Let me first insert a caveat, I'm not from Memphis. However I was recently there for a business conference (don't ask) and had the pleasure of having my company pay for my meal here. The Butcher Shop is amazing! The decor is pretty quirky (think "The Texas Chainsaw Massacre" or "Saw") with dark wood paneling, and well.... cutting implements (eeeww!) on display. But don't let that (or the neighborhood) scare you away from the food.... which is quite simply amazing steak.
We had a party over 60 with a private room for all of us, so I can't say with any certainty what the wait or "regular" service is like. Although I will note that service in the restaurants I dined at in Memphis was all pretty good, friendly, and prompt. Appetizers were sauteed mushrooms (I love mushrooms and these were excellently done, well sized buttons in, I think, oil and some rosemary), along with some sauteed spicy shrimp (think Kung Pao without peanuts). Then we had an open salad bar, nothing fancy just iceberg lettuce and assorted other greens. But the greens were VERY fresh (surprised me considering I'm from SoCal and sometimes even I get wilted lettuce from here), and the Italian dressing was so good that I went back for seconds--- and I don't even like salad.
Next up was the main course which EVERYONE was waiting for. I ordered the 14oz fillet mignon medium well (I know border line heresy-- but I'm not into getting sick at a work conference thank you very much). The steak was EXCELLENTLY prepared, I didn't even use steak sauce it was still so juicy and flavorful, perfectly smoked and seared. My two regrets are that the Butcher Shop is in Memphis and that I couldn't finish all of the steak... what a waste of wonderful food!
