I loved the veg options!

The restaurant is very open and breathable, unlike a great number of claustrophobic-type sushi eateries.

I did subtract a star due to service. My company and I are both vegan and somehow ended up with eel and roe in our stomachs to our dismay.

We went over the order with the waitress, but she still brought us the dish, because she thought it was marked (after we confirmed our order without them). They did remove the charges, but it's not just about the money...if we had allergies, there would have been serious issues.

I hope this was an extremely rare mistake...otherwise, I love it there.

Okaaaay time to deduct a couple of stars from Fujiyama Restaurant (FR.)

Upon returning, I learned that everything (i.e. the non-sushi dishes) left much to be desired. To start, I am quite annoyed by the fact that NONE of the restaurants around here knows how to make bibimbap the right way -- meaning if beef is mentioned as part of the dish, I expect more than a teaspoon of meat. Seriously, they just can't hold a candle to Kaya's version (in Columbus.)

Secondly, my nabeyaki udon. (Apparently they were out of both kalbi and bulgogi when we went, hence, my last resort at any restaurant: noodles.) Two surprising factors to the dish were the zucchini and imitation crab tempura -- neither of which lended any flavor to the overall bland broth. Instead of the typical miso broth, I was presented with a heavy skein of chewy udon in a soy sesame broth. Did I mention it was tasteless?

Lastly, the chicken teriyaki. While I found the sauce to have the right blend of the sweetness of honey and the tang of white rice vinegar, its perfection was marred by the preparation of the meat. Expecting pan-fried chicken cutlets, what was brought to the table, however, were broiled chicken cutlets drenched with the aforementioned sauce.

The sushi still remains top-notch though. Low carb dieters take note: low carb sushi options available. High carb dieters (like myself) will happily stick to the extensive list of rolls.

Came to Fujiyama during the last week of May.  We had just moved from SF and were dying for anything Asian... Fujiyama is just down the road from where we live, so, hey, why not?

We were seated by a friendly hostess and were given tea while we looked over the menu.  This place (as with all the other Japanese restaurants in this city and beyond) is clearly owned and operated by Koreans.  That's fine, I'm used to it... as long as the food is good, it's whatevers to me.  Anyway, my husband and I ordered the Pink Lady roll and 2 orders of dolsot bibimbap.

The sushi... large, fresh ingredients, tasty, nice presentation... piqued my interest and I will definitely go back to try some of the other rolls in the future.

The dolsot bibimbap?  Oh jeez... now, I'm Japanese, not Korean, but I've ordered this enough times in my life to know how it should be made!  Maybe they knew we weren't Korean and assumed we were too dumb to know, but the whole point of this dish is the rice cooked IN the stone pot to get the nice crispy edges!  Not to have the veggies and meat in the stone pot with the rice served ON THE SIDE in a plastic bowl!  They even took the liberty (and I say that with some sarcasm) to fry the egg beforehand.  Um... how do you expect me to mix and incorporate a fully cooked egg into my rice?  And the other thing that bugged me was that, while I was grateful they were courteous enough to serve the chili sauce on the side, there were chopped up pieces of chili peppers mixed in with the veggies!  Way to let the customer control the heat.  Jesus, for that, I didn't touch my bibimbop beyond the first bite... I just ordered another Pink Lady to fill the void in my stomach!  Needless to say, the dish had so much potential to be great!  Just the execution was... disappointing.  *Sigh*  I was so disappointed.  

To sum it up... my sushi experience was great.  My dolsot bibimbap could've been great had they served it properly.   But as I said before, I will go back to try more sushi, maybe try the other Japanese dishes, and for the sake of seeing a fellow Asian face.

Fujiyama is a great sushi place. Very friendly and a great place to pop your sushi cherry. They have fair prices, good Japanese beer selection and great veggie sushi selection. Make sure you get a salad their ginger dressing is to die for. Don't forget to save room for desert so you can enjoy some crazy Japanese ice-cream flavors.

As of this writing they don't open until 4pm so make sure to call in advanced before you show up for a late lunch.

EDIT: After some recent great visits I have move this restaurant up to 5 stars!

Fujiyama will truly surprise newcomers who underestimate it based upon outside appearances.  Forget that it was once a Pizza Hut (this was so long ago and means nothing).  Their rolls are easily the best in Toledo, if not all of Ohio.  But for true sushi fans, their nigiri and sashimi do not disappoint.  They give you 2 slices per order, and they are properly portioned.  The unagi is the best I've had, served hot and blowtorch-fresh.

If you like sushi, do not waste your time elsewhere.  This is the only place left in town that does it right.

If you want sushi in Toledo, this my be the best place available.  I just thought sushi was sushi wherever I went in town.  But there is a higher quality of sushi here and I believe they have true sushi grade fish.

Good food, great miso soup.  I am vegetarian and there are a lot of choices.  I much prefer Kotobuki, I think it is the best sushi in town.  If I want to go out for sushi on a Sunday, when Kotobuki is closed, I go to Fujiyama.  I haven't been disappointed yet.

I am not a huge sushi fan, but I won't say no if someone else wants to eat here.  I just tend to stay with tuna and salmon, but this place is really good.  And the bento boxes are excellent.  Good portions, too.  Also great for carry out.  I deducted a star only because of a few service problems and because of the decor.  Hard as they might try, the ownerscan't mask that it used to be a Pizza Hut.  As one reviewer pointed out, though, it is spacious.
