Anjou is very new.  I just saw someone who is definitely one of Boulder's colorful personalities in the juice and smoothie-making realm...Cornelius....once of Cafe Prasad fame....and he told me he's now preparing juices at Anjou on West Pearl.  

As usual, my Monday was busy, and I didn't get a chance to visit Anjou.  I've visited their website, though, and can give you some information from there:

Anjou is 100% Fair Trade
Anjou practices eco-wise, local, conscious capitalism
Anjou uses biodegradable serving ware, and is located
in a green building with "no off-gassing."
Anjou promises: Zero waste including composting of all our scraps
Anjou offers:  100% live organic fresh fruit and vegetables, absolutely no concentrate

Perusing the menu online (will update when I go there, which I hope will be soon)  I see that they offer sandwiches, salads, rooibos drinks, kombucha,  and chai drinks in addition to the natural organic fruit juices and smoothies.

I know from experience that wherever Cornelius works, the food and drinks are going to be good.
