rhinebeck! The new place is just west of the Beekman Arms and it has chocolate, chocolate and more chocolate but will soon have a cute coffee bar!
I'm getting ahead of myself.
Oliver Kita is a fabulous, Culinary Institute of America trained chef who studied at whatever snazzy fabulous chocolate school in France or wherever. All you need to know is his chocolate is THE BEST. It is art, beautiful, creative, with tastes perfectly matched together in sensational/creamy/delectable fillings that make my mouth water just thinking about them. Examples: lemon lavender, pumpkin latte, apple pie (with crust), mint and lemon balm, cherry and ancho chile, etc. etc. Almost all are surrounded by Valrhona chocolate, some (Galaxy, Matcha) have yummy stuff outside as well (a sugared mint leaf, gold dust). He also offers new stuff seasonally (pumpkin latte is brand new).
The chocolate ain't cheap ($2 per), but it's worth it. -

Located outside of the main commercial area of Rhinebeck, past the main gates of the Dutchess County Fairground and in an innocuous looking building you will find Oliver Kita's unassuming shop filled with some of the most beautiful handcrafted artisan chocolates anywhere to be found.
I received one of their 9 piece assortments handpicked by The L and one of the most helpful chocolat slingers anywhere. She was knowledgeable, professional, and sweet like their chox. My favorite would have to be their dark chocolate Buddha (the one without the gold dust on it). I am not sure how I feel about eating a Buddha as it is rare to find chocolate Jesuses, etc and to me that is the same thing. But it was so good I did see The Light. :))) On the flip side, the guilt is a bit overwhelming.
As for the others of note, of course we tried the Tibetan Tiger Heart which was orange caramel with a hint of chili spices and chai. It was beautiful. The Espresso Double Shot? Haven't slept in days, LOL. Flavorful. Organic. Round. Boing!!! The signature Palet d'Oliver was black currant flavored. Very interesting contrast with the dark chocolate. The pretty pretty Japanese Berry is the white one in my photos and mixed green tea with strawberry. Interesting but not exactly my favorite.The Bee Power is the banana shaped chocolate and while technically it is not vegan I eat honey because the bees like to pollinate and have a job to go to. ;))) That one was my favorite.
We tried the Brut at the shop as well as the Cognac. How we drove home after still remains a mystery. Besides tasting great the presentation is amazing and made from 99% recycled paper materials that are biodegradable and or compostable. Love that! AND Oliver Kita is a member of 1% for the Planet. If you are looking to make a statement, these chocolates will certainly fit the bill. Though my tastings were limited to vegan selections, I never felt as if I were bring short changed or missing out on anything.
So why only 4 rather than 5 stars? I am hoping to get more so I can be much more educated about that which I review! I honesty have yet to finish the box as I ration out just one at a time and not every day. Those are the ones I have had thus far. And truth be told... I like Vosges and Lucky better.

I received a small package today...
I thought to myself I didn't order anything from online recently or did I?
What a nice surprise...I got a shoe today but not just any shoe - I received a CHOCOLATE version decorated with white chocolate flowers!
Awwww it's too pretty to eat - I am just going to keep it in the original nice pretty packaging! -

Oliver Kita (NY Chocolate Show) - It's cool that you're not a whore using just ONE chocolate, but many including Valrhona, Swiss, etc. I must admit, that chocolate buddha was very tempting at 3 bucks. One choco buddha even had gold flakes on it. The chocolate here was just average at best, but anyone who uses Valrhona or makes religious icons out of chocolate is always a plus in my book.

Brilliant! Every chocolate here is a precious work of art, from lovingly crafted and clever designs to impeccable, complex flavors. One might suspect Oliver of communicating telepathically with cacao beans; it is the most likely explanation for his profound understanding of their nature. His very presence and boundless knowledge will compel you to seek out gustatory adventure and, luckily, his unique and imaginative flavor pairings will sate your new curiosity.
