Review from Shiho F.
Carmel by the Sea, CA
Thomas, Dominique and Betrand were all quite delightful and taught us the how to create Croustade de St. Jacques a la Provencale (Hors d'Oeuvres), Poularde a la Forestiere (Le Plat Principal) and Tarte aux Poires (Le Dessert) and we even got to take home a liitle book with cooking instructions. The 3 adorable Frenchmen were stationed at demonstration tables strewn about the restaurant. Although they were opened for dinner like any other night, there is enough space here to allow these types of activites to carry on simultaneously.
Our wine glasses were kept full during our demonstration rotations (although they may have cut me off temproarily for some reason) and after 3 rounds of 20 minutes sessions we wre able to sit down and feast on a lovely 3 course dinner.
The first dish was a puff pastry topped with a cassolette of bay scallops, shrimp, tomatoes, garlic and Provence herbs. Then came the chicken breast poached in natural jus, accentuated with a forest mushroom demi glace with a touch of cream and finally a pear tart with almond pastry creme and Grand Marnier reduction, served over creme anglaise topped with chantilly creme.
Deelish and did I mention the chefs were adorable?
Le central hosts cooking classes oonce a month. For less than $30/pp one can learn how to cook a simple French meal and then enjoy it with good company. Last night about 25 people were in our "class" and they had room for another 10 or so. This is a great way to spend time with friends, family or co-workers. We were here on a team buidling experience and it was just lovely. Everyone had a great time and all of us left stuffed.
Specialties
Conceived with the notion that French food doesn't have to be stuffy, snooty, heavy or expensive - Le Central offers a plateful at a reasonable price. Menus change daily to offer a wider variety of seasonal foods.
