This place is awesome... My wife and I went here while walking on Main Street and we loved it... The Sandwich Selection is Awesome, The Specials are Just Great... and the wait staff are Friendly and Excellent. Would definitely recommend

Surprisingly good.
I have to admit, living in the city has made my expectations for restaurants outside the city a lot lower. My mother had been to Cibo before and liked it. She has good taste, but this still exceeded my expectations.
My brother and I both had the roast beef with caramelized onions and horseradish sauce on a roll, and it was super delish. The also serve a bowl of caramel popcorn with your sandwich, which is a nice touch. The desserts also looked great, but alas we had no room for such things after that super filling sandwich.
Highly recommended as a stop for lunch. -

My sandwich was done to perfection. My wife has a delicious noodle patty over salad. Everything is top-notch-ingredients and preparation superb.
Who wouldn't want to complete a meal with caramel corn and bubble gum? And the staff was accommodating in every way. -

Wow, so pleasant here and the food is awesome! Mom had a turkey meatball sandwich and the very friendly staff brought me water. There is enough room for me to lay down without contorting to the size of a pea---Brady is much better at that me!

AMAZING AMAZING AMAZING. A place like Cibo makes me wonder why on earth anyone would go to Panera, and any place like that is a good place in my books.
I haven't been able to totally wrap my head around the rolls yet (the standard ones in the sandwiches). Kind of dense, a little doughy, a little big. The standard rolls aren't bad, but I'm in love with the focaccia.
The first time I came to Cibo, I had the #5 (chicken, asiago, onions, french) and it was really dry, especially with the roll. I didn't really get the hype, and I was disappointed after hearing so many good things. But after a few different combinations, I have it down to a favorite: The #4 (chicken, peppers, greens, chipotle mayo) on focaccia. AMAZING AMAZING AMAZING. -

Great gourmet sandwich shop. Friendly staff, good selection, awesome home made rolls. I been there for breakfast and my omelet with veggies and mozzarella was one of the best i had!
Those grilled veggies are usually tasteless(in a lot of places), but here it was mostly thin sliced eggplant pieces, marinated in some great dressing before grilled. tasted great.
Update - been there for lunch and dinner. Still very good. Service is super friendly and attentive. always.
Update2 - i LOVE the food there but they do have problem with air quality. something needs to be done- its too "stuffy" inside. now in a summer we are choosing outdoor tables to avoid being in there and still enjoy the great gourmet food. we may be too sensitive for air quality but its a serious minus for us to think about coming back in a winter. Please install a better vent?
PS - Salads from"specials" are very delicious. -

My friend and I discovered this place about a year ago, we LOVE IT!! The food is the best you can get. The place is set up real nice,and the staff has always been extremely pleasant. But lets get back to the food...I have eaten everything from salads to burgers to dessert and never been dissappointed.

Awesome sandwiches! I've been here multiple times for lunch, I don't think I've ever ordered the same thing, and I have yet to be disappointed. I'm not a fan of their panini bread, but the foccacia is excellent as well as their standard roll.
The fries they serve are fresh and cooked to order. If you're a fan of hot sauce, make sure to check out the shelf to the left of the cash register, over 10 different kinds. Their portions are huge and they are quick to serve you. -

For the person who says this is "overpriced". I get a sandwich here for the same price as Panera Bread, yet the one at Cibo has easily 4 times the amount of stuff between the bread. Nice thick grilled pieces of chicken, many layers of deli meats, etc; And it tastes far better too! I came on here to write about how this place was a good value - I am utterly flabbergasted at complaints about price - what's your comparison, McDonalds? Whew, got that off my chest. Point is, this place has darn good tasty sandwiches, made with large amounts of fresh ingredients, for a good price.

You just gotta love CIBO! Food is always great and they will make you whatever you want. I am all about consistency and this place definitely has it. You should definitely give it a try! The owner's name is Tom make sure you tell him it's your first visit, I believe the whole crew will yell out "CIBO" --- its great!
The only thing, I don't think deli is the right category for CIBO. It's so much more than that! -

Sandwich with crab cakes, chive and caper mayo with baby greens= FUCKING awesome.
I bit into a crab cake and I almost fell over. That doesn't happen often-- when something tastes that good. Next time, I'll just order the crab cakes.
It was my first time there and the staff was really nice, trying to help me decide what to eat. I asked an employee if the owner was a Culinary Institute of America graduate and she said yes. The place had that educated feel about it: bread from scratch, eggplant stuffed with roasted peppers, fried goat cheese etc.

There's no lunch in NY quite like a deli sandwich and I've tried almost every sandwich shop in the Hudson Valley. Cibo is, by far, the most unique and delicious deli I've encountered.
The veggie burgers are gigantic and full of fresh, tasty veggies. The buffalo chicken salad sandwich is to die for. Everything in the display (including a huge variety of homemade cold salads, breaded veggies, and unique delicacies) is worth trying at least once. All of the desserts are delicious---especially the SPECTACULAR tiny cupcakes and caramel corn they give free with every meal!
If you're tired of plain old turkey sandwiches and want something with pizzaz, definitely give Cibo a try. Parking is limited on the street but even if you have to walk a little farther it's 100% worth it. -

OK, so you're driving on I-84 through upstate NY, let's say, on the way back to Boston from a visit with your Jersey in-laws, and you can't bear another meh meal on the road. Fishkill, hmmm, not an appetizing name for a town. Don't be fooled. On a pretty little stretch of downtown is perhaps the best sandwich shop I've ever encountered -- Cibo. Everything's fresh, it's casual, clean, and cozy, there's a huge condiment bar with a zillion funky bottles of hot sauces, and, yes, even a nice rest room, there, I said it.
I ordered the crab cake sandwich and it was out of this world. My spouse got an Italian sub that she raved over. And a turkey sandwich with handcarved turkey for the little gourmand. The staff was friendly and efficient, the whole place had a wholesome, happy vibe. Get a dessert to go, and you'll be back on the road, sated and smiling. -

All the reviews are pretty on target here. This is a "deli" but more in the line of a gourmet market. They've plenty of labor intensive options to eat and soup, salad, and sandwiches are not the only route to pleasure here. It's nearly a cafe culture environment with couch and table setup and by far a HUGE stand out in what other options in the area exist. For those thinking there are better quick bites to eat around they're likely deluded as this probably is top of the mark for Fishkill unless you are looking for major chains like Panera. The only real critical comment I have is that the line of food quality doesn't match the line of drink options - think a soda machine next to hand made bread. Odd.

I'm writing this update to give Cibo an additional star. I went to Cibo for lunch today and had a very good sandwich. It was Turkey Meatball with fresh (really!) mozzarella and marinara sauce on a nice, soft multi-grain roll. It was DELICIOUS! Our server even brought a complimentary plate of tasty caramel popcorn. I left this visit very pleased with my meal and not smelling like chicken cutlet!

Lightning fast service and good food. I like to call this an "upscale" deli. You walk in here and think that this should be in NYC. Their sandwiches are big, especially their breakfast sandwiches...HUGE!!

I love, love, love this place! A great place to stop for lunch, their sandwiches, soups and salads are all to die for! I usually try to opt for one of their specials if there's something I like, otherwise my preference is their Veggie Sandwich with marinated, roasted veggies and feta cheese...YUM!!
All their bread/rolls are homemade, as are the soups, dressings, etc. Really outstanding, and they serve dinner 5 nights a week till 8pm too. The biggest downside on their sandwiches is that they are BIG, but if I can't finish I can always just save for the next day.
The service here is great, very fast-paced but friendly, and always on-the-spot with any modifications or special things you ask for. I highly recommend CIBO!! -

I LOVE Cibo! From its colorful warm atmosphere, the friendly people that work there and the delicious, and most plentiful food! They offer fresh, healthy food with uniquely combined flavors. They always have specials as well as their usuals, all beautifully displayed in their deli cases. And the desserts, don't even look if you are counting calories!!!

My husband & I were just passing through the area, and needed some food. Thank goodness for Yelp, or we would have stuck with whatever we could find off of the exit we took.
I had the veggie burger, which was, as Amanda T. notes - gigantic. I can be iffy on veggie burgers, but this was fresh, moist, flavorful, and truly tasty. My husband had one of their roast beef sandwiches and thoroughly enjoyed it.
We decided to forgo dessert and split the mac n cheese with bacon, as it is just one of those dishes we like to try everywhere. While the desserts looked tasty, we were quite happy with our choice. The mac n cheese was worth it - flavorful, comforting, and now high on our list of mac and cheeses!
The homemade caramel corn for each table and dubble bubble with the bill were nice touches.
I will note, the place was packed, and apparently you don't seat yourself, but let them seat you after you have ordered and there is a table available. The sandwiches were very reasonably priced, but the items in the case didn't seem to have prices listed, which tends to drive me a bit nuts. Excellent bathroom. -

This is an amazing deli in spite of it's owner. The food is amazing. All bread is made fresh. This is not a kosher type deli - but more upscale. Great paninis anyway you like them. Be prepared to order fast. They don't like to wait while you decide. Every meal comes with homemade caramel corn and bread chips. Fast, tastes great. And yes, I too thought this place should be in NYC.

INSANE how good this food is here!!! Went here starving, after a day of house hunting...our realtor recommended it and it was absolutely the best. Had an eggplant/grilled zucchini/mozzerella panini w/side of broccoli rabe...YUM! Friend had an assortment of scrumpables...grilled veg., stuffed portabello, chicken cutlet....OH! and I forgot the incredible chicken dumplings!!!! (did I mention we were starving?) Well, we were happily STUFFED after that and one of the owners sent us out with a bag of mini cupcakes & little cinnamon things on the house!! (like we needed MORE food!) Hope we find a house to move to near here so we can come OFTEN!!
Now that I live in the area and have eaten here frequently, I have to add a comment and subtract 2 stars!
First of all, as other Yelpers have mentioned, their ventilation is pretty pitiful...DO come here just before you do your laundry and wash your hair, as no amount of airing out really gets rid of THE SMELL that settles into your clothes & hair.
Second, (and a real deal breaker for me...haven't been back since), a friend and I asked for a couple of glasses of tap water (she had some pills to take and I was a little thirsty) and we were told they "don't HAVE tap water"...we looked at eachother like "did we hear right??" and I asked a different (and nicer) waiter and were told the same thing after he brings over a bottle of $2 water from the fridge...which were compelled to buy as we had already gotten some of our order and friend needed to take her pill before eating....WTF!?!? Here they are handing out bubble gum and popcorn...but ask for a glass of tap water?? And we ordered a really big lunch too....so no issue there about not having spent enough $$$ or anything. Grrrrr. BOO CIBO! -

Great sandwiches - very creative and a little different, but oh so tasty. Salads and soups are also very good. Portions are huge. Buffalo chicken salad, veggie burgers and turkey meatball parm are all very good. Turkey BLT sub.... yummo! Have not ever had a sandwich I didn't gobble down. Not to be missed!
