Yes, we know everyone has "the best way" to cook a turkey. Cook it on a low temperature for a long time. Cook it on a high temperature for a short time. Wet brine it. Dry brine it. Cook it breast down. Cook it breast up. Cook it sideways. Stuff it. Don't stuff it. Use a cheese cloth. Baste it. Rub it with butter. Etc, etc.
I'm not here to tell you the best way to cook your turkey. What I am here to tell you is the best turkey to get.
Sure I understand, some of you may say it doesn't matter what turkey to get, it's all how you cook it. And there is some truth in that. I mean if you screw up the cooking then it doesn't matter (hell, burnt flank steak tastes just as bad as burnt filet). However, all things being equal (i.e. if you don't screw up the cooking part) - then for my money there is only 1 turkey to get, and that is a heritage turkey.
You can go online and read all the reasons why a heritage turkey is best. You can read how because the bird is older when it is killed it actually develops a fat layer. You can read all kinds of things, but I'm not here to tell you the science behind it - I am here to tell you about the taste.
Jesus Christ this bird was like the prime rib of turkeys. There was a thick layer of fat surrounding the bird and many of the slices. The meat was succulent and smooth like velvet. It was so moist and soft and fatty it was unlike ANY other turkey I've ever had.
And you pay a hefty price for this bird - roughly $230 for a 25 pounder. But it was worth every penny. Provided I can afford it I will never ever cook a turkey that is not a Heritage turkey.
It was hands down the best turkey I've ever had.
Oh, and while I will keep my word and not try to force on you my idea of the best way to cook a turkey, I will say with a Heritage bird no matter how you prepare it, make sure the internal temperature IS NO MORE than 160 degrees (150 - 160) when you take it out.

Our heritage was the best ever this year (about our 4th year or so) - with the Heritage thermometer we took our 21.5 lb. unstuffed bird out at 150 degrees and it went up a bit in temp but it was soooo tasty and delicious.
Difference this year was a bit lower on the temp and unstuffed.
And the new pancetta golden del apple dressing I tried was to die for as well - we had a very happy and full house (12 total, kids and adults) in sunny Arizona last Thursday.

Yes their heritage turkeys are excellent quality but don't make the mistake of ordering one, canceling the order, and trying to get your money back. I too want to support the small suppliers Heritage Foods represents but it isn't doing the small farmers any favor if Heritage Foods business practices are not strictly up to snuff.

Heritage Turkeys are the most wonderful, succulent, delicious turkeys that I have ever had. This is the fourth year that I have ordered two Heritage turkeys for Thanksgiving, and they are the only ones I ever want. I have made them many different ways, since I love to try out recipes, so I have brined them, injected them with citrus, basted them in rendered duck fat and herbs, or cider and sage butter. I have cooked them in large ovens, small ones where they had 1/2 inch of space on either side, high temps, low ones and everything in between. They have been consistently fantastic with an amazing flavor and texture. The people at Heritage are so knowledgeable and lovely. I have ordered great food from them over the years: sausage, kobe beef burgers, bacon, etc. and also frozen turkeys for use at other times in the year that were just as fab as the fresh ones. I highly recommend them, and am so happy to support them and the small artisan farmers that they get their fantastic products from.
