People! You really have to get the right things here! And you really have to love green chile to truly appreciate this place.
I work fairly close to here, so I've been quite a few times. Never been let down. My old standby is the mexican hamburger with HOT green chile and cheese. It's always worth it to pay a little extra for their super hot green chile. The chile cheese fries are amazing!
Don't pay extra for the smothered anything. Waste of styrofoam and not that much better for the price you pay.
Not a place for someone on a diet, and not somewhere you should make a habit of going if you're at all concerned about your cardiovascular health, but EXCELLENT at doing exactly what they do. -

I am taking back my 2 star rating!! Uh, this place is TERRIBLE!! I came back on a hungry whim and didn't want to drive the extra mile or two to get GOOD green chile. The place was empty and the lady at the register was RUDE RUDE RUDE like I was wasting her time by looking at the menu 10 sec to long. She was very unhelpful when I had a simple question. I still put some change and a dollar in the tip jar and she gave me a nasty look dumped all the money out said "thanks" all snotty and put the money in her pocket. I only spent $5 dollars there is no way I am tipping more than what I did at an ordering counter with TERRIBLE service! Besides all of this they only have (hot)green chile or (mild) red chile. I got the green chile because it was suppose to be spicy but it was bland and there was nothing fresh about it. I am extremely disappointed even with having such low expectations when coming here. Do not eat here!!! It has been exactly 1 year since we visited and I gave my 2 star rating.

You Gotta Be Kiddng Me !!!
Big fan of Bubba Chinos (at least the two by my house). This one here; food has always been good, but service......well, you know what I mean if you've ever been there, particularly later evenings. They've always got the party started; but your order is more like, "whenever", more recently. This time I waited at least 25 min. among a very few other parties, for 4 hamburgers. Mostly, it's straight in and out, but on this visit I wait, very patiently; 5, 10, 15 20, 25 minutes. Other parties are being served, and leaving. Finally, I ask what is going on. "You Just Gotta Wait.....or I could give you your money back", the front end lady says. Wait for what, there's no one in front of me, and it's going on 30 minutes. "We got new people here.......so... you just gotta wait." (so, it's my fault. I just gotta wait). I have to ask her to go back and check what's going on. She checks, and, eventually, brings out order #60, then ever so slowly goes back for #61. I'm number 58. No one is managing; no one is running the show, apparently. It's a free-for-all, and for you, well......"you just gotta wait"...... -

I drive by this spot every day on my way to and from work. I was excited to finally give it a try.
Unfortunately it was lacklust on all counts. I had a chicken burrito with chili and cheese. The chicken was tender and good but the chili just had no oomph or spice. I was surprised. The tortilla was dry around the edges and the whole thing was just bland. Coming from a place that advertises the "heat" I was disappointed. Maybe it was bad ordering? I don't remember seeing anything about extra spicy on the menu. Who knows. I'll probably give it another shot though to be sure.
Sad to say the horchata was so sugary sweet I couldn't finish it and if you know me- you know that's crazy talk. -

Brian and I were wandering around looking for a quick bite on Federal. At first I thought Bubba Chinos was a detail shop. That is, until I saw the sign for Chili Cheese Fries. SOLD!
I had a basic chicken taco with sour cream added and a small order of chili cheese fries. Neithere really impressed me. The taco was alright, but not very flavorful. It was topped with lettuce and cheese normally, with salsa on the side. The chicken was moist and tasted freshly cooked. Definitely a plus in my book.
The chili cheese fries were your basic fries, not homemade or anything. They were covered with their spicy green chili and large shreds of cheddar. The green chili was just too spicy for me. I asked for a side of sour cream to eat with it to tame the heat. It didn't really help.
My husbands burrito was tastey and he seemed to enjoy it. We also had chips and guacamole and they were pretty good as well. -

Bubba Chinos aka "Chubby's"
Look for the bright yellow building w/th red trim on Federal. You say, "but there are many bright yellow buildings on Federal" . True. I guess the best way to to find the intersection of 1st & Federal; Bubba Chinos is about 1/2 block south, on the east side.
I didn't realize that this used to be "Chubbys" until I looked at my receipt which said "The Original Chubby's Mexican Food." Duh.
The set-up is kind of like Columbine Steak House down the street. There is a walk up counter with a big menu/cashier and a side area if you want to sit and eat. Immediately inside the door is Bronco shrine with dusty, retro artifacts. They must have found some of it in an archaeological dig. It's good to see a long-time, loyal fan though.
I asked the guy beside me "what is good?" He said he came in for the chili fries. I ordered the usual. Smothered green deluxe. The gal at the counter was joking with couple in front of me. Apparently, they knew the owner; He came out of the kitchen and comped their meal. Service was friendly. My order was ready within a minute or two; FAST.
I liked the fact the owner sponsored a Little League baseball team. There was a team picture and a huge trophy on the counter plus another plaque thanking Chubby's for sponsoring a season of football. Cool.
I took the food home. It was a chile-cheesy mess. Yum. A little on the salty side. I shared with the kiddo and he gave it a thumbs up.
Apparently there are two or three other "Bubba Chinos" in the Denver metro area. I was kinda curios about the "Chino" part. I looked online. Chino has several definitions:
-A coarse twilled cotton fabric used for uniforms and sometimes work or sports clothes.
-A city of southern California east of Los Angeles
-In Spanish, it means "Chinese"
-In Mexico it means "curly" or "kinky"
- In slang it means "Cannabis Sativa (Marijuana)" or "A close friend/acquintance"

I had a buddy visit me from Boston and he wanted Mexican food at 11:30pm on a Thursday. We drove down Federal and on the left heading south was Bubba Chinos. They have a few locations in the metro area. I have only been here and my first impression was how clean it was and the cool menu board.
We both had the deluxe steak burrito which had tons of steak and the cheese was melted just right. They grilled it too. The green and red chili here are just right. They do a good job with the food.
My buddy liked it so much he went back 3 times in 4 days. We tried the Mexican burger and it was filling.
It's open till 3am for those who like to eat late after some cocktails. -

Bubba Chinos is good for what it is. If you are looking for authentic Mexican look elsewhere. If you want nuevo school/fast food you're in the right place. I ordered the delux steak and cheese burrito with beans. There was a little steak, tons of really good refried beans, kinda like what you would find at Tacos Rapidos but still a million times better than Taco Bell beans, and orange fake nacho cheese. The tortilla was mediocre. I had Taco Bell the night before in a drunken state of "duh" and I immediately regretted it. It is now 6 hours later, and so far Bubba Chinos is doing right by me. Tasty goodness

I had a chicken special burrito. Cheesy and yummy and a little spicy. It was really good! The lady at the counter was nice and the food was fast. My only problem with Bubba Chino's is that there is no salsa bar! What the H Bubba Chino?! Why no salsa bar? I like my food to hurt!
