There aren't many good food options in Vernal, but Curry Manor is definitely a reprieve from the other places you might choose in town. In fact, just skip all the other places and go to Curry Manor. It's been over a year since my last visit, so I don't remember exactly what I got for entrees. But I do remember that I went three nights in a row and got a side salad that had grilled squid on it. (I know that sounds like an odd salad ingredient, but it actually worked really well.)
