I adore the Corralitos Market and Sausage Co. so much that I bring all my friends from back East here when they come to visit me. Service is spot on: ask for Karen to help you. I always come here for a picnic with my family in the Spring time. I would be lucky to get out of there with out spending a few Benjamins.
The sausages and tri-tip are awesome! So awesome that my SO brought them to a bachelor party and all the guys went wild and crazy over them (more so than the strippers).

Santa Cruz County is FULL to the gills with vegetarian places. Go to one of those. Corralitos is for those of us who crave eating rotting, dead things.
Corralitos market ROCKS. I can easily spend $250 in there to put sausage in my freezer.
It's a haul from where I live but it's worth it. -

This is a little tiny market in "beautiful" Corralitos that just happens to make the best freakin' sausages in this part of the country. I can walk here from my house and often do. The store is crazy busy on weekends due to all the people that come to hang at the corner it's on. They make about 20 different kinds, all great and you can even have them cook and serve you one on a roll. I have people from all over the world in there....seriously..it never ceases to amaze me.
This place is a must go if you are a carnivore. -

The nicest people selling the best meat! It's a quaint little market, with a country feel; almost like you've walked back into time. The owners have always been generous with the community of Corralitos too, sponsoring youth groups and the annual pancake breakfast. It's not unusual to see children selling their homemade items out front. A great place to visit! An even better place to live.

Small grocery store feel with a great selection of sausages and some smoked meats along the back wall. Why only 3 stars? Their retail cuts of meat that they have availble don't quite hold up to what I would expect from a destination meat locker - not in quality, but in selection. I had expected to see some serious cuts of all types for me to be inspired by - but they only had a few basic beef retail cuts (aside from many premarinated and vacum packed versions of tri-tip) and a few pork cuts. They had a minimal selection of lamb.
From a quality and service perspective however, I couldn't be happier. I picked up a couple racks of baby backs and two tri tip sandwiches. The baby backs were trimmed down and skinned so they were smaller than what I'm used to, but they were thick, meaty and lean - not the Safeway or Costco fatty racks mind you. These were beautiful - only to be enhanced by a 3 hour smoke (Hickory, oak and rum infused allspice berries) and a little Pineapple BBQ sauce back at my place. The sandwiches were pretty basic - thinly sliced hot smoked tri tip and bread. Served with your choice of BBQ sauce or Mayo. Simple, yet effective. Great friendly service.
I think the sausage is the real offering there. I picked up some breakfast links that I have yet to try - it may get them another star from me as I've heard that sausage is king.
I particularly got a kick out of the sign hanging near the cash register that reads "All unattended children will be given an espresso, a free puppy, a whistle and a drum".
I'm reserving my extra star for the sausage tasting. -

After visiting Freedom Meat Locker and Sausage company just down the road a piece I will happily be driving past Corralitos from now on.
The place was filthy, the service was not helpful and I don't think one of them speaks english because he got the only two requests on our sandwiches wrong.
Sorry Corralitos, compared to Freedom Meat Locker . . . you suck. -

Holy crap this place is awesome. It's completely out of the way of wherever it is that you're going but also totally worth it. They make their own sausages, they make their own jerky, they make a ton of house marinated steaks, pork loin, etc.. pretty much anything meat-related you will find here and it's all made in-house.
If you need to pick up some supplies for a killer BBQ... come here with the quickness. -

Huge butcher shop ,nice steaks, but the Sausage is the king here.
I got a buffalo and Erin the cheese Bavarian. We walked across the road to a little park area with picnic tables and went to town. I cracked a Noble Pils and it was heaven on earth. Erin let me have a bite of hers and I finished up and bought a pound for the beach trip.
Awesome place, will make it a point to go here on the way to SC area!! -

At least monthly, and often more often, I decide to undertake a "bon appetit" recipe. As is their normal operandi, they request a particular cut of meat, my local butcher does not provide.
Now, I don't even bother to try to procure pork belly skin on, Boston butt, etc., I just call Corralitas Market, and pick it up a few hours later.

Weak and weary after a long Friday night of drinking at our local dive bar, my roommate, our friend, and our random Australian couch surfer (that we met at our dive bar the night before), loaded up into my Fit and headed to the Corralitos Market.
I had heard great things about the sausages from this market, but had yet to try them. When we arrived we were greeted with an amazing aroma. It smelled super smoky, the good kind of smoky, not the "OMG the kitchen is on fire!" kind of smoky. We head back to the meat counter and selected a bunch of sausages to barbecue the next day, we then also ordered sandwiches for lunch.
I ordered the Jalapeño Cheddar Sausage Sandwich, it was served on a roll. For toppings they have a little self-serve bar type-thing with a couple different kinds of mustard, some onions, pickles, tomatoes, and ketchup. I also asked them to put cheese on the sandwich, this cost extra, then I added onions and mustard. It was simple but amazing. The sausage was so flavorful and paired well with the onions and mustard, the perfect hangover cure.
The next day we barbecued the extra sausages we had purchased. They were even better barbecued! We had more of the Jalapeño Cheddar and some of the pepperjack. The pepperjack were surprisingly more spicy than the Jalapeño cheddar ones, and I feel like the pepperjack were also cheesier.
If you love sausage, I highly recommend that you make a trip out to the Corralitos Market, it is worth the drive.
(I also heard that they are sometimes at the MPC farmer market selling sausage, but I am not 100% sure about that. Can anyone confirm?) -

A tiny market with a wall covered with awards, this place is amazing for its selection of marinated meats and sausages!
We came here on a recommendation at Nicholson Vineyard Winery we were tasting at. Since we had time to spare (we were waiting for friends to get there), we decided to see what the fuss was about and pick some sausages up.
After a long perusal of the goods on display, we ended up with some Creole Sausage and some Cheese Andouille. We didn't pick up any of the marinated meats since we didn't have a cooler to keep it cold since we had plans later that night and home was sort of an hour away.
But after tasting the Creole Sausage, I am HOOKED. I totally want more and want to try the rest of their selection. So delicious. -

Wow. What a spot. After a long hike on Mt Madonna, my crew and i drove by this place accidentally. All i saw was "Sausage Company" and i was almost screaming at my driver to "pull over, pull over, pull over". When you walk in this place it smells like what a butcher shop should. But its so much more then that. They have groceries, fish, other little items. But the smoked sausages were unreal. We had a traditional Bavarian sausage which was amazing. A cheesey Bavarian sausage which was my favorite, and a few more which i just inhaled at dinner but for the life of me can't remember what they were (one was a beef sausage). And because we were glutinous, we ended up getting a 3 lb tri-tip roast marinated in their home made bloody mary mix.
If you are in the area, and need meat for cooking, you MUST stop here. And then go back, and back, and back.
I am still drooling over the sausages. Too bad i live in Illinois. -

Public Service Announcement:
Beware of busting belts and rocketing pant buttons while in the Corralitos Area. People have been known to wear the wrong types of pants when eating the legendary sausage sandwiches here.
I don't want you to lose an eye.
I advise for the ladies preggo pants and for the gentlemen to rock the Nacho Libre style stretchy pants. Thus you will enjoy your cheesy bavarian sandwich ($5) in comfort.
If cheesy B ain't your thing, select another of their award winning weenies (andoullie, kielbasa, jalapeno cheddar, I could go on but why...) to get splayed, heated, flopped in a pillow of bread. Slather your choice of condiments - kraut, onions, tomatoes, relish, ketchup and two choices of mustard - and you're looking at one of the best local secrets Santa Cruz County has to offer. -

The fact that this place has 5 stars after 55 reviews should really tell it all. They sell so many delicious meats, it's hard to know exactly where to start...
The Cheesy Bavarian Sausage is I think what most locals know them for. It's a sausage with cheese in the middle, and it's amazingly well done and tastes great. They have tons of other great sausages, cheeses, meats, and random things in the market that make it an easy place to go to purchase everything you need for a great meal.
Some of my favourite meats from the pre-marinated section has to be the teriyaki and Santa Maria skirt steaks, the Santa Maria and spicy house tri tips, and the cajon and Hawaiian BBQ chickens. They have a wide variety of other skirt steaks, tri tips, pork, chicken, and other meats pre-marinated and ready for cooking at the shop. You'd be hard pressed to not find something you like.
Additionally, they sell lots of other goodies, from local favourites like Gizditch Apple Pies, to hard to find items like specialty European candies, including Aero Bar and Happy Hippo.
All in all, Corralitos is a great place to pick up some good food for dinner. My only wish is that it was open a little later (closes at 6pm most days), as it's hard to get there in time after work.Listed in: Nummies

Making the trip to Corralitos is like the trek to Mecca. MEAT Mecca! This is not somewhere you go to pick up a can of green beans, you travel here exclusively to stock up on insanely delicious, locally raised meats. They've got like 15 kinds of sausages. They have another 15 kinds of premarinated meats, and everything in between. They even crank out some hot sandwiches if you need some immediate gratification on the way home.
You can find Corralitos meats featured, by name, in several of the better restaurants in SC. You can even find Corralitos meats in places like Shoppers Corner. The difference is, here you are getting it from the source, and getting it relatively cheap.
Its a holy pilgrimage that all carnivores must undertake. Salaam Aleikum!! -

We headed here after a bike ride in the nearby hills.
Entering the establishment, it initially looks like a lot of small grocery stores, but the smell hints at a lot more. That smell is of salted meats. Head to the back of the store and you come to the meat counter, which is W I D E !
It's late lunchtime, and there are enough customers in this very out of the way place to fully justify having five servers behind the meat counter.
I go with the sausage sandwich, which means making the decision on which type of sausage to have in my sandwich. It's not an easy choice given the massive sausage selection. After some pondering, I went with the pepper jack sausage.
After being sliced, heated up in the microwave and being presented to me in the middle of a bun, I add my condiments, grab a beer and a Gatorade from the fridge, pay, and head outside to join the throngs enjoying their lunches in the small park across the road. Food lived up to its promise - it was great!
I'd heard about this place before, and after somewhat stumbling upon it today, it totally lived up to its reputation. -

Small market, a bit of a drive off Hwy 1, but worth the stop. They make their own sausages, bacon, jerky and marinated meats.. from the standard pork and beef, to the healthier options of chicken and turkey, to the more exotic choices of buffalo, ostrich and venison. All quite delicious. Well, that' I've tried so far.
We've had their bacon, country pork sausage, turkey sausage and Greek marinated chicken breast. The chicken breast cooked up moist and delicious.. and the bacon did not shrink up to next to nothin' like most. Great stuff. Have some venison sausage to try next... and am looking forward to going back for their jerky and Bloody Mary marinated tri tip at some point.
While the meats are the main draw, this little market also serves up other goods... breads, dairy, canned goods etc.. which are suprisingly varied for it's little small town location. I saw Ajvar on the shelves, some local and other small production wines, organic dairy and so on.
Service is very friendly and the meat guys are particularly patient and helpful.
They don't sell to other stores (that I know of)... but I have heard they will ship to private parties, so you can always inquire about that if you're not local.
While you're out there, call up Windy Oaks Winery ( http://www.windyoakses... ) for a visit. They're not far up the road.

This place is a diamond in the rough. You literally have to drive through 5+ miles of countryside in the central Monterey Bay Area to find the Corralitos Market & Sausage Co, but it sure is worth the trek!
Not only do they have the most incredible selection of sausage and meats in the region, but it's gourmet, fresh, and reasonably priced. As a bonus, like any deli, they come equipped with a variety of cool tasty and exotic drinks, like ginger beer, old tyme Sioux City Sasparilla, and other tasty treats.
A little known fact: most of the high end restaurants that prepare sausage in the region order from Corralitos. Those high end restaurants can't be wrong! -

Most of the world will never know of this place, what a total loss to the world. There's no website and it's tucked in the middle of nowhere in Corralitos, Ca. Huh! It's just north of Watsonville, Ca. Huh!
The reason I tell you this is because you should NO doubt, take a very short detour off Highway 1 and get some sausages for your trip home and for you to NEVER pass up this place up again. They also have a sandwich shop inside....
I get sausages brought to me and when I share them with friends, they all want to know where I got them. I grill lots of stuff on my grill and there's no doubt that the sausages are the top tasting items flying off my grill
It will never get better then this place. They do full smoked ham and turkey's and they overnight right to you....... It's not expensive. -

If you've been there, you can appreciate how weird it is to see a bus full of Japanese tourists who've been driven to the middle of nowhere, just to buy sausages and smoked meats. If you haven't had a smoked turkey from the market for a holiday meal, you're missing one of life's treats. And like Zito's Bakery in Greenwich Village, Corralitos Market's bacon, sausages and smoked chicken or turkey seem to find their way--often by name--to many of the best area restaurant menus.
We live in Santa Cruz County, and there are two perpetual requests from friends living at a distance: feel free to bring anything from either Gayle's Bakery or the Corralitos Market. Their reputations extend far (far) beyond the Monterey Bay Area. -

Homer Simpson... and me, of course, love this place! Processed meats are their specialty and there are some great sausages and various marinated cuts of beef, chicken and pork. Did I mention their bacon? Applewood smoked done perfectly.
How any canivore could give this place anything less than 5 stars is beyond me.
The downside is that it's pretty far away from where I live. The upside according to my cardiologist is that it's pretty far away from where I live.
But you can also find them at a few of the Farmer's Markets around town. They frequently can be found at the MPC Market on Thursdays with a sampling of their great wares. Enjoy. -

Growing up in the Monterey Bay Area definitely has its perks. Corralitos Sausage Company is one of many of Santa Cruz County's best kept secrets and admittedly, one of my addictions.
Being family owned, the quality is unsurpassed, the service is what you would expect from a small town business.
Upon entering, one will notice that toward the rear of the store, the meat department display exhibits a seemingly endless array of handcrafted, apple wood-smoked sausages made of various types of meat, seasoned with numerous ingredients. The sausages are made out in the open and you can see what goes into the product.
The sausages are what make this place a must visit when visiting the Santa Cruz Area. Cheesy Bavarian, Jalapeno Cheese, Chicken Santa Fe!!! Linguica!!! Andouille!! Cajun!! Ostrich! Lamb! the list goes on and on!
Then there are marinated, prepackaged cuts of meat...house teryaki, bloody mary, BBQ, Bourbon marinade....Oh yeah....this is as good as it gets people!! I'm starting to get the shakes now!
Here's a little story for you. I was on a work assignment in Southern CA for over two years and I would order for my company. THEY WERE ABSOLUTELY HOOKED! They had to have it every friday!!!
All at the company knew it was BBQ Friday when the neatly packaged Styrofoam package Jonne, neatly packed for us arrived. The worst part about BBQ fridays was that the grill was adjacent to the building's air intake duct!!! The people sharing the building (All 5 floors) would go nuts! Wahaha!!
If it is too far to drive, I highly recommend you call and place an order. You'll find it difficult not to continue to order! You'll be Jonesing for a fix!!
I cannot walk out of this place without spending at least $150!! Be warned!!! -

Man I love this place. Thinking about it floods me with brutally nostalgic memories of summers in Santa Cruz, grilling up sausages on the mini webber, sitting on my deck. The Corralitos Market & Sausage Company is a hidden gem - obvious from the fact that there are only 12 reviews of it so far. Not many people even know about it, and I suspect that of those who do, only a fraction actually know how to get there. I couldn't even give someone directions; I rely on muscle memory every time I come here.
As for the product - I've never been disappointed with a purchase from the Corralitos Market. Their marinated meats are delicious, and they come vacuum packed so they can last a good 1-3 weeks. I particularly recommend the teriyaki skirt steaks, though the other steaks are good too and their chicken stuff is also yummy. As as the porks. And the fishes.
Ultimately I could probably marinate my own meats though. The true wonder of The Market is their sausages, which come in at least 10 different varieties. I couldn't even really rate them because they are all delicious, although the Cheesy Bavarian is exotic and amazing enough to warrant special mention. But I mean they've got everything - ostrich, venison, buffalo, lamb..
If you can find your way to the Corralitos Market & Sausage Company (and I'm sure you can follow google maps directions, right?), I /highly/ recommend a trip there to stock up for your next BBQ. But I also recommend a trip there just to buy $88 of meat to keep around for the next month, like I did a week ago.

I have a friend who lives near by and he turned me on to this amazing place for meat. I have had several times the marinated skirt steak. It is so wonderful I can't risk trying anything else! I live so far away that I can't come here more often, which makes me very sad.

I'm not much of a red meat eater - a childhood of weekly shriveled roast beef Sunday dinners overflowed my beef quota for this lifetime - but I will eat skirt steaks and other marinated meats from this place. It's fantastic. The same evil soul/friend that turned me into a red wine drinker got me to eat my first steak in over 20 years with the fruits of this joint's labors.
An ex-girlfriend complained that their meat was dry and stringy - but that had everything to do with the fact she overcooked it to death on my gas grill and nothing to do with the meat itself - I was really looking forward to skirt steak that evening and I was saddened by its destruction at her hand. I mention this comic tragedy to point out that anyone can ruin a good cut of meat with bad cooking, and the cuts of meat here are *very good* and deserve a much better fate than that - your tummy. -

Corralitos Market is always the best place for the sausages and they have everything you can think to order. The only way the service could be impaired is because it is so popular there may be a slight wait to order on the weekends. Less than anywhere else though, for what you get is well worth the wait. Everyone here has described the wonderful meats, but you will enjoy the experience, come on down to this great market. I have for over twenty years. It is a place to stock up, for sure.

Not only do they have amazing meat - they go beyond the call of duty! I needed pork belly for a very special dinner party. I called ahead and they said to come on in on the regular delivery day, but it wasn't delivered. They called around and not only found me some (it's very hard to come by) but went and picked it up for me. Thank you Dave and crew!!!!! You saved the day!!!!!!!

I understand this is a meat market. However it is also a famous stop for cyclists. Cyclists in Santa Cruz are a varied bunch but most tend to care about their health. After riding 50 miles today I was really excited about a sandwich but they do not offer a single non-meat option. No tuna, no avocado and cheese and no egg salad or peanut butter and jelly. Please please give me an option. Peanut butter and jelly would be great.

I mean SERIOUSLY! Look at all the beauty in those cases!! They have what, 327 different types of homemade sausage? In-cread-eeee-blay!!!
The sausage is to die for and the country store that houses it all has so many different things you never knew you needed. Dozens of different types of soda, candy.. Imported foods, Kindertoys.. Craziness.
If you're grilling, stop in and get something to put on the grill (I recommend the jalapeño cheese sausage and the venison. And while you're at it, get a tri-tip sandwich to eat while walking around, because they're EPIC. -

Come here for the meats; I noticed a review of the market itself, which misses the entire point. It's like going to Disneyland, and never getting out of the parking lot. Yes its part of the place, but not the point!
The stand outs here (mind you, I keep kosher, so pork is a mysterious mystery to me) are the chicken and the sausages; for whatever reason, the steaks are good, but never really pop for me.
The marinated chicken has consistently been the most delicious, juicy, moist, and flavorful bird I've had. Their Pesto Chicken is fantastic. Great flavors, good on its own or as a BBQ sandwich.
The sausages get the same accolades: juicy juicy deliciousness. If sausage was normally like this, the business of sausage making would be viewed like Willy Wonka, not like something out of the works of Upton Sinclair. We'd all be lining up for tours of the sausage factory.
The rest of the store: has a lot of interesting local things (Gizdich pies, that sort of thing) and some truly strange things (Cockta: soda of Slovenia!) that have no reason to end up there. Only adds to the charm. -

This is the best marinated ribs & tri-tip, especially Santa Maria and Santa Fe style. The meat is tender and you can't beat the taste. I have not had anything like this from specialty meat markets or dining out.
Step into another world as you make the drive. By the time you reach the market your are transformed into a mellow zone. I love the wood carved sign that welcomes you to the hub of town, displaying a rustic map with points of interest. Take the time to sit down at the picnic bench, across the market, read the bulletin board postings and absorb the relaxed state you've entered.
It's not just the meat, it's the whole Corralitos experience. -

so tasty.. had one of their sausage for both dinner and breakfast today. Yummy stuff and I can't wait to go back.
Place is well sorted and organized with regular groceries. The meats are sectioned off on either frozen or fresh meats. Traditional glass display windows and stainless steel counters tend to be the focal point of the place. Despite its isolation from what seems to have a low population, regular staple and meat prices are very reasonable. Though this place has some traits of Trader Joe'ness, it is old school with old school presentation and displays. This is not to be confused with is sold at Trader Joes or for that matter Andronicos. Agreeably out of the way from North Bay, it is well worth the drive from the bay area. The butcher shop here is top notch, as so is the selection. Fillet Mignon, Chuck or NY Steak, bone or ribs... all you need are some hot coals, salad, wine, beer and a hand full of matches and you are in business for a great picnic or bikers convention.
