Water buffalo
These wild and massive beasts roam
With little chin hairs
(This is no regular dairy farm... this place has WATER BUFFALO, folks. Bufala (another name for water buffalo) di Vermont has the largest herd of bufala in the United States. It certainly is a funny sight to see. When you drive up, hundreds of them turn their heads to watch you. They have a wild look to them, but upon closer inspection, you can see that they are actually pretty sweet. You are allowed to go up to the fence to watch them, and I would highly recommended it... these giants seem to be quite curious. At first they are a little shy, but pretty soon everyone wants to come up to have a look.
But why would anybody raise water buffalo, you ask? Because of their high-fat milk! In Europe, where they take cheese very seriously, TRUE mozzarella is ALL made from water buffalo milk. Here at the farm, you can buy the freshest mozzarella you'll probably ever eat. You can also get some bufala yoghurt also, which is equally high-fat and equally delicious. Highly recommended.
A little warning: the farm doesn't look like it's set up for tourism. There is nobody to greet you at the front door; instead, you must walk upstairs to the business office, and someone will greet you there. They were SUPER friendly, though, so don't be scared. It's worth it.)
