Friends RAVE about Jimboy's. For me, it's ok but I would rather have Adalberto's which is just on the other side of the street. For breakfast the boy and I decided to mix things up and give it a try. He had a burrito, fairly small and didn't eat all of his. I had this egg and bean plate - I am not really sure what my motivation in doing this was. The eggs were rubbery and I didn't eat the plate and when my daughter found it in the fridge she also tried it. She attached a note to it that sums up how I felt as well.
It read: WTF is this?

Jimboy's seems to offer the more authentic variant of Mexican food than I'm accustomed to, meaning very basic ingredients (i.e. no veggies standard in a burrito) -- plus fried 'n' greasy.
That's not necessarily a bad thing if that's what you're looking for, though I was a bit surprised to discover just how oily the tortilla was on my chicken burrito, as well as by how much cheese there was inside.
Still, the burrito was pretty good. There was some nice spiciness to it, though I'm not sure how much had to do with the guac I opted to have them toss in there.
I have found, in my two visits there, that the drive-thru experience is slow. I don't think the place is really set up to be an assembly line like, say, Taco Bell (to its credit), but if an order is going to take a few minutes, I'd prefer to go inside, rather than letting my car idle.
All in all, three stars is probably generous; this is more a two-and-a-halfer, considering what you get for the price. Frankly, I figure I could get something that's on par, quality wise, at Taco Bell, but it would be quicker and less expensive.
