Steak Diane... it is very Very VERY good.

It is cozy. Food is excellent. The staff is so nice! And the spinach artichoke dip... best I've ever had. No really. You should definitely go here if you want an excellent meal in a cozy environment. There's also live music in the back bar that is more casual than the front dining room.  but the steak Diane is what you want. Get it!

On my first trip to Colorado this was the first place that I stepped out of the car and smelled the pines and fresh mountain air. I don't know if this experience had much to do with this being my favorite steak ever consumed, but it is my favorite steak ever. My rich Uncle John paid for it which also helped. If you are passing through the mountains and are craving a hearty steak, I would tell you to come in here. The decor was cool. Go there!

Under new mgt.  Traditionally this has been a good restaurant.  Bartender had a serious attitude issue.  I simply asked him about their beer selection and he didn't have a clue what he was talking about which apparently made him angry.  Do you have a hoppy ale?  Answer:  New Castle or Fat Tire.  OK, that's the dumbest possible answer, but fine.  After that, I got nothing but attitude from him.  I guess he realized I knew he was a dumbass.  Later, a food runner came out with a plate for a bar patron and the bartender says, "give it to that douchebag over there" and points to a guy sitting down the bar.   We finished our beers and went to the more hospitable confines of the Moosejaw.....which is sort of ironic.

Don't get me wrong.  I don't mind a bartender with a little edge, but if he can't back it up with the most basic knowledge of his trade, it's just a dumbass with a podium.

Still, on the food side of the business, this has been one of Frisco's better bets.  Hopefully, the bartender isn't wholly indicative of the new owner's abilities.

Nice rustic mountain kinda restaurant.  The food was pretty good but nothing special.  I wanted a good steak but ended up getting pasta just because of the price difference.  
Winners-
Smoked trout and fresh bread.
Losers-
No simple steaks.  Every steak had some kind of sauce or strange reduction with it.  Sometimes a simple seasoned steak is all you want.
The service was excellent!   Try the break pudding!

Wow, we had the best meal on our trip here.  Even though we were taking advantage of a get one entree get one free coupon, I think we'd still come here again without one.  

They really know how to do their prime rib here.  It was tender, juicy, and extremely flavorful.  All too often you find yourself gnawing on a, though tender, ridiculously dry and flavorless piece of red meat.  We had none of that here.  

The Mt. Royal New York Strip was nothing short of amazing.  You simply can't go wrong with a solid cut of strip with blue cheese, cracked peppercorn sauce, and a buttload of garlic.... auuuggggh....

The service was solid as well.  When asked about salad choice, I asked if the Caesar salad had anchovies in it.  When she said yes and that I could even have extra if I wanted.  Oh man that was quite the delicious salad.  I can't have those things on anything else, but on a salad, those salty slimy things are amazing.

The ambience in the dining area is pretty much the dark cabin building place that's typical of any steak house.  Not that there's anything to complain about that.

Blue Spruce is definitely amongst the best steak houses that I've ever been to and may even convince the lady to head out to Keystone even without a software conference?  eh?

The Good: Nice staff. The "waiter" was really a bartender, disguised that night as a waiter, but since he fully admitted he wasn't clear on most of my menu questions, he got them answered quickly and accurately. Also, happy hour runs 4-7pm, and we got there at 5pm, perfect. The bean chili and bread was decent.
The Bad: Simply put, the food. We ordered off the dinner menu even though we were sitting in the bar. I got Chicken Oscar he got Steak Fillet w/ Crab Meat. The prices ranged from $28ish to $35ish. The veggies were way overdone, the crab made us sick. 4 hours later so sick we won't discuss it on yelp. The chicken was mehmeh and the steak was bland and small.
Maybe Why: The slow/mud season in Colorado tourist towns is hard on the economy and employee's. Go during the busy season and maybe the chef will be back.

I spend a lot of time in Frisco, and this is one of my favorite dinner destinations.  You can eat in the nice restaurant (which I haven't done in years, remember it being good), or in the bar.  The staff is terrific (maybe because they always remember me!), and it's just a cozy place to hang out.

The bar has a big fireplace, a couple of discreet televisions and tables big enough for groups.  You can order from the dining room menu or the bar menu.  They have great happy hour specials, though I tend to have a hard time pulling away from the hot tub in time to actually make happy hour.  

The bar menu is an upscale bar menu - good burgers and sandwiches, some fish and pasta choices and great appetizers.  They serve beer from Pug Ryan's brewery, which is good in my book.

We ate here as a group of 5.  We walked in with no reservations, and although it was booked in the dining room we were seated in the bar area.  The bar area has 30 foot ceilings and has a TGI Friday's type of decor with lots of random Western memorabilia on the walls.

We ordered an sampler appetizer to share.  It included a baked brie with cranberry sauce and crackers, as well as smoked trout, and stuffed mushrooms.  Everything wasn't served in an extra fancy style, but the food was great.  The trout was great!

I ordered the five-onion soup and also tried the tomato basil soup.  They were great!  I also had the Steak Diane which was not so great.  I would actually recommend something else.  It seemed like the sauce was trying to mask the flavor of the meat.

I would come back... and probably try a different entree, but everything else was wonderful!
