This first-time pop-up dinner was outstanding. In a time when food in the Bay Area seems so complicated and over-seasoned, the flavor pairings on these dishes were incredibly balanced - the arctic char with plum yogurt (etc.) was one of the most refreshing tastes I've had in a very long time. His pork cheeks literally melted. Literally. Pickled chantrelles with "tender" hazelnuts (they were pressure-cooked, awesome). A take on chicarrones even donned the melting pork cheeks. I must not forget to mention the 'soil' bed for the salad... I won't even go into dessert. A week later, and I'm still thinking about that meal. Hope they pop-up again, soon.
