I almost feel bad writing a review for this restaurant. I love Japanese restaurants and have eaten at probably a dozen in town, including this one. My review for Kanki is a testament to my feelings on Japanese restaurants. However, I must be honest. I would not ever eat at Mt. Fuji. Mt. Fuji actually used to be known as Sho-Gun. Sho-Gun was actually shut down due to health code violations. I do not know if Fuji is run by the same or by different management, but the bad press its predecessor received justifies my feelings. I would not eat a meal there for free. Now, lots of people eat there every day. It's the only Japanese steakhouse in that area of any prominence. When it was known as Sho-Gun, I ate there (it has to have been at least ten years ago, but I did nevertheless). The food was on par with any other Japanese steakhouse. It wasn't the best, but it wasn't the worst. I can say this (warning: some people may find out more than they ever wanted to know about me starting... now...): I often have undesirable reactions to Japanese food. There are two places at which my reactions to that food have been the greatest. Sho-Gun was one of them; Mt. Fuji would likely continue the trend if I ever ate there. I have not found the other Japanese steakhouse on this site, but will review it when I do (I actually passed out while walking out of that one). In short, unless you have no other option, try to avoid Mt. Fuji. I know lots of people eat there with no problem, but the same held true when it was Sho-Gun. That doesn't mean it's a good idea. The prices are on par with other Japanese restaurants and the location is good near Regency Mall.
