I can't believe no one has reviewed Alexander's before me.  This is definitely a must visit place for me whenever I get to Boulder.  The food is Mexican with a veg friendly tilt.  If you get anything smothered in green chile sauce and order it hot, expect it to be seriously hot.  It is, however, extremely tasty.  My favorite is a burrito with broccoli and potato smothered in hot green chile sauce.  I will practically lick the plate when I'm done.  Prices are also very reasonable.  They have a location in Denver as well, actually Glendale, but it's much more bar-like.  I prefer the Boulder location by far, but the food is good at the Glendale one as well.

UPDATE:  as of Feb. 2008, and possibly before that...this place is GONE...I have let Yelp know!   My original review follows:

Ever since my kids were young we have been eating at Alexander's....ever since it was on North Broadway close to or exactly where the lovely Pupusa's is located now, before it moved to this location on Arapahoe and Broadway.

The selection of burritos, enchiladas, and other Mexican dishes is amazing here.  The list of ingredients is so creative and different from other Mexican restaurants.

It would be nice if the landlord could be supportive of the tenants in the building Alexander's occupies...the landlord needs to fix the awnings and the roof.  Alexander himself was struggling with a leaky roof during a rainstorm the last time I was there.

I really also enjoy the fresh and organic-seeming red and swiss chard that is a garnish freely given with the food here.  All sauces are excellent, and food feels homemade and made with great care.
