Props to Bennet H. for his review.

For all you fellow  New Yawkas  Amber is a very laid back, seriously Christian work ethic coffee shop.  Everyone has a drawl and everyone is friendly and says "Merry Christmas" instead of the pc Happy Holidays.  On to the food.

I ordered two eggs soft with a ribeye, coffee eating in and a combo sugar cured and country ham sandwich to go.  The eggs were soft, and although not buttery they still packed flavor. The ribeye was cooked medium rare and had a nice beefy flavor.  The star of the show is the biscuits and gravy.  This is the first time I've ever had made from scratch buttermilks where I didn't have to spread on a ton of  butter.  They're not only dense but  also have a heavy salt butter taste without being greasy. Accompanying sausage gravy is just as good.  It has the typical thick pudding consistency but it is so full of ground sausage (and the right amount of pepper) you can eat the gravy as a dish in itself.  Skip the coffee.  Knoxville water is pretty bad and you can taste it in the Java.  The ham sandwich was too salty for my taste.

All Yankees should try this spot when in Knoxville.

The other incredible greasy spoon in Knoxville.  This is where you go on Sunday because Rankin Restaurant is closed.  It was on a Sunday morning long ago at Amber where I heard my first "Y'uns."   Awwwww.  The waitress said "Y'uns ready to order?"

Pancakes and egg sandwiches are fantastic.  The gravy for your biscuits can be a little darker sometimes, depending on what's in it and how long it's been cooked.

The coffee is great and the menu has more than just breakfast on it.

If you want to flip out, try some of their home made pies for dessert.  There's this sweet lady who makes them fresh each week.  Coconut Cream Pie not to be missed.

They went Non Smoking last year, and it's really nice.  If you come on Sunday, beat the church crowd.  Unless you went to church, and then make sure the kids have Game Boy--it might be 20 minutes before you're seated.

At one time, years ago, this was a pretty good little place to eat. Now it mostly tastes like the food is just canned or frozen stuff that is warmed up, and it looks like a coffee shop out of a bad B movie. Breakfast is their best meal but it is overpriced. Go to Cracker Barrel instead!
