Four stars cuz' its in Boulder. Anywhere else would be three, but the choices for good Thai are so limited...
Chy Thai is CHEAP! And the food can be really really good. But every third time (give or take) that I've gone there it has been bland as hell. Maybe the alternate chef is uninspired or something...who knows.
If you go there on an "on" night you'll get filled up with tasty Thai for very little dough.
Also, everything can be made vegan or vegetarian, they are super accommodating!

However, I will never be going to Chy Thai again. Went there twice shortly after it first opened, as my friends, family, and I just love good Thai food. Love it. We're open to trying new places, so we tried this one.
Although the various soups and curried dishes we tried on 2 separate visits did taste good, something made me and all the people I dined with on BOTH visits very ill. Won't go into detail, only will say that the severe illness symptoms ensued shortly after dining at this specific restaurant, so severe that all who dined together, although we had driven in separate cars, had to stop somewhere before reaching home to use a restroom quickly.
Did call and let the restaurant know this had happened. They were nice about it but did not really seem to understand what I was trying to tell them. The first time we all decided since the food seemed good we would give the place another chance.
After the second time, about a month later, I got violently ill, and a friend that I dined with was ill for a few hours afterwards. The Tom Kha Gai soup was what we both ordered in common. That was something all of the family got the first time I dined there too.
I got the idea that perhaps the coconut milk in the soup might be the culprit. Did again make an attempt to let the people at the restaurant know about this. Staunch denial this time.
Gave up on going there after that. I go to a few of the other Thai Restaurants in the area frequently, and have never gotten ill after a meal.
The experience at Chy Thai was highly unusual for all of us.
After the second time getting ill shortly after eating, I will never dine here again. Looks like it is always crowded when I drive by.

In a different city, Chy Thai would be the proverbial shit. However, unfortunately for Chy Thai, it exists in Boulder...a restaurant paradise. What this means is that Chy Thai must compete with the big dogs, like Khow Thai, or Moongate, or a million other places.
Upon entering I notice the plasma screen off to the right showing the Larry King show. They were apparently doing a piece on Nicole Ritchie (like did you know that she might be pregnant? Like OH MY GAWD!!! and then they found her drunk driving down the wrong side of the freeway??!!! OH MY GAAAAAWD!!!) who I could give less than three shits...no wait, four shits about.
Well, we sat down at the massive granite tables which unfortunately for me were placed just-so so that I could see the t.v. in my peripheral vision flashing Nicole DUI/knocked up? over and over. This annoyed me so much that I had to move.
Anyway, with this aside, I can finally focus on the food.
Waiter comes: "know what you want to order?"
"Yeah, we'd like to start with some Vegie Curry Puffs" (what is a Curry Puff? Not that I know, but I wanted to find out)
"Uh sorry, we are out of the vegie kind, is chicken ok?"
"No. Uh, we'll take an order of vegetarian spring rolls then"
"I think we only have shrimp left"
"......an order of vegetarian egg-rolls??"
"-Hurriedly, obviously embarrassed - Yes we have that!"
Anyway, we ordered our dinners, which were $9 a plate or so. I got the Cashew stir-fry and my girlfriend got the potato curry. The food came and was good...a solid 4.
Still, like I said, Chy Thai is competing with the big dogs...and it dropped the ball on atmosphere and availability.
Chy Thai: a mediocre 3.

Good thai food. If you've read any of my other thai reviews you'll know that I'm picky about thai food as I've already ahd the best sitting on dirty street corners in thailand, but I did enjoy the thai here. I've been back a few times, good, but again not great. I need to find a thai restaurant where no one speaks anything but thai, and all they have in the kitchen are woks over charcoal stoves....
Oh, they have GREAT Papaya salad, ask for it spicy, without it being spicy, it's crap.

Service was friendly and prompt.
I ordered a spicy curry but it was bland and the chicken in the dish was mediocre.
The curry dish was 8.75 for lunch; which seems a little pricey.
I would come back again since it is half a block from my work, but I will keep looking for better Thai in Boulder.

Me: Walks-on-in. Stops at menu display board at front.
Greeter: "Welcome, welcome!"
Me: "You do take-out?"
Greeter: "Yes, yes, come..." (Greeter leads Me to 'Take-out Cashier Lady').
Me: Head tilted up; examines menu.
Take-out Cashier Lady: Busy tallying up receipts & counting the cash. Greeter exits scene.
Me: Still reading menu; some thoughts: noodles? or perhaps a curry? (my face puts on a perplexed look) - decisions....decisions...ugh! I love Thai food...what to eat! too many choices!
Me: I pick noodles (still talking to myself in my head)...but not Pad Thai - I get that like almost every time I'm at a Thai restuarant.
Take-out Cashier Lady: "So...let me know when you decide." (still tallying up receipts).
Me: "Ok....one sec."
Me (back again talking to myself in my head): No. 32 looks good....let's see....ummm, wide (meaning = fat) rice noodle stir-fried w/assorted vegetables and Thai chili paste :-) .....
Me: "So.....I will have the No. 32." (psst...No. 32 is the Thai Chef's Noodle).
Take-out Cashier Lady: "Anything else."
Me: "Umm.....(pretending I may want something else, and then....)....no, that will be all.
Take-out Cashier Lady: "Okay, that will be $8.25"
Me: Flashes my card. Gets receipt. Pays total w/tip added on. Sits down. Examines interior. Yawns (I'm tired). Less than 15 minutes later...my order arrives.
Take-out Cashier Lady: "Sorry it took so long, we had other orders. Have a good evening."
Me: "That's okay, thanks!"
Me: Drives back to work with spicey noodle aroma wafting from take-out bag through my ride. At work: examines noodles, slightly disappointed with proportions (see photo), but soon my disappointment turns to satisfaction, noodles weren't so bad, but not spicey enough, but still delicious. Mmmmm, yum!
Like Lori M.'s observations, this place is setup like a pseudo-cafeteria-cum-contemporary designed restaurant with its funky colors, asian-themed paintings, large-leafy plants, glossy tourist brochure of Thailand included everywhere, and full-view kitchen so you can watch them make your meal.
Because of the proportions, and for my noodles not being spiced up enough, I couldn't go for the 4*'s. But, I will visit them again, and maybe this time I'll actually dine-in and request they make my order spicier than usual (hey, I grew up on Indian food, so I think I can take the spice up a level ;-)

I am in love with Chy Thai. I kind of found it by accident one afternoon, and I had the Royal Curry. Amazing. I enjoyed it so much I came back two times that week.
They make a great Thai iced tea as well. It's not any better than other places in town, but not any worse. I've also enjoyed the sweet sticky rice and mango for dessert. To die for.
