Buffalo Bites looks like it should be a theme camp at Burning Man. The unfinished looking kitchen structure, the arching steel shade structure, the fluttering flags, and the mismatched outdoor seating all seem out of place anywhere but in the black rock desert. To find such a thing in Ketchum, Idaho was so shocking I had to eat there, no matter what was on the menu.
They specialize in...wait for it...buffalo! Roast buffalo sandwiches instead of roast beef, buffalo ham, you get the point. I'm not sure if it is buffalo, or how they prepare it, but the first sandwich I had from them featured dry meat. Almost a year later, to the day, and I found the same challenge. The presentation is great, the other ingredients faboo, and the overall taste is delicious. But the meat is a little...dry. Maybe next time I'll try something other than the roast buffalo.
The staff is friendly, but they are not prepared for children's needs (read: no ketchup). All of that, and they still get four stars? The setting is fabulous, the people who work there are really helpful, and they have local guide books to read, including a guide to some great hikes in and around Ketchum.
Tip of the day: if the front patio is crowded, head to the *very hidden* back patio, where there is a fountain and even more seating. -

Food is excellent. The veggie sandwich is the best I have every had. One star is removed because of the staff. They were stoned and borderline rude and I swear the staff went in the back shack one by one to alternatively take bong hits during my meal. Nothing wrong with that except it did not improve their mood and sullied an otherwise first class slow food meal.

I passed by Buffalo Bites when I was stopping over at Chateau Drug and Atkinson's Market, and I thought it looked so cute. I don't know what happens in the winter, but there is great patio seating out front with large umbrellas providing shade. I had hoped that everything on the menu would be buffalo, but luckily (I think - I've never actually had buffalo), there was a pretty good selection at this tiny restaurant. The restaurant had soup (cold gazpacho and warm soups), sandwiches, salads and panini sandwiches made from local, fresh ingredients (always a big plus). I was trying to decide between the ham sandwich and the buffalo sirloin, and I ordered the ham sandwich while managing to change everything about it - no dijon mustard, swap out the Swiss cheese for Guyrere. This was probably one of the best ham sandwiches I've had in a long time - the ham was thinly sliced but not so thin that it tastes like Oscar Meyer deli meat, and the bread, particularly the crust, was so delicious. The sandwich came with a small serving of more carbs (pasta salad with sun dried tomatoes). The sandwich was definitely on the expensive side ($10), but this is Sun Valley...
