Warm hospitality and great food...that's Casa Chimayo.
My parents came up from Chihuhua, my uncle and aunt from El Paso, my wife and I from Denver and we all met for some family time in Santa Fe. We stayed at the Inn of the Governors and asked for some recommendations for New Mexican in the neighborhood. I had been to The Shed in the past and was just OK with the food; the concierge had heard good things about Casa Chimayo so we walked over in the freezing weather.
The restaurant itself is very homey, as in not fancy or refined. It's as if you walked into a typical old New Mexican adobe. But the reception was warm and inviting. They sat our group down right away and took good care of us.
I was nervous as to how my family would relate to the food; I shouldn't have! They loved it! Very good "norteno" they said, "just like your abuelita makes"...high praise indeed. The calabacitas were spot on. Just like my mom made when I was a kid; my mom reminded me that I hated to eat calabacitas as a child, yet now I couldn't get enough! The chile verde was perfect, from the salsa, to the chile on the tamales.
On our way out, the owner invited us back to hear the trio that would be playing the next night. Sure enough, as we were making plans the next day, I asked my family if they wanted to try a different place...no way, they all wanted to go back for more!
The second night was amazing, great food and hospitality. We tried, the Chile en Nogada (rated highly by my tio); carne adobada, a deep red chile stew, definately norteno style, not southern Mexico style; posole, tamales, taquitos, etc.
The music was perfect too. The trio came over and mom and my tia started quizing them with requests. When they couldn't hold back any more, we pulled the tables back and made room for my tios to start up an impromptou dance...unforgetable.
Go to Casa Chimayo...tell them that los Ambriz sent you. -

Amazing. I visited Santa Fe for the 1st time over the holiday weekend and stressed for 2 weeks over where we should eat for New Mexican cuisine. I had decided on The Shed and then my instinct said to keep looking for another option.
I'm so glad I decided on Casa Chimayo! I had the blue corn calabacitas enchiladas with rice and beans. It was awesome! They use organic and local products.
I can't wait to go back! -

My parents and I had been looking for somewhere to eat for a Sunday lunch and were excited when an off-the-beaten-path restaurant was open. We went in, and Tim, the owner, informed us they were closed. He had forgotten to take his "open" sign down!
We were debating on where to go, but Tim told us to take a seat and, having never cooked for the newly-opened restaurant before, made us each tamales with beans and rice! Mom and I got vegetarian tamales (Mom's with green chilis, mine without) and Dad got pork tamales with red chiles. We were all quite impressed and cleaned our plates.
Tim also shared his family's history dating back centuries to Cortez and showed us family photographs and replicas of hunting apparatuses (on display in the restaurant). He answered my parent's many questions of New Mexico with enthusiasm.
The food was wonderful but the hospitality was even better. Tim said when you come to his restaurant, you're coming to his home (and indeed, the house was built in the '30s!), and it truly felt like that. -

So many positive reviews have been written about this best restaurant in Santa Fe, and I agree with every positive thing written. My friends and I visited twice during our May 2012 vacation to Santa Fe and were completely satisfied both times. Try the green chile stew and the Tres Leches cake for dessert. Sublime!

On a road trip out of San Francisco for 15 days, my friend said we could get good Mexican food while we were in Santa Fe. By chance we stopped on the outskirts of the Plaza of Santa Fe at Casa Chimayo. Without saying too much more - the meal was served with heart and personality - and was extremely good. Both of us ordered the Blue Corn Enchalada with cabalacitas(? Mexican squash an zuccini) his with red chili mine with green - perfect vegetarian option for us.
They recently opened so dont let the lack of filled tables scare you off. -

While staying in Taos for a ski trip we swung by Santa Fe for the day. Happen upon Casa Chimayo. It was a surprise to find such a warm place with great food. The Tamales and Blue Corn Enchiladas are a must try if you stop by.The owner Roberto came to each table to make sure everybody was doing fine. He made our family feel very welcome. He even gave us some places to visit on our way back to Taos. Thank You for a great experience.

Delicious food. I loved the plantain mole enchiladas, and the tres leches for dessert was superb! Great service. Nice ambiance. They even had live music and a flamenco dancer for entertainment. I'd definitely return!

Absolutely fabulous green chile stew. We sat by the fireplace which was well-tended and the chill from the winter day evaporated with their delicious food. Delicious is too bland an adjective to describe their green chile and tamale. The food is rich, tasty and thoughtfully prepared. The server was very charming as well.

Really great food and the people are really nice. Seems to be a family run business or at least that's the feel. Had a special, chicken with mole and red chile sauce. It was really great. The chips are obviously made in house and really excellent as well. Definitely more on the Mexican side than New Mexican.

Delicious New Mexican food in a warm, friendly, and home-y atmosphere! We were recommended this place by the front desk employee at a local hotel, and had an amazing experience. We enjoyed some cocktails, fresh guacamole, a tamale, and chicken in mole sauce (the best mole sauce I've ever had). The meal and service were so good that we returned the next morning for their Sunday brunch. We had the the huevos rancheros (good, but a little bit too much cheese), a tamale, and some awesome blue corn pancakes. So happy that we heard about Casa Chimayo and had the chance to check it out twice within a 24 hour period!

Wow, not sure about the other reviewers, but as a local, I thought this was easily one of the worst meals I'd eaten in a long time. Watery tortilla soup, quesadillas on a par with Taco Bell, etc. And pricey, pricey compared to other restaurants serving similar food. Disappointing.
