Ever since this place opened I have wanted to give it a try. As the reviews came in they were all over the board so I hesitated until today.
The first thing I noticed was the place was empty. I ate alone. This is surprising because almost any other restaurant on a Monday for lunch in Draper would be busy. When I walk up the counter there were no employees to be seen, but some quickly emerged from the back.
The restaurant is fairly small and casual. You place your order at a desk and they bring your food to you. They have a six head soda fountain with Coke, diet Coke, Sprite, Root Beer, Lemonade, and Dr. Pepper. They also have some drinks in a cooler.
I order the Waffle Monster and a medium frites. They came fairly quick.
The Waffle Monster (which actually looks like a monster) was great. I would put it on par with a Waffle Love waffle
The fries or "frites" were good. They have tons of dipping sauces. I tried quite a few of them. My favorites were the frites sauce and the fry sauce. The andelouse was also pretty good.
I have two complaints.
#1 The food was too expensive. Between the fries and Waffle I ended up with a $15 bill. It would be nice if they had some Waffle and frites combo meals.

When I heard that a new Bruges had opened up even closer to me, I was very excited, I have loved the one downtown. When I arrived the employees were all hanging out in the back and didn't notice us waiting at the counter. We ordered our food and when we got it I was kind of upset to see that half of our waffles were burnt, and super crunchy. There was only one other table there, so it's not like they were in a hurry. It was pretty disappointing to pay 7 bucks for a waffle and have it come out burnt.
The whole time we were there the staff was hanging out talking loudly and cursing. It was very unprofessional and ruined the mood. As we were walking to the car a different employee was coming in and asked how our food was and I told him that the waffles were burnt. He was nice and apologized, he also gave us a ten dollar give card as an apology. I appreciated the gesture, but I don't think I will be back to this location. The waffles are good, the frites are better.
This is my second time at this local chain (as my local friend loves this place). There's lots of Belgium flavor, from the comic murals to the slightly-different-but-still-comfort menu options.
Our party of 4 shared one sweet (waffle monster) and two savorys (curry chicken croque & chicken baguette), along with the HUGE batches of fries they come with, and it was just perfect. Since nothing here is healthy, sharing with a bigger group prevents anything from being too overwhelming. The cookie butter latte was a definitely on the sweet side.
The monster actually looks like a monster, with angry eyebrows, and I didn't like that very much, so we adjusted them to be a little more friendly. I admit I don't know enough to know a good liege waffle, but the strawberries, ice cream and cookie butter made it all quite delicious.
The croques were on the oily side, decorated with cute flags, and so satisfying to eat with the melted cheese and the exotic filling. A half portion was just perfect for what we were feeling that morning.
The FRIES. Having lived almost 30 years in the u s of a, I have had lots and lots of fries, from all sorts of places, and these are definitely on the top of the list. All of them in consistent size and crispiness, nothing too crazy with just the right amount of salt. And dipping sauce galore! Choose from almost a dozen varieties from the fridge next to the cashier.

Had high expectations coming in. Excited to try their frites and sandwiches. It was just okay. Also felt guilty eating all those bad carbs afterwards. But its what's expected. Informed the cashier it was our first visit. We didnt even know about the different dipping sauce they offered. That was a bummer. Will revisit again and maybe try their sauces and waffles. But for now its a 3 star review.

I wish there was a Bruges Waffle closer to either my work or home because it is absolutely delicious every time! We had attempted to go to another popular breakfast place in the are, but with an hour wait immediately decided on Brugges Waffles and were not disappointed. The kids ham & cheese was very good and the strawberry and crème fraîche waffle was divine. My only issue was the person who took our order had no enthusiasm or "friendliness" and I debated leaving for even a brief moment, but I knew the food would be worth it!

Bruges Bistro is happening and it's a serious delight. I got a prosciutto baguette sandwich on a Saturday morning and loved it, craved it fiercely and absolutely had to go back Monday for lunch to order it again.
The bread had a great crunch and yet was soft on the inside as a true baguette should be. It had hard boiled egg, pickles, so much delicious meat and perfect amount of mayo. And they let you upgrade your chips to frites without problem! Yes pleeease!
I have been a big fan of the classic waffles and frites since I placed that first delicious morsel in my mouth years ago but this new addition takes Bruges to the next level. Now instead of going in for a snack (although it's the best snack out there) it is now a place to visit for breakfast, lunch, dinner, dessert, snack time, second breakfast, brunch... you get the idea.
While eating my delicious sandwich I watched as the owner himself created the new pasties by hand. I can't wait to come back and try those and all of the other new items!

I'm torn, with increasing competition BWAF is losing ground as my go to place for waffles. Sure they execute the classics well, like the Torpedo (chocolate filled waffles), to the Machine Gun Sandwich (lamb and pork sausage drizzled with andalouse sauce on a bun nestled on top of perfectly salted fries).
But, it's beginning to feel "franchise-y".
Look, if this is your first time, it will be MIND blowingly good, but after a while ...and you taste the competition...it starts to feel meh.

Dear employees,
The family that owns this restaurant works too hard for you to ruin the customer experience with your own contribution to ambiance (loud music from the kitchen which competes with piped-in music). When I commented to you about it, you said "yup" like I had just slapped Adele across the face. You are replaceable. If you'd rather sing to your own music and dance around the kitchen, may I suggest you work for a restaurant without an open kitchen. I had a great dining experience at the bruges downtown but the draper location just wasn't what I hoped it would be. I love the machine gun that the salt lake store does but the ballance of flavors was off here. There was way too much sauce and bread and not enough frites and sausage. The sauce seemed like the spices where off.
