Fan-freakin'-tastic.
I cannot say enough great things about this place so the list below is by no means comprehensive.
Why I loved Cypress:
1. Black napkins so I don't get the awful white piling on my pants after the cheap, white napkins used by most restaurants.
2. The hostess, the person who escorted us to our seats and our server were exceptionally polite.
3. The wine list is spectacular. A stunningly huge array of bottles, half bottles, magnums, etc. Our group drank a bottle of white and a bottle of red and both were amazing.
4. The three course menu is a great was to try more than one item on the menu and will not break the bank. An appetizer, entree and a dessert is $39.00
5. I had the candied bacon (which might have been the culinary equivalent of drying and going to heaven.); the fried chicken (a well seasoned piece without the bone to work around) and the coconut cake (soft cake, frosted in coconut and then sprinkled in toasted coconut)
6. My husband had the Sashimi Tuna & Oysters and the Grilled South Carolina Beef Tenderloin. His tuna and oysters was amazing.
7. Our server was great. He provided a good knowledge of the wines available, was attentive all evening and even offered to bring us a copy of the chef's cookbook to peruse when I fawned over the candied bacon.
My wife and I stopped in the upstairs bar for a drink and some bar fare after deciding we wanted to do a little appetizer crawl. After walking around Charleston and seeing a lot of old buildings, walking into Cypress with its modern decor was a bit unexpected. The space was impressive with its glass encased 3 story wall of wine. We settled at a table by the window overlooking East Bay Street.
My wife had a mango mojito which was very good and I had a glass of wine. We split a country fried steak which probably isn't a typical dish served at an upscale restaurant, but hey we're northerners visiting the south! It was presented nicely on a bed of mash and green beans. The waitress was friendly and overall it was a nice experience.
good food good company had the sashimi tuna and oysters for app (delicious) and the crisp wasabi tuna (okay) for main. if the main course was a bit better i would give a five star.
i would come back for just the sashimi tuna and oysters.

I was fortunate enough to visit Cypress on my last visit to Charleston, when I visited Magnolia. Cypress was a step above Magnolia and 2 above Blossom. The server was personable, efficient, and on top of our order.
The appetizer I devoured was the toasted brie cheese over salad with a raspberry vinaigrette. The main course was the Steak Diane, cooked to perfection over a ring of mashed potatoes. Dessert was a chocolate souffle.
Cypress has a huge selection of wine, 3 stories to be exact, and over 4500. including an entire cooler of white along with the tons of reds.
Everything was great, only item, souffle was a bit dry, other then that, an amazing meal!
We came here after having two acquaintances recommend it. We started off with the scallop and bacon appetizer, which was an inspired choice - the scallop was fresh and cooked perfectly, and the bacon was juicy and succulent and well worth the clogged arteries. For my main course, I opted for the 16 oz. bone-in ribeye while my girlfriend ordered the red snapper. The ribeye was excellent. I actually furrowed my brow a little when our waiter mentioned that it was very lean meat, because I find that well-marbled meats tend to be a lot juicier. Not so in this case. Cooked to perfection, and incredibly juicy. The red snapper was awesome. Flashes of steamed seafood in Hong Kong entered my mind while I sampled it, and this is a very high compliment indeed.
To round it off, the waiter was very friendly and the environment was upscale, modern, and impressive.
Now for the catch: I felt that, while prepared to perfection, the menu items were rather undeserving of their $30 to $40 prices; they didn't seem very special or unique.
That said, I'd wholeheartedly recommend Cypress to anyone visiting Charleston.
A nice touch of Manhattan decor in the Old South. Start out in the upstairs bar where you can look down on the open kitchen and decide what to order for dinner. The three story glass faced wine cabinet is cool (I guessed room for 4500 bottles but the waitress said 4800).
The food was excellent with many table side preparations. I went for the grilled Kansas City Strip and the steak fries. Funny thing is that they sliced the steak and it was in smaller prices than the potato wedge sized fries.
Desert was a scrumptious chocolate puffy thing.
