I love  this place! I try to hit up La Especial once a week if I can because the chicken soup there is the bomb! Many a hungover afternoon has been treated with this delicious soup.
It's a casual dining experience where you seat yourself and the service is decent, this place stays busy. I swear by their soup selection and the cabbage salad is better than most (Tony's Jacal is the best! IMO).
When I lived in Leucadia it was an easy bike ride to my favorite Mexican food joint, but now that I have to drive there I have to put up with the parking lot which can be kind of pain in the ass. Go there for the soup!

If you like soup, and Mexican soup at that, you have to try this place. It's pretty much a little hole in the wall, but it's worth coming just for their variety of Mexican soups, all of which are excellent.  Best chicken and rice / tortilla / albondigas soups in San Diego.  Their shrimp dishes are not too bad either.  Service is spotty on occasion, and there's always a wait here, especially on the weekends.  It's also more Leucadia than Encinitas, as you'll have to drive pretty far north of Encinitas proper to get here.

This reasonably priced mexican eatery has great soups as mentioned by Stefka.  They also have great enchiladas and wet burritos.  During lunch time on many days you will have to wait for a seat and in the summer on the weekends your wait could be longer than an hour.  
The service is alright most of the time but not great.  They are slow in getting you drinks and in getting you your check at the end of the meal.  

Good food for the price, great salsa.
