Just went to the So Pas Farmer's market and stopped by the Mis Padres Salsa booth. Tried the chiquiles and absolutely loved them! They grilled tortilla chips with their homemade salsa, onions and cilantro. They topped it with chicken, cheese and guacamole. Soooo good! I talked to the owner and he had said this was a recipe passed down from gen to gen. He use to be a restaurant but switched to catering and farmers markets. I think it is a brilliant idea. He gave me the history of chiquiles and was extremely approachable about everything on the menu and especially talking about his family and the salsa. The website is down right now but he says it will be up soon with even more information.
