Chef Wang's falls into a category all on its own. The food is not quite your hard-core Chinese, so it appeals to the Western taste bud, yet, not tampered with so much that Asians won't want to eat it. Their noodles are hand-pulled and 'home-made' which gives them a really good springy "al-dente" texture. However, some of the soup bases are rather bland which is a shame with such great noodles. Chef Wang's also has some Mandarin dim sum including scallion pancakes, potstickers, but on weekends, they have more selections. The steamed seabass is quite tasty, but a bit overly salty. Still very good and popular. The scallion beef was delicious! The food here definitely has "wok-hei" which is what the heat of the wok gives off to give Chinese food its distinctive flavor. The owner is a very friendly lady and she does her rounds around the tables to make sure her diners are having a good meal. She also has a great memory! The space between our first and second visit was quite wide and far between, yet she definitely remembered us from our first visit! A true sign of a great businesswoman.
