Over the years I've heard a mixed reviews about this place, and since I got some $10 gift certificates for Carlos from a local radio station. I figured I would give them a try. I was surprised by how good they were. The chips and salsa were good. The chips were very warm, thick, and crunchy the salsa was pretty good. It's little on the mild side for my taste, but OK for those who can't "eat a flame."
I had the 2 enchilada combo meal. I really liked the beans and the spanish rice was more than acceptable. My enchiladas were good. They weren't buried in sauce or cheese like some places. I also ordered some chili fritos (grilled Jalapenos). I found them to be very good not under grilled or overly cooked with sauce or oils.
I found it interesting that the tables are stocked with blue agave sweetener, which is great for those needing a gluten free diet or wanting a low glycemic index sweetener. If I could I would give them 3.5 stars. There are other places in the Roseburg area I prefer to Carlos, so I can't give a full 4 or 5 stars. If I did want a change of pace from other Mexican restaurants I like, then I would definitely go back to Carlos. -

Tasty! Well worth the moderate wait. Noisy party of approx 24 left as our food was served. Prompt and courteous service, couldn't ask for better! My plastic glass of ice water kept spilling water on me if it wasn't half full:/ but all in all a nice family dinner with amazing food and even better service.

I do like Carlos's It is close by my house and I am basically lazy so that is why I go there often. I love the chicken tacos there. They are partially deep fried and then the lettuce cheese and sauce put on. I love that sort of taco where the shell is fried but not like a crunchy taco shell. It is in between crunchy and soft. I also like the shrimp enchiladas. Basically a corn shell with shrimp inside with a green enchiladas sauce on top with I think some white wine in it. Comes with beans and rice, sour cream, and some avacado slices. My favorite dish for sure.
I did have one lame experience there. I ordered a to go order for my family. I personally ordered the shrimp enchiladas. The girl taking my order seemed new as I had to help her out with the menu a few times. When I got home, my shrimp enchiladas was actually a shrimp enchilada and nothing else. Normally it is two shrimp enchiladas, rice and beans and the garnishs. I only got one shrimp enchilada and nothing else.
So I called them on the phone to let them know. They I think apologized and told me I could come back and get it replaced. No problem I said, I will come in at a later time but not that night. 2 minutes later the girl who took my order calls me back and says she only charged me for one shrimp enchilada. In other words, I got what I paid for. I was a litle ticked that she had the nerve to call me to tell me that. It was like she was saying I got what I paid for. Either way, she screwed it up. Hey things happen but you do what you can to make it right to the customer.
I have not been back since so I am not sure what will happen next time. I know for me, I am expecting the shrimp enchiladas for free. Yes, I may have got what I paid for but had I went back I would have had to spend extra time making another trip back to get my food replaced. We will see. If they make it right for me, they will keep me as a customer. If they do not, I will still go there, but it will be less often. -

My boyfriend and I just happened to drive by this place on a road trip up North. It's right on the main drag, so you cannot miss it! If you do, you are skipping out on some good eats. We ordered blackberry margaritas - new menu item, and it's a keeper. We finally decided on the burrito zucchini - it might not sound like much, but it killed basically every other burrito I've tasted. It was smothered in green sauce and topped with sliced avocado, and boy oh boy was it good. And because we like lard-o mexican food, we went with the staple of a cheese enchilada, a la carte. I know you'll call me crazy, but this enchilada tasted so much better than the other bullshit I have tried. The sauce was so much more developed and intricately seasoned.
Service also ruled. Sweet patio seating. The menu will blow your mind.
