I came for the beer...my wife came for the wine! We loved the large selection but had a hard time choosing. The bar tender was great and even poured a few samples so we could try even more...wow we almost over did it! but with so many greats it was hard not to stop. Traveling for us is about great food and drinks and Aroma Thyme made the Hudson Valley the perfect side trip out of the big city. We stayed and enjoyed a nice dinner in a fun little place. I wish all the small towns had somthing close to this including my own...I most likely won't ever be back but would recomend it to all my friends who hit up New York from time to time.

If I gave this restaurant four stars, it would be because it's nice to have green, gourmet, vegan-friendly options in a town like Ellenville. Judged solely on its own merits, Aroma Thyme is probably closer to a three (and a half?). While I appreciated the variety of options, especially as I was traveling with a group, the menu was unfocused. The prices seemed a bit steep, too. Perhaps you're paying for green factor? Our meals were hit or miss. My pasta came out swimming in lukewarm sauce so I ended up filling up on appetizers (the hummus plate, which was great.) We split a chocolate torte that sinfully good. The highlight of the experience was the waitstaff. Patient, attentive and extremely welcoming to our party of out-of-towners.

Best the area has to offer?
So, i really wanted this little whole in the wall to blow me away, but it really did nothing of the sort. The menu really doesn't know what kind of a place it is - seems like its chinese, german, american, etc, which is often a worrying sign. Perhaps the area doesn't have that many options, so it makes sense, but rarely can a chef do a great job in such varying categories.
We started with mushroom soup, which was bland and heavy. The burrata was sub-par, but i'm assuming they bought it that way. My salad was predictable and the dressing was oily.
The staff there was great and others at the table were happier with their meals than i was with mine.

I hate applying the "This could do well somewhere else," city-centric approach to small town restaurants, but Aroma Thyme definitely sets itself apart from everything in Ellenville and the nearby region. The town of Ellenville itself is strange and quite vacant, which caused me to leave for college as soon as I could.
But the town finally has some 'nice' place to eat. The food is good, although I would advice against the calamari. Not terrible, but some of the more boring, spongy calamari I've had in my day. Incredible beer selection, good knowledge of wines, and the only vegan option in the 845, I do believe. Little on the pricey side, juxtaposed to the high unemployment rate in town, but worth it for sure.
+ Update: Went here for a couple of beers while visiting family over the holiday break. I ordered a winter ale from Keegan Ale's, a local brewery, that cost $6. Certainly pricey by local standards, but it's better than a Yuengling at the local dive-hole down the street. I get it in a wine glass, ok whatever, but it's pretty much half-full (see, I'm usually an optimist). Apparently $6 only gets you 6oz, which was a little shocking, so I asked the server, "Is this normal to get this little?" She said, yes, it's quite expensive and that's why you get "6oz, a half-pint." So, confused, I was like, "A half pint...you mean 8oz?" She insisted, "A pint is 12 oz." One more round, "No, I'm pretty sure it's 16oz..." and got a cold "12." So I laughed it off cos' I was pretty much having a "How many inches in a foot?" convo and I was saying 12, while she was saying 10. Oh well.
Otherwise, they're very nice aside from that, but don't expect a full drink for full prices. The owners seem very nice on my 5+ times being there. Nice idea overall, but dang- they really need to iron out the help. -

The only restaurant of its kind in this corner of the world; I make my parents drag me here every time I visit home. The first thing I noticed when I walked in this restaurant was the bottles of Rogue beer they had over the bar. Immediately, I was in love. Oregon beer, at HOME?! No way. How did these people get here? Did their car break down in Ellenville while they were traveling from New York to stay at Mohonk Preserve or something? They looked around and thought "Well this place looks like there's no quality restaurants specializing in organic sustainable deliciousness for a seventy mile radius. Let's open one."
Aroma Thyme Bistro is a gift from heaven. The chef/owner does a fantastic job coming up with new exciting combinations of natural ingredients, their super thin crust pizza is amazing (try the potato and white truffle oil pie) and the wine selection is impressive. The owner and his wife are always happy to help suggest their favorite wines and chat with you about the food. Anyone who can make seitan look and taste amazing is a winner in my book.

Marcus & Jamie Guiliano own & operate Aroma Thyme Bistro. Marcus is a trained chef that has worked at world class places like The Greenbrier, The Broadmoor and La Tante Claire in London. Jamie runs the dinning room while Marcus oversees the kitchen and wine/beer program.
