If you work up an appetite walking up and down Pearl Street with the Flat Irons in the backdrop, drop into Foolish Craig's for some grub. The artwork covering the walls and ceilings is colorful, unique, down to earth and fun - reminds me of a coffee shop you'd find on Haight in SF. Good coffee, good service and tasty breakfast crepes. Nice work, Craig.
The Polenta Stack appetizer is my new favorite thing at Foolish Craig's and here's the description of it from their dinner menu:
Polenta Stack
balsamic portabellas, polenta cakes, goat cheese mousse, spinach chiffonade, red pepper coulis, marinara
Well, it looks lovely, and tastes lovely too.
It was my whole meal one night when dining at Craig's with friends, Polenta Stack and a drink. Very satisfying.
The crepes are good too.
Years ago when I first started going to FC's, it was for the breakfasts. I especially like their version of Foolish Huevos, with crepes instead of tortillas, of course....

I had a turkey sandwich and fries. I like that you get sprouts, hardly any places serve them now with the airborne problem. Cheese is extra, that sucks. The iced tea had a weird taste to it. The fries were really crispy, and the waitress even said we were shorted fries and brought us a whole plate of more, and of course we had to eat them. I didn't think the sandwich was outstanding, but they get extra stars for service. Maybe I should have had a crepe.
Good crepes! Good other stuff too, but the crepes are the thing to get.
The staff is usually some CU student, which if you can stand that, then it is probably worth checking this place out.

gimmie a crepe homes! just gimmie a crepe...
we were in crepe mode...after boarding/skiing at copper mountain for the long weekend, and had been missing the crepe stand in breck (crepes a la carte)...we stopped into boulder on our way to the denver airport...and look what we found....
foolish craig's! you can crepe it sweet or crepe it salty...cheesy...or veggie...(you get my point). they have a ton of different crepes on the menu (which i think were like boulder style omelette's, but they had omelette's too), they had some great apps that were specially priced for happy hour and were damn good (wish i could remember them all). i pretty made my own crepe with some veggies, cheese and potatoes and it was the crepe of my dreams (well if we're talking salty, not sweet).
if you're on pearl street, check out Foolish Craig's...was an awesome parting meal to end our 'rado trip.
Bar seats are the way to go if you are alone... like me... :(
The bartender was super nice and you get an all access pass to watch everything that goes on in the kitchen which is pretty interesting. The muscles and the brie were fantastic. I HAD to save room for a dessert crepe and I was slightly unnerved by the fact that there was maybe a half a JAR of nutella in my crepe. For those of you who have had the amazing nutella experience, you know it is a thick, rich, wonderfully chocolately and hazelnutty spread. That being said, a little goes a long way... and a lot... well... is too too much. I could hardly taste the strawberries or the actual crepe at all. Next time, back off a little guys! this isn't a nutella revolution!

Low key atmosphere, high end food. We went for the crepes - but the crepe selection is limited for dinner (only one vegetarian one! come on - this is boulder...), so I settled for a spinach salad with roasted tofu. I was so surprised - this was definitely not your ordinary spinach salad. Fresh greens, check. Walnuts and vinnaigrette, check. But the roasted tofu was really, really good. My friends had the veggie lasagna (rave reviews) and veggie burgers (they had malt vinegar for the fries, so my British friend was happy). They used simple, plain ingredients in simple combinations to achieve masterpieces.
As for the prices, yes it's definitely a dinner out, but the portions are very generous, service helpful and you're paying for quality food.
Only drawback is limited outdoor seating resulting in it being a little crowded in the summer - but really, that just makes you feel like you know the hip joints in boulder...

AH. So said everyone. Way too much hype: this place.
So I went, and it was good....but didn't live up to its hype.
Here is the deal: decent prices, o.k. selection, cozy atmosphere, and apparently when you add lemon juice to creamer it curdles? Well, it does...and my tea was ruined. The real question is now: is this common knowledge? I didn't think so, but the people I were eating with had a good laugh. The waitress however was not amused: I got 'The Look' asking for a new cup of tea.
Eh. Maybe it was a stupid move adding creamer to earl grey when there was already a lemon wedge there...or maybe people need to chill out and cut some slack, especially in the morning hours.

Unassuming and remarkably friendly, this is a nice place for a casual meal. Crepes and sandwiches are my favorites here.
A bustling joint, Foolish Craig's serves up delicious breakfasts, lunches and dinners but is a tad expensivo in my humble opinion. For breakfast, the focus is crepes, which they prepare all ways, and for other meals you can get the basics done well with fresh veggies and a nice presentation. The service has always been great even during busy periods.
Delicious savory crepes and excellent eggs florentine/benedict. Perfect place for a quick sit down breakfast.
My love for brunch developed largely because of this place. It's got a wonderful, relaxing feel, which is as much of a draw as the food. Crepes are good, but I agree, a tad expensive.
