This place does food AND service right. WOO HOO!!!!!!
Top Chef is my absolute favorite show on TV and I haven't missed a minute in years. Last season, I was rooting for Jax chef and Boulder local Hosea Rosenberg and was thrilled when he won.
Recently, I found out that he was recreating 3 of the 4 dishes that he cooked in the finale for the bargain price of $35(I think) and we nabbed a reservation.
We were hungry when we arrived and ordered a few things off the Happy Hour menu...ceviche, pork belly sliders and a few raw oysters. All yummy, but shouldn't have done it because it filled me up for the real deal.
Our appetizer was a raw preparation of tuna, yellowtail and salmon and was exquisite. Melt-in-your-mouth fish with very thin fennel, a bit 'o grapefruit and a refreshing vinaigrette. I gave the dish a "10".
Second course must have been what secured the win...foie gras was the shining star in the most savory, rich, orgasmic bit of heaven. It was off the 1-10 scale.
Third course was venison and good, but not great. Since I was full by this point, I didn't feel too bad about eating only a bit of it.
No room for dessert but it wasn't part of the menu(not surprising if you watch Top Chef).
Service was excellent and we got to meet Hosea for a minute. He even brought out an autographed copy of the night's menu which meant I could return the copy I had stuffed in my handbag at the beginning of the meal. : ))
We look forward to a return trip.
I only stopped by for happy hour, had a couple of quick drinks and some oysters. The beers were good, but what really stood out for me was the oysters,and how quickly they arrived! I have NEVER had such a short wait for oysters, and i get them quite often, in all parts of the country.
Friendly staff, and a lot of them were damn hot. We were debating whether the owner was a gay guy or a cougar, wanting to keep so many hot guys in employment!
I regret not being able to stay for dinner, and the next time I'm in Boulder I will definitely try and find time to squeeze it in.
So I am in Boulder for a weekend and I am told by a CU alum from back home that I got to hit this place up. Good spot - would go back.
The place is a bit on the small side - the decor and space is really nothing all that special. I oreder the Colorado striped bass which was great - the fish was a bit crispy on the outside but done well. It came on top of a nice selction of veggies and potatoes. The portions were not out of control.
The food was excellent - the wine - not so much. I tried a glass of their Pinot Gregio and it tasted like two-buck chuck.
The key lime pie was also excellent for dessert. I talked to a bunch of locals at the bar while eating and they all said this was one of the best spots in Boulder.
Apparently the chef just won a chef show on the Bravo network - wouldn't know - don't watch TV.
Jax has a spot in my heart. Back about 2 or 3 years ago, they had a flatiron steak that was up there if not better than any steak I've had in Boulder. I would come in to this seafood restaurant regularly and order the steak. Sure, I might also get the awesome ahi tuna chimichanga, but the real kicker was my main meal. That being said, its gone now. I have always been able to find at least one awesome dish here to replace it though. The bacon wrapped halibut filled the void last, and most recently its been the baby striped bass.
This baby striped bass was sooo tasty. Pomegranate brown butter, potatoes, brussel sprouts...mmmmmmmhmmm. The staff here is top notch for sure, you'll see the managers running food, schmoozing, running drinks, all in a days work. Great place.
Meh? Am I being too harsh? Is their seafood OK, sure. But I've DEFINITELY experienced better - let's stick with Meh.
Most recently, happy hour last week. Had dinner a while back. Fish is decent, oysters are fresh (you can't really f*ck up oysters on the half-shell, can ya?). All the happy hour bites we had were all edible, but supremely mediocre - these specials seemed like a list of has-been items from menus past, weren't worth keeping on the "real" dinner menu. Should I expect better a happy hour from the "top chef'"? I think so.
This Big Red F restaurant is awkwardly cramped, with the street entrance opening abruptly onto rectangular bar in front jammed into a narrow space; hostess station right up front as well. As at some other Big Red F joints, some young hostesses can be off-puttingly haughty, as if this is some exclusive fine-dining establishment - I'm afraid not.
And the dining room in back? it's pretty small. This meant they were busy in years past, it was incredibly loud, and you had a long wait for a table. These days? not so much on a regular weeknite in this economy. Recent crowd was a very bland mix of touristy types and CU students with family in tow. Of course I can't say for sure, but it appears locals that like good food have gone elsewhere.
The main menu is a not-so-inspired list of seafood house basics, with a few southern and (oddly) asian-influenced items in for good measure. Mostly dishes taste ok, but aren't memorable or exceptional; fish can be overdone and sauces overwhelmingly dominant and one-noted. Stick with basics like fried shellfish or chowder. I don't know why I'd go back, unless I had a $1 east coast oyster craving before 5:30, but even then I think I have some options.
Top Chef? Well, we started out mildly fond of Hosea...but utimately, it turned out to be a disappointing season of Top Chef. Curious? check out the recap and comments on Eater or NYMag...jus sayin'
When I moved to Colorado, I knew I had to check out Jax Fish House in Boulder because I love watching "Top Chef" on Bravo network and the executive chef was on the tv show. Since I watch him on tv, I decided to go out and enjoy his food. I am so glad that I went because everyone from the hostess, bartender and waitress were so friendly and the food was excellent.
I had a small plate of 3 light tuna potstickers in this yummy chile sauce and then my main dish was 3 sea scallops lightly grilled with a grilled polenta with sliced mushrooms on top. A carrot sauce was the finishing touch on the plate. For desert, I had mini creme brule - it was served in 3 mini dishes with the following flavors - blueberry, regular and cinnamon. It was to die for! It was an amazing dinner and I am so happy that I went.
Love Boulder, Co and love this little place, Jax, a popular hot spot right on Pearl Street.. Jax has a fantastic oyster and cocktail happy hour, the star of which, IMHO is the Oyster Shooter. If we had all day and a cab ride, I am sure we would have stayed there and had one after another after another after another . . . after another after another.
Their Raw Bar is serious business with up to a dozen different varieties of oysters every night. Fresh clams, chilled crabs and lobsters are flown in daily.
On the food front, we had the Coconut Shrimp, Smoked Salmon Plate and Pork Belly Sliders. Delish. And cheap at $3 each.

I had to visit Jax when visiting Boulder. There was a lot about the place I really liked. Good cocktail (St. Germaine), good oysters, really friendly and attentive service, high quality ingredients. I ordered the Ahi special which was a bit of a disappointment. I have had Ahi many times, since it is a favorite. And yes, it should be rare to very rare. But this was barely grilled on the outside and not even slightly warm in the middle. Nevertheless, I would definitely go back if I were in the area. I saw lots of great food around me that I would love to try.
Had to try this place since I'm a fan of Top Chef. Food was excellent! I had the Olive crusted halibut which I really enjoyed. It's very small inside but very casual for such high end food.
Wine list could be better, but great food. If you're in Boulder I would recommend it.
I gave my husband some options for his birthday dinner and he chose Jax Fish House... So tonight he, his family & I went there. We all had a really great time and thought the food was delicious!
We were only able to make reservations up to 6pm, so I made us a 5:30. It was PACKED once we got there (maybe due to the happy hour that goes until 6, but likely just because it's POPULAR) but we were still seated in a very timely manner! The hostess was very polite & kept very calm even though the area near where she worked was full of people milling around (would have made me crazy!) We were seated at a table near the kitchen, but it was not at all more loud than any of the rest of the place. The tables have white paper on them that you can draw on with crayons (of course this meant I had to write my husband a "happy birthday" which he later defaced). The whole place is kind of dark, but I really like restaurants like that. There are neat glass fish on the ceiling & they have a nice color scheme going.
The food, though, was the best part. It was a very goldilocks experience as the plates weren't too big or small, they were just the right size! And definitely worth the price. I got the baby striped bass (SO delicious, it was recommended by our nice waitress), my husband got the sablefish (yum as well, the fish was very smooth & delicate tasting), my mother-in-law got the scallops with this wonderful morel bread pudding (sounds weird, tastes delish), and my father-in-law got the Colorado lamb duo (which he said was excellent, and had some bones but was totally worth working around them). We tried the happy hour specials: Ceviche (yummy! Mexican style, as far as I could tell) and the oysters on the half shell (I've never liked them, but I actually thought the one I had was pretty decent!) Ceviche was only $3 and the oysters were only $1 each.
I can see why their executive chef (Hosea Rosenberg) won Top Chef! The food was prepared well, tasted wonderful, and pleased everyone I dined with. We're moving, but would return if we have time when we visit in the future!
Oysters! Martinis! What more can you ask for? Next time we're in Boulder I would love to go back and eat a full meal here. For now, I'll be content with the memories of happy hour.

Seafood chowder is to die for. I got the seared corvina special and my man had the seared tuna. So many flavors on one plate and they all worked very well. Worth the $$. Also really great service.
We've also been for happy hour and the food isn't very reflective of the outstanding dishes we had last night. Decent HH drink specials.
Oddly enough, I have had the best mussles I have ever had here....

Definitely need to make a reservation as there are only 12 tables available inside and this place gets PACKED. Extra seating available at the bar.
Ordered the butternut squash soup, roasted beet salad and mussels. All of the above were fantastic! My bf ordered the organic beef cheese burger with fries. Had a bite of both and this was incredible as well.
Also ordered a couple of hot tooties, which I have to say where pretty darn good. This place really does it right and I am definitely coming back,
My search for the perfect Happy Hour took me to Boulder. Well, not really. I had an appointment, which ended at the height of rush hour (aka happy hour) so weighing my options; be parked on RT36 or parked on a bar stool....No brainer.
After a short stroll on Pearl St., I decided to start at Jax. I was warmly greeted by both the greeter and bartender; quickly handed both the regular menu and the Happy Hour Menu.
I started with a Cucumber Martini -- Interesting. I'm glad I tried it, but it's a One and Done thing.
For food, I opted for a 1/2 doz oysters, which are now $1 a piece -- up from .75 -- damn, this economy.
I also had the beet salad, one of $3 small plates, and small it was. Each of the 3 bites were delicious.
I lingered and chatted with my fellow happy hour 'ers while having a glass of the house cab.
After about an hour, I was well fortified, and decided to move my party of one down the road--but I'll be back.
Jax is a terrific little restaurant, with actual fresh fish, and should they decide to increase the happy hour menu to include the better wine and oysters (maybe do 1/2 price vs really cheap), then I would give Jax that rare 5 star.
it's best to make a reservation for this place, tho they don't make reservations after 6:00 pm. note - this is not a place to go if you want a quiet meal out. it's really packed and very, very loud. but it's got a fun atmosphere...
the food was pretty awesome - fresh fish prepared in really simple and delish ways, but it's kind of pricey for what you get. happy hour until 6 softens the blow on the wallet. we got the sable fish and an almost crusted concoction and both of us were really happy. bf loved the oysters, too.
the best part? crayons to draw all over the brick walls. it kind of speaks to the 3-year-old in side of you.
I'll stick with happy hour at Jax.
That's the verdict after my first full dinner there. Happy hour and dinner alike are packed, but the deafening, "Huh? What did you say?" noise level is less tolerable over a meal than during happy hour.
Oysters are always fresh and perfect - that's the main reason I head to Jax. They also do amazing things to fries, like smother them in truffle oil and Manchego. Yum. Small plates at happy hour are always a treat.
Last night's fried calamari was a terrible disappointment - soggy with oil. The daily special entree, sea bass encrusted in nicoise olives on a bed of creamy polenta, with perfect asparagus and a delightful red pepper sauce and balsamic drizzle....delicious. A wonderful combination of tastes and textures.
Our server was completely absent-minded and/or incompetent. I know that's a case study of one, but they're always "on" at the bar, at least.
Congrats Jax Fish House for the 'Top Chef' being from your restaurant!! Yeeeaaaaaahhhh!!!
I think that this is my favorite Jax - over the one downtown. Unfortunately (for me, not the restaurant) this place is always packed... and on the weekends it's packed to the point where you can barely get in the door. The best part is that you can just give your cell # to the hostess and they will call you when your table is ready... this allows for you to head to a neighboring bar or store to hang out.
For appetizers, the calamari and the crab cakes are wonderful. The aioli with the calamari makes the dish... and the fact that the calamari pieces are thick helps too!
Their seafood always tastes fresh and most of the entrees I've had are not covered with seasoning or excessive salt to mask the natural fish flavor.
Their cocktails are very good and the wine list is fairly extensive.
Jax is great for a full out dinner or just if you're stopping in for a drink and an appetizer at the bar.
If you're real lucky or you come during off-time you can grab one of the few tables that sits outside the front doors which is nice on a warm afternoon in Boulder.
Excellent Kumamoto oysters, good looking crowd and good service. We went for dinner and, beyond the oysters, ordered 4 apps - salmon, calamari, seared tuna roll and crab cakes. All were excellent except the calamari was probably too fried. Was also great meeting and chatting with our new local celebrity and Top Chef. In addition to Frasca, probably among the top 3 restaurants in Boulder.

*Great* food - five stars. Both dishes we got were spectacular - interesting, unique flavor combinations, perfectly cooked and not-your-run-of-the-mill seafood offerings.
The wait, being jostled about in front of the door because the bar is so packed for happy hour and frozen to death by the incoming patrons and, worse, the hostesses who keep opening the door on the sub-zero temperatures to hear that CU marching band go by - not so great. But, pretty much my own fault considering the big compliments I have to give them for their wait-list cell-phone calling system, and the fact that they take reservations (stupid me.) Next time I'll probably manage to avoid most of the previous Jax visit discomfort (wait-times are often longer than an hour!).
A little pricier than I expected, but certainly worth it - just not in my price range to go anytime except special occasions. Don't be fooled by the two dollar signs in the price range category on yelp - I think most people who voted went for happy hour. Dinner is definitely in the $31-60 dollar range - the least-pricey entrees *start* in the mid-twenties.
Also, although they do a great job with the interior, the tables feel a little strange all hanging out in the middle of the room so that, if the wait didn't jostle you enough, you get jostled while sitting at your table - and there's also zero barrier between you and the loud, drunken happy hour patrons. That's not necessarily a bad thing, though - I think I just had completely different expectations of the place. It's vibrant, chic and expensive - and for some odd reason I was expecting the "great fish" to be housed in a "fish house," which to my mind didn't embody those three adjectives - but perhaps I was thinking Fish Wharf, or fisherman's shack, instead of an art-house Fish Loft?
Either way, great food, but for dinner, make a reservation, be prepared to wait and bring a cell-phone. Expect a vibrant, up-scale, jolly good time and you won't be disappointed.
Oh Hosea how we love you so :) Yes that's what brought me here and yes it's probably what would bring me back time and time again! A girlfriend and I arrived here for happy hour, I was looking forward to $1 oysters and at the prospect of a Top Chef sighting. We walked in and there was a small crowd at the bar but we were able to grab two seats. I ordered the strawberry lemonade and my friend had the pineapple infused martini. Drinks were good, made me think of some good times years ago. We started with six oysters and they were great. The bartenders were nice, chatty and attentive but no sight of Hosea. We sat and chatted while sipping our drinks and enjoying the oysters. We ordered another round of oysters and a few minutes later who do I see but....the top chef himself! It definitely made my day and I know my friend felt the same way. We sat and chatted for a while longer and lingered over the eye candy before heading out the door to continue to explore Pearl St.
Definitely a plus that we saw Hosea and I must say he is even nicer on the eyes in person! I'd love to come back and actually try some of the other menu items that aren't happy hour munchies. I guess I'll have to head back out to Boulder again soon!

Only have been here for happy hour, but the small tapas style happy hour menu is great (pork belly sliders, ceviche, tuna pot stickers, and so much more).
If you like oysters on the half shell, then this is definitely the best place in the Front Range. Some of the freshest and highest quality oysters I've had anywhere.

Just had an awesome experience at Jax on Saturday night with my parents who were visiting. I had been once before and loved my meal that time as well, so this locked it up- Jax is a great spot. Started out with the calamari which has just the perfect light breading and is tasty and expertly cooked (so it's not at all that rubbery chew-toy texture that you sometimes find at lamer places). We also had the "Chimi," which our server enthusiastically recommended. The tuna in it is fresh and fantastic and the wonton outside is light and crispy.
For entrees, we ordered and divvied up the curied Maine sea scallops, and they were heavenly- served with a polenta cake and king oyster mushrooms...yowser! Also shared the the Mississippi catfish skillet that was massive and sooooo flavorful; the crawfish-andouille gumbo that tops the dish makes it a can't miss. For real. All around, lots of big flavors and portions that are more than shareable.
Worth mentioning the staff: the bartender was great- friendly and knowledgeable, and when I ordered the Muscadet while we were waiting for a table, he offered me a little to try beforehand, to make sure I'd be down with such a dry white. Now that's just nice. Our server was equally as friendly and attentive and made the experience all that much better. Bottm line, go, go, go. Eat and drink and enjoy a very "Boulder" spot with good company.
We went to this place because the chef was the winner of last season's Top Chef. For what we were expecting and for the prices, it was disappointing. Not that there was anything really wrong with the food--it was very decent and tasted good--but it's best described as pseudo-upscale. The food presentation is great, but the flavor/quality doesn't match up.
I guess this is what happens when you run a seafood restaurant in a landlocked state. It is notable that they were all out of the only Colorado-native fish on the menu, and that may have been much better than what we got. I'm not really curious enough to spend the money to find out, though.
I'm sorry to say, I won't be going back to Jax. For prices like this, I expect to be blown out of the water, and they just didn't do it.
You can go wrong at Jax, I think. My uber-picky (sorry if you're reading this) friend would not let up on the "should-we-go-to-jax-instead?" (we had reservations at 4580) all day so yep, that's where we went. I'd never been but do love the bar atompshere and kept hearing the food was "better than you'd ever expect".
Long and short, a great place to drink, eat oysters and share some apps, but the entrees were weak.
A salmon sashimi starter was excellent, the ahi chimichanga pretty good, and the bready yummy.
katherine and i shared 2 entrees-the bouillabaise ("always a good judge of a restaurant", Katherine stated firmly. Hmmm...learn something new about your friends all the time) and the awesome *sounding* salmon, which was to be served "with a miso glaze, artichokes and mushrooms".
Bouillabaise arrived-tasty broth, good body, but each element of the fish, from white fish to mussel to shrimp to crableg, was amazingly overcooked and (thus) rubbery. Bummer. I looked over to see how Kmac was doing on her salmon. (did she still want to share...yeah, she will :)). The salmon looked really great and nicely medium rare (with emphasis on the rare) but where was the miso stuff, the artichokes and the mushrooms? And what are these carrots and gloppy white sauce? and is that polenta or grits or something underneath? Blech.
I would absolutely go back but I'd stick to oysters and libations....and yeah, probably some apps b/c champage makes me hungry.
This place is great! They have a sweet happy hour, but you might want to get there before 4pm because the bar( as well as the place itself) is pretty small. $.75 oysters and cheap drafts and wells. ( I want to say $2/$3 for either).
The only meal I have consumed here was a shared giant bucket of crab legs and oysters! delicious! When people ask me of neat places to have a drink or take a date I always reflect of my dinning experience here.

I just had dinner with a friend there on Wednesday, 8/29/07. Bar was slammed so we just went to a table. We missed the $.75 oysters (4-6PM) so we opted for a salad instead.
We both had the Wednesday "Blue Plate Special" of Seafood Paella ($15). This paella was served in an iron skillet with saffron rice, chicken, chorizo, mussels, clams, calamari, and shrimp. It was very flavorful and serviing piping hot (as I like it). We washed it down with several pints of CO-based micro brew and a side of their delicious cornbread.
Our server, Brent, was very professional and attentive.
I went with 3 stars instead of 4 stars due to the fact that we had to nearly scream to hear one another. Brick walls that are not that far apart make for an extremely loud evening. Our table was in the center of the room and positioned on a slant. The next table was less than 8" away and one of the guests there was just too damn loud. She felt the need to rise above the din and simply added too much too it. Yikes...

Celebrated my woman's birthday here and the quality of the food blew us both away. We got the chowder, the tuna entree and the special corvina entree and everything was delicious, well portioned, and packed with goodies. The chefs have done a fantastic job putting together a multitude of ingredients that mesh well together. For instance, the tuna contains seared tuna, blood orange, parsnip puree, almonds, diced green olives, and cauliflower on top of a delicious sauce. Well done, Jax. These people KNOW great food. This has been my best dining experience in Boulder thus far.
Sweet happy hour indeed, but not as great as Denver's Jax deal. I like the idea of the $3 "small plates" but they are not even share-able. The coconut shrimp was not the best ever, but the spicy mango sauce was unique and lovely. Beet salad was also good, but again, sized for a single person, at 3 bites. Oysters as always are fresh, and $2 draft beers (ALL OF 'EM) make my day. Try their infused vodkas in the lemonades - delightful. Choose from watermelon, strawberry, even chili pepper, to name a few! It's always REALLY loud in here though, so you have to concentrate to hear your companions!
Jax is some of the best seafood I've had (been 3 or 4 times now, both for food and drinks), as fresh as coastal restaurants, which is great to find since we're not close to any bodies of water.
Went with my husband earlier this evening, and made it just before happy hour finished. We quickly ordered the coconut shrimp, the tuna potstickers with thai chili sauce, and a plate of the $.75 oysters. All wonderful and extremely quick to be served.
We went on our waiter's recommendation for the entrees, and were absolutely satisfied. The bluenose had a flavorful crust baked on, and was served on a bed of crispy rice cake and veggies, with a savory green curry sauce. The giant scallops were tender and melted in our mouth. Perfect.
We finished off our meal sharing the molten chocolate cake which was hot and soft in the middle, and served with a scoop of vanilla ice cream, some caramel, and fresh berries. Mmm.
From other occasions, I definitely recommend the crab cake appetizer. I don't even like crab cakes but these were so fresh and tasty. Also, try the infused vodkas. Many of them go really well in Bloody Mary's, like the pepper or horseradish.
I love Jax 'cause it's consistent, and sometimes that's what you really need more than anything else.
Met 4 friends here for drinks and dinner- martinis at the bar while we waiting for our table- that strawberry infusion martini is really the essence of strawberry, I love that! Had some sashimi app and an shrimp eggroll app that was good. Unfortunately they had to comp a few items since the orders kept getting lost and we waited a long long time before asking after them. Such is Friday night on the town-
Dinner is very similar to sitting in the bar, since it's so small- so it's hectic and crowded but fun and loud- if that's what you want, it's the only place in town to eat. I had fish tacos, they were cooked to perfection and not greasy but done just right with cilantro and a spicy aoili. Our server was very attentive and quick, and our whole party had an excellent time.
The only downside: I couldn't find my favorite dish on the menu, catfish served on a cornbread skillet smothered in etouffee...now that's what I call a MEAL!! Oh well, it's always good food at jax no matter what you're getting-glad to see they're still going strong after all of these years- Chris Blackwood, if you're reading this you're still my kitchen hero and Lak says hi!!
Every meal that I've had at JAX has been out of this world, and living on both the east/west coasts, I've eaten a lot of seafood.
That said, it's surprising to find this great of a seafood restaurant in Boulder.
This review is only for happy hour , 4-6pm, which is inexpensive, tasty and alot of fun (their dinner menu actually looks kinda pricey). They have a great atmosphere around the bar. They have $2 drafts and $3 wells. Chesapeake oysters are 75 cents each. They also have a bunch of $3 appetizers all of which are good but most of which are small in quantity. The Manchego and truffle oil fries were the exception and came in a huge bowl so definitely get them if you're hungry. I recommend getting lots of oysters, fries and beer. If you are feeling adventurous get the oyster shooter (weird concoction involving vodka, some mixer and an oyster).
update- they raised the oyster prices to $1 each which means you might as well go to the boulder cafe for raw bar food.

Jax has a happy hour special - $1 oysters and various drink specials. A great spot to stop with a group. It's conveniently located, great bar - they have Hendricks Gin!
Great place. Has a big city vibe.
Staff is very friendly and they have a great selection of wine.
The meals are delicious and whoever makes the sauces at this place is a genius!!
My dinner at Jax was very good. Not great and not one that I would recommend to serious food people. I had the assorted smoked fish, mussels, and oysters to start. It was a large, flavorful platter good for sharing. Next I had the cedar plank steelhead trout with chorizo, potato, asparagus hash. The fish was moist, delicious and paired nicely with a French muscadet. The service was attentive and the wine suggestions were good. It was definitely a place that was fun with lots of energy but not a culinary must do. It's a fun place to go with friends for nice food or a good happy hour in a very festive setting.
Food may be good but the most noticeable feature of Jax is that it is small, loud and crowded.
Love it. Great happy hour drink and app specials. Dig the vibe.
I adore this fish house. Hot happy hour and hot servers. Their "lemonade" is to die for and the food is incredible.
