This restaurant is what I reserve my 5-star reviews for.
It was simply amazing - make sure you go hungry and stay for all three courses.
We started with an amazing cheese platter, and then the leek pancakes with house-smoked salmon pictured above. Mains were beautifully tender lamb chops cooked perfectly and a beautifully cooked and presented salmon.
The desserts were huge, maybe almost too big, if such a thing can ever be true of a dessert.
The steaks looked amazing, but I think you'd be hard-pressed to get better than the other items on the menu, and I'm glad we went for them.
The other standout were the staff who were over-the-top knowledgeable about their menu and produce. When we asked if the salmon was smoked in house, our server gave us the full run-down of how it was prepared out the back.
If you're in Rapid City, make sure you don't miss out
My son and I stopped here when we were checking out colleges in the area. It was a Friday night and they were very busy but very accomodating. We sat up at the small bar and were very well attended to. Our meals were wonderful. We were quite surprised and delighted to fnd this Chef-owned treasure. If you're a foodie or even just enjoy a lovely experience when you dine be sure to try it out!
Note that you have to look for it the signage is rather unassuming and it simply says "Bistro".
I am giving the Corn Exchange 5 stars only because there isn't a sixth star! This is a great stop for any "truly appreciative foodie" who enjoys gourmet dining and understands the costs associated with getting the finest and freshest ingredients with the skills of a gifted chef who choreographs a divinely balanced meal. Thanks to the reviews of fellow Yelpers, this was one of the highlights of my trip!
I began with a glass of their Vivacious Vicky Washington State white wine and their sage-rosemary sourdough bread with butter gently sparkling with Hawaiian seasalt crystals. Next, I devoured a spring salad with goat cheese and a delicate (15 year old) sherry vinaigrette. My main course was a melt-in-your-mouth "paillard of summer chicken", pan sauteed with fresh local corn, hearts of palm, and sundried tomato in a light cream sauce. The light cream had to be poured from heaven, I have never tasted something so delicious.
I had hoped to try the highly touted butterscotch pot de creme but tonight was Callebaut pot de creme night. This Belgian chocolate was a decadent ending to a divine meal. I even ordered two Callabaut cookies to go--but they didn't go far, I think I barely got the car started!
Please consider reservations, Chef MJ does have to turn guests away (or seat you at the bar). She's closed on Mondays. I enjoyed that Chef M.J. was the hostess and visited with her guests. Her sister also helps and they are fun to watch interact. M.J. was featured on Rachel Ray and in Gourmet magazine. She brings her French Culinary training and innate talents to the people of Rapid City for an evening of great dining and healthy eating!
So, I was in town for a wedding that happened to coincide with my 30th birthday, which called for a special night out. Thanks to Yelp, The Corn Exchange popped onto my radar. It was totally unexpected (in a good way). Sadly, the head chef was out of town. But the replacement executive chef did an amazing job too.
We started out sharing almost all of the apps. I focused on the beets with fresh mozarella and orange wedges. Tasty, although with a few tweeks (i.e. more mozarella, better plating, and a little more seasoning) it would have been perfect. The big hit was the proscuitto, artichoke and melon. Perfection!
Moving on...I was intent on having buffalo for my birthday. And lo, they had buffalo short ribs, glazed in plum sauce, that fell off the bone. The filet was also outstanding (we shared bites of everything). It was so buttery and had the lightest texture ever. Desert, pot de creme(!) and creme brulee!!! I would use more exclamation points, but I think you get the idea.
Two more things: 1.) The staff was awesome, friendly, accomodating, and well-informed. 2.) I really appreciate the incorporation of the slow food movement and the use of locally sourced foods. Way to go, MJ.
If you are ever in Rapid City, EAT HERE! They use local ingredients (mostly organic) and the portions are perfect! The restaurant owner was extremely inviting and the food was absolutely delicious. This place is a real find.

When you're nominated for one of Anthony Bourdain's "Golden Clog" awards, you know you're awesome. And kind of funny.
MJ Adams, head chef and owner of The Corn Exchange, was in the category of "Looking For Love In All the Wrong Places." Pretty much for being a fantastic, James Beard-recognized chef in the middle of effing nowhere. So what is such a fantastic culinary talent doing where the deer and the antelope play?
She's taking advantage of the unique local products. We enjoyed locally grown vegetables and organically ranched meats. We had incredibly tender buffalo steak from 777 ranch, amazing quail with seasonal vegetables and braised leeks, buffalo ragu over fresh pasta, and that was just the entrees. The appetizers were super creative and delicious, and don't even get me started on the desserts. I will remember that butterscotch pot de creme for the rest of my life.
I would go back every week, except that this phenomenal restaurant is in SOUTH DAKOTA! Sigh.
Desperate to escape yet-another dinner at Ruby Tuesdays, Applebees or W. T. F. Fridays, I discovered the Corn Exchange after a a Google search from my hotel room in Rapid City. We were in town to see Mount Rushmore, and after two days of fast food and trail mix, I really needed some real food.
Folks, this place is an oasis of good taste. And it's not just "good for Rapid City". This place could hold its own in any major city in America. The cuisine is simple, and focused on fresh locally-grown ingredients. I had a proscuitto and fresh fava bean salad with just-flown-in water buffalo mozzarella. The combination of the salty proscuitto, slightly vinegary dressing, and melt-in-your mouth mozzarella was mind-blowing. I still dream about this appetizer. For an entree, I had a locally-caught trout which was beatifully presented (not just a slab of fish, like so many places do it) and seasoned with a gentle lemon caper sauce that made the fresh fish the focus. For dessert, the creme brulee was simply the best I've ever had--rich, fresh custard covered with a whispery crust of sweetness. Oh, and the wine list is sophisticated and well thought out.
MJ Adams was doing local cuisine many years before it became trendy. And she might just be the best at it.

I wandered in here not knowing what to expect. With no outside lighted sign, I thought the place was deserted. Then I saw the door was open and saw the crowd of people inside. After I quickly scanned the menu, I decided this was going to be where I was going to have dinner!
The Corn Exchange serves organic foods with no preservatives. Some of the foods served are grown locally. Good for them!
I started with a mixture of garden greens & watercress with a 15 year old aged sherry vinaigrette and a rich blue cheese. Deciding on dinner was a struggle, the Vera Cruz style shrimp sounded delicious. But Shelley, my server, high recommended the summer chicken, so I decided to give it a try. This was a huge pan sauteed chicken breast served in a lite cream sauce with new potatoes, corn fresh off the cob, sun dried tomatoes and zucchini. Delicious. With all this yummy goodness, I could not stop at just dinner. I opted for the flour-less chocolate torte for dessert. It was served with whipped creme and fresh raspberries.
This place is very charming and both the food and service are excellent. Give it a try, you won't be disappointed!
What a gem!! Conveniently located in Downtown Rapid City, it offers fresh food with flavors that complements each other. The corn and scallion pancake with lox and creme fraiche was so delicious, I could've just eaten 3 of them for my entree. But that would've meant I would miss out on the deliciously braised buffalo short ribs. What a wonderful first meal in South Dakota. I just wish they were open on the other two nights I was there as I would've eaten there my entire trip.
