My favorite meat market!
They have always treated me well and remembered my name.
If you want something in particular just give them some time and they will prep it for you.
The cuts are great the meats even better.
I have been steered away onto better deals over the years.

{What's not so good about Marcondas}
-When I asked for beef ribs they opened a vacuum pack and tried to give me brown beef ribs the first time. I said gimme the other pack, you know, the red one that doesn't look like it's rotting.
They did.
-They don't have a lot of dry-aged stuff, though they can do it for you if you
-small/medium size selection. Could be a lot bigger but it's a business I understand. I'm sure they could get stuff i you special-order.
-They "Wet Age" their meat. This is nothing more than letting it stand in its blood in the vacuum sealer. This maximizes weight retention(butchers sell per lb...), but the problem is the blood oxidizes and gets soaked back in and yeah. You get brown meat. One piece (of 4) that I bought that was aged...smelled bad...ribeye.
{What's good about Marconda's}
This place, however, has a lot of things going for it:
1) Not super expensive like Lobels
2) Fantastic Prime Ribeye from Montana. Made it and imo was my favorite steak(in the classic sense) in the past year. Lot of flavor and I recently ate at Donovan's, Mastros, and Ruth's Chris. Better than all of the above. I have been marred.
3) Have Wagyu beef (New York Strip...though it has much less flavor than the Prime Ribeye)
4) LOVE the amount of meat on the beef ribs. This makes it great for braises, PHO (you're missing out if you don't make pho with Beef Ribs). Most markets cut off too much meat for the ribeye and sell it as the expensive shiet, leaving the bones bare of meat.
5) Can special-order or dry-age for you if you call in advance.
When I want meat this will be one of the places I will go to, otherwise for special occasions I'll still order from Lobels.
Overall very pleased with the BEEF RIBS and PRIME RIBEYE -

Can you say old school? This is the best butcher in Los Angels. I think it is one of the oldest butchers in LA. I like the filets and hand cut corn beef. They put their own spices in the meat and when it cooks up it is incredible.

Marconda's is my favorite butcher. The other day, I picked up 6 gourmet hamburger patties for a Father's Day BBQ, and they were amazing. The gourmet blend had some excellent seasonings with quality meat. The meat stayed moist (good fat ratio) and came out perfect. Everyone raved about the meat.
I also highly recommend their lamb and their beef ribs. You can find Piedmontese beef here, which is a huge plus. -

Marconda's is THE BEST butcher in Los Angeles.
Not only is everyone here super friendly and very helpful, but the selection of meat is great! I always come here when I need to buy meat for the holidays or just want great quality meat.
Everyone here can give you great recommendations if you just tell them what you plan on making. I wanted to make Julia Child's Beef Bourguignon and they didn't have the cut of meat I needed. When I told them which recipe I was using, they recommended a few cuts of meat that would work perfectly with the recipe. I'm glad I listened to them, because the dish turned out great!
You definitely pay for the quality of meat you're purchasing. It can get a bit pricey ($9.99/lb for Skirt Steak), but the quality is excellent and I wouldn't go anywhere else for my meat. -

This Valentine's Day, I decided to be an awesome girlfriend and treat Matt B. to a steak dinner at home. (Okay, he took me to Hatfield's the following Saturday.) I found a foolproof Alton Brown recipe for pan-seared rib eyes that involved a whopping four ingredients, three of which were salt, pepper, and oil. The success of the night depended entirely on the quality of the steaks.
Marconda's delivered. This little butcher shop in the Farmer's Market behind the grove gave me two beautiful steaks. The butcher was really friendly and enthusiastic, and he helped me decide on the Spencer cut rib eyes. They came in at $36 for 1.92 pounds, so not exactly cheap, but worth every penny. I did almost nothing to those wonderful slabs of meat, and they came out absolutely delicious. Lots of fat, no stringiness, so tender that our lack of steak knives was no problem. They were giant steaks, and we polished them off with relish.
Though $18 per person is not cheap for a dinner at home, it is cheap for steak of that quality. Marconda's has convinced me that going out and paying $45 for an inferior steak is just not worthwhile. I know this is a conclusion that many have come to, but I've finally learned it for myself, with my own taste buds. When the craving hits for a bloody piece of meat, I'll head straight to the butcher. -

Very nice people. They are strong supporters of the community and the film industry. They helped me with a very bizarre request where i needed to chainsaw a piece of meat in half for a horror film. When customer service and quality product are the deciding factors i'd definitely chose Marcondas Meats.

Two words: filet tips.
These not only are amazing cuts of fresh meat, but are half the price of filet mignon. I loooove that Marconda's sells these! Sear with smoking oil then finish off on broil in the oven and its better than restaurant steak!
Also I had been looking for pork belly everywhere, and Marconda's has bits of uncured frozen belly! Perfect.

Great service and a deep selection. I bought a pair of filets mignon and they tossed in a couple slices of bacon (for wrapping the filets) at no extra cost.
Farmer's Market can get crowded on the weekends and poky drivers jam up the parking lot, but if you're grilling this summer it is worth a trip to Marconda's to get your meat. They also have a smaller, separate poultry booth a few steps away in the FM. -

My favorite butcher in town, and highly recommend over the Harris Ranch which is in the Farmer's Market as well. Always helpful, always honest about what is looking best, and they have the best boneless spare ribs I have ever tasted...
Also, very well priced, and certainly better than Whole Paycheck. -

Got the Spencer cut rib-eye the other day from this place and man, that was a hella piece of meat. Was a little under $20/lb so a little pricey but the marble and fat content of this steak, very well worth it.
Almost as good as dry aged meat.
Service was extremely friendly and their selection is very wide. Would definitely come back whenever I'm in the area and need to pick up some fresh meat... get it, fresh meat? Hehe... oh never mind. -

These guys have been my go-to neighborhood butcher for years and I've got nothin' but love for them.
They've got everything from great deals on budget cuts for the spendthrift (like spencer steaks and their delectable oven ready meat loaves - in two sizes) to fancy shmancy impress your friends cuts like whole filets, nothin' mignon about 'em, they'll even prep on the spot for a wellington. They carry all sorts of aged steaks, house made sausage, bacon and all manner of other carnivorous goodness. You can even special order whole sucking pigs. A whole pig!
There's really no comparing butcher quality to what you get at the market. Had some lamb shoulder chops tonight (big and cheap!) that were absolutely amazing in a red wine balsamic reduction with some shallots and garlic. Served with a little spinach from the other FM vendor next door and some fresh fruit to round things off, and it was a restaurant quality meal for two for a bargain price.
Not to mention, who doesn't love supporting small family run businesses?

Vegetarians STOP reading now and go eat a rainbow or something. Now, for the humans. This is THE butcher to visit in L.A. I mean did you check the pic out? Go ahead. I'll wait...
Huh? What did I tell ya'? Badass. I know. I know. Also, the friendly knife wielding crew will gladly slice any meat to your specification. And the homemade meatloaf tastes waaaaaaaaaaaaaaay better than Meatloaf. (Is he dead yet?) Plus, you can get all your sides at the fresh veggie stand next door. See...I'm looking out for you meat haters as well.
Now, go eat a dead animal. I mean really, that's what they're for.

Being from Oklahoma originally and having a grandfather that was a butcher, I take a very critical approach to my meat and Marconda's exceeds in all facets of butchery.
To know what I like, here are a list of my favorite cuts and my experience with them at Marconda's
Prime Rib - It is worth spending the extra $$$ to go for the prime dry age (you can call weeks ahead). Remember brown nicely in pan and keep oven at 250 until thermometer reads 130 (medium rare).
Boston Butt - cheap cuts if prepared properly can be soooo good. I like to brine mine then let is sit with a rub before I smoke for 10hrs.
Spencer Cut - one of my favorites for the grill, they always have nice marbling and I prefer their thicker cut. Salt and Pepper is all you need. Mmm Mmm Good!
Skirt - I love to prepare this with a chimichurri sauce alternatively you can get a flank but the skirt has more fat/flavor. Be careful not to overcook.
Butterflied Lamb - I have them pound out the lamb to an even thickness and cut the the tough fat. They do a beautiful job with this. Marinate in some garlic, rosemary, and yogurt and throw straight on the grill. Sooo Good.
Flat Iron - this is one of my favorite value steaks and they always have it on hand. You can put it in a pan, on the grill or in the oven. Great Flavor.
These are just a few of my favorites they offer, but 98% of the time I am extremely pleased with my selection. Oh and don't forget the bacon they can cut to any thickness. The staff is always friendly and helpful on portions and cooking methods.
Verdict: If meat is in your future it is worth the hassle of the parking at the 3rd st. farmers market to buy their superb cuts. -

I absolutely love this meat market! The butchers are always very nice, and they give great suggestions for marinades.
I buy prime rib roasts and ribeye steaks exclusively from them. They also have great center cut pork chops, as well as fresh sausage. The meat is always complete perfection. I cooked my first prime rib roast for some friends, and it was fantastic. The butcher had recommended how many bones the roast should have to feed my group, and my friends ended up taking home doggie bags to share with their families.

This is easily the best place to buy meat in LA. I can't recommend it enough. The prices are mostly cheaper than whole foods and the quality is amazing. They are more expensive than Pavilion's, but the flavor m ore than makes up for it.

Marconda's or The Huntington? These are Farmer's Markets two most prominent meat mongers. But which is better?
It all depends on the cut of meat. Marconda's is somewhat better in its choice of steaks and chops. Plus, the friendly butchers will trim cuts to order. The meat is very fresh, and the quality here cannot be found at any supermarket.
It carries Thumann's cold cuts, which is alright but pales into comparison with Boar's Head, available at the "other" place.

I am so happy that I'm not first to review this place and that others have noticed how awesome this place is!
I have purchased $7 chuck ribeyes that tasted like they were $15 Whole Foods steaks. I just got a spencer roast for $14 a pound! I love Whole Foods and everything, but this place is better for meats. If you are a meatasaurus like me, you will appreciate this place a lot. I can't wait to try more meat from this place.
What a convenient combination, too. Eat some lunch at the Farmer's Market and pick up meat for a gourment BBQ for dinner. Fantastic!
And yes, this place is not for the faint of heart and animal lovers. It's an old school butcher with several lamb carcasses hanging in the window in back. -

My absolute favorite butcher in town for beef, pork, and lamb. Also one of a very few butchers who will sell you belly fat, which is essential for making sausage. Speaking of, their homemade breakfast sausage is a perennial hit for weekend brunch.
Staff is very knowledgable and will guide you on the right path for the huge chunk of meat you want to buy. -

I totally dig Marconda's, and I love that the folks who work there seem passionate about meat. It's a good place to go, especially if you want a Spencer Steak, which is basically a ribeye that... aw hell, it's just good. It's really pricy, but it's SO GOOD. Spend the money if you can.
Marconda's has also provided me with my Easter leg of lamb, sourced domestically and aged to perfection. And it was indeed delicious.
To be fair, if I was looking for sausage or a tasty hamburger mix, I would go to Huntington's. But if what you want is a primal cut, you should go to Marconda's.
Maraconda's Meat is one of the last true butcher shops in LA, where you can actually develop a relationship with your butcher. It's worth visiting if you love meat. -

I LOVE MY BUTCHER!!! Our last purchase (today!) was an amazing, AMAZING! USDA Prime Colorado, aged, baby lamb chops. OMG!!! It was so amazing....I am not a lamb person, especially when it's "lambie". My boyfriend grilled it (on a charcoal grill) and it was, I don't think there are words to describe how, incredible, delicious this little piece of meat was.
We finished it with Fleur de Sel and Ras-el-ahanut (an Arab spice).This spice is especially perfect for any lamb dish. Its many different spices, mostly baking spices.
We have gotten Prime aged Porter House and NY from there before, but this time, I just had to write about it because it was soooo good!!!
The place is great, I love the grumpy old man, he always gives me the best piece.
If you are as enamored as I am with meat, then come here. You will never be disappointed!!! -

I don't mean to bring down the 5-star love for Marconda's because I have been a fan of theirs for many years, but I try not to give five-stars out unless I think they have absolutely flawless products or I am truly tickled by greatness. With that said, I think Marconda's is more of a 3.5/4 star meat vendor. I prefer going with Huntington Meats when I get errands done at the Farmer's Market, but when it comes down to it, I'm not a regular of either. I much prefer going with the folks over at McCall's or my local farmer's market who sell grass-fed meats that demonstrate much fresher and higher quality. Marconda's gets the job done when you need specific cuts, but the integrity of their product is very old fashioned...old fashioned in the slighly-behind-the-times kind of way. I am a firm believer in being more conscious about the food you buy and if I am going to consume meat, I try my hardest to go out of my way to find sustainable, local, or humanely raised products. While no one is perfect and not everyone can do that every single time, Marconda's is out of the way for me, so if I'm going to trek to mid-city for meat, I mind as well go with the folks with more environmentally conscious products. While they sure are fantastic butchers, I am very much looking forward to when Lindy & Grundy's shop opens up down the road.

What would be a nightmare slasher flick to PETA looks like a little slice of heaven through my carnivorous eyes. Ample cuts of a variety of meats or custom orders done to your specifications. I swung by Sunday and picked up a 5+ pound prime rib for a dinner I was preparing. Although I'm quite experienced cooking all types of steaks, this was my first go at prime rib and the butcher was kind enough to give me a few tips for seasoning as well as cooking temps & times. Dinner turned out to be a huge success and I've decide to add prime rib to my culinary repertoire and rotation. I'll definitely return to Marconda in the future should their meat and services be required.

This is my fav butcher in LA and yes I don't mind driving from Pasadena just to get the fresh, grass fed meat here. They have minced lamb, pork, steaks and I adore their red pepper Italian sausages (super hot and yummy!). I love cooking at home with high quality ingredients and nothing beats the meat from Marconda's. I have used their minced lamb to make spicy Indian Seekh kakabs and it's always been a big hit at my BBQ. Same goes for the pork and the Hot Italian sausages (they have red pepper and fennel along with other spices)...The staff is super nice and always answers any questions I have. After getting the meat from here, you will never buy packaged meat from a grocery store again!

What a score, Needed to find a full beef brisket for my smoker. I did not realize how hard it is to find this cut. But I found it and it was UDSA choice meat, with great service, the old fashion way. The meat was exceptional so was the service.

I love this place!! It is by far the best place to get lamb in town, and they will work with you to get unusual cuts when needed. Plus, the staff takes the time to trim the meat well and there's something amazing about the place being old school and the guys actually being old that is very charming.
